Please verify the meeting by either going to the chapter web site and the Events page, or call The next general meeting is scheduled for June 2nd, 7:00 pm, at the Littlerock Fire Department (West Thurston Regional Fire Authority, Station #1-2), Littlerock Road SW, Olympia, WA The BCHW Video 2014 Chapter Activities will be shown at 6:30 pm (about 15 minutes long). From your President - We re getting to June fast and have many more rides ahead. The combined ride at Kennedy Creek was a success and lots of fun. Got a personal thank you from Traci Koch for all the help she got from Capitol Riders. I m glad we could help out with such a well planned and carried out activity. The Oakland Bay chapter is amazing!!!! I think she wants us to help again next year and I for one think we should do it. Next year will be much less work on the trail clearing and should be years before such major work happens again. We also will get a share (based on volunteer hours) of the pot. I was also happy to see so many of our members the day of the ride helping out with food, prizes, parking and trail stations. We have a ride at Nisqually-Mashel this month and Green Mountain on June 20th. I am hoping to see some more slide shows from you campers who have plans for longer rides. I saw the Nisqually Chapter has gotten authorization to work on parking at JBLM training area 23. Hope that means it will be open more for riding. Enjoy the summer everyone. Laura The chapter did okay (not great) at the garage sale on May 2nd. But money for the kitty and that is what matters. Please continue to record any volunteer hours and get them to Deb Hall on a consistent basis. Newsletter - Nothing new here. Sending out five hard copies. Still looking for your bios and articles. YOU make the newsletter what it is. I cannot do it alone! Current Web statistics is on a hiatus until I filter out the garbage hits. There are simply too many now and they affect everything. Legislative - The state special legislative session is well underway but nearing the end. The Teanaway Community Forest Advisory Committee is advertising for new committee members. Of current interest to BCHW is the NW Forest Plan Update process and how it will affect us. For example, Gifford Pinchot recently published their Draft Travel Analysis Report which in part shows roads they intend to decommission. Most may be short dead-end roads but we don t know for sure if any will impact access. One would assume these don t go to any trailheads but right now we don t have that detail. Weyerhaeuser has announced the sale of access permits to their property. I m sure you all are chomping at the bit to go riding on their logging roads, am I right? Some of you rode at Nisqually-Mashel (otherwise known as Nisqually State Park) over the holiday weekend. As for myself I attended the Oakland Bay Kennedy Creek camp out and ride on Saturday. (it was a weekend long event) I was surprised by the number of people. Most all of Oakland Bay chapter was there but friends had been invited as well, swelling the numbers. Once I arrived I immediately went into cooking mode as my intent was to provide a dinner dish but I also needed to practice baking a chocolate cake for my mother s upcoming 90th birthday party. Both I think were a success although I was not entirely happy with either. I ve included both recipes in this newsletter. Need to flatten the chicken after butterflying and cakes need to be baked on perfectly level ground. Fix these and I would have been happy with the results. My first cake from scratch and I flubbed a bit but it worked out okay. Now that camping season is in full swing, don t forget to check the list of horse camps I have for you at (minus hyphen) It includes cabins, B&B s and ranches too for those looking for a cushier experience. If you want to really rough it then look for a trailhead or back country camp. Some back country camps are just miles from the trailhead. Perfect to practice packing. 1

I had to settle for galloping around the neighborhood and playground like I was the horse. I had a friend who lived near a pasture with a few horses. We spent as much time as possible at her place picking grass to feed to them through the fence. Time passed...high school, college, marriage...finally...my first horse. I was in my early 20s and had no fear, or common sense, for that matter. Taneum Traveler was a 4 yr old,16 hand Appy with a bit of TB mixed in...a bit high strung, to say the least. I was crazy enough to ride him up and down roads with nothing but a bareback pad, and sometimes, only a halter and rope...of course no helmet. We did survive and had lots of fun. I sold him when I started teaching school because I just couldn t give him the attention he needed. Over the years I occasionally rode with friends. Eventually I was inspired to get my own horse by my friend, Kristine, who is a member of BCHW. On my 60th birthday I decided I needed to go for it. We built a barn, put up fences and bought my mare, Roni. She s an Appy/ QH mix...a good trail horse who doesn t have a mean bone in her body, even though she does act like a jughead some of the time. My husband, Dave, didn t want to be left out so we bought another mare, Gypsy, a basic brown registered QH. Happy trails to us! Sue Koch 2

3 Capitol Riders of BCHW General Meeting Littlerock Firehall, Littlerock Road SW, Olympia, WA May 5, 2015 Meeting called to order by President Laura Shillam 7:01 pm 16 people in attendance with two guests: Nancy Lovrein-Kaufmann (now a member) and Tammy Weiks. April minutes were approved as published in the newsletter. Treasurer s Report Dean Hartman Dean told the group that we made $x.xx from the May 2nd garage sale which includes Karen Johnson s donation of $x. We have a $x.xx balance in the checking account and $x.xx in savings. Petty cash is $x.xx. Dean went on to tell the group that he has to re-sign us up to use the firehall and we may need to pay money. It could be $70 per meeting and some or all of that goes to facility cleanup. We need to remember to lock the doors as we are responsible if something gets stolen. When we reimburse members for mileage we can pay up to 57 cents per mile. This does not mean that we will pay 57 cents, but we can pay up to that amount. Our options are: request a gas receipt, pay 14 cents per mile (IRS deduction for charity), or the IRS rate of 57.5 cents. Dean said he pays his employees 38 cents. Chris Enrico said we can modify the standing rules. Dean said again the IRS allows up to 57 cents (editor cents). Dean said he ll use the gas receipts. Newsletter Chris Enrico Chris said there is nothing new with the newsletter. Web site Chris Enrico Chris said there is now a chapter library on the web site. (in the members area). Legislative Chris Enrico Chris told the group that the sale of public lands is a hot topic with BCHA right now and that he s sent out action alerts. Also the USFS has issued an Environmental Assessment for two new campgrounds in the vicinity of Kalama Horse Camp. These would take any nonstock campers away from the horse camp. Director s Report Karen Johnson Karen said she has placed free materials (brochures and magazines) up front and to please help yourself. Karen said there were two kayak paddles obtained by the Big Tent Coalition No Child Left Inside initiative by the governor to be presented to the two senators who sponsored senate bill We may have a chance to sign them on May 13th. Karen told the group that the chapter tools she has will go home with Chris for now (see tool inventory in the members area of the web site). She also said that Laura Shillam will be our new coffee lady. Karen reminded the group that the BCHW camp out at Bruce Tropple Horse Camp (Indian Camp) is May 29th-31st and includes LNT. Karen thanked the chapter for the flowers. Laura presented Karen with a card, gift certificate (to the restaurant at Suncadia Roslyn) and a plaque In appreciation of your years of service. Karen joined Scatter Creek in 1996 and later joined Capitol Riders. Work Parties Karen Johnson Karen said we need a new Trail Work Boss. Peggy Tucker volunteered. We will have a work party May 11th at 10 am at Mima Campground and trailhead. Meet at Mima trailhead. Chris told Peggy she will need to keep track of trail miles and input into the trail miles database. Hoofprints Peggy Tucker Peggy asked the group to keep track of their miles. Volunteer Hours Deb Hall Deb was not present. Chapter Rides Carrie Russell Carrie was not present so Mickie Hattrup said they are asking for a lot of help. The Green Mountain campground road is steep. The Gold Creek parking area is good. The ride is on May 23rd with ride out at 11:00. Give Mickie a call. Mickie asked for a show of hands. Mickie will go this Thursday 5/7 to check out the trails. (after the meeting we found out that a 4-H group would be at Nisqually-Mashel the same day as the chapter so Carrie decided it best to switch it and Green Mountain) Traci Koch thanked everyone for coming out and helping on the trails at Kennedy Creek. Traci said we put in close to 5 miles of new trail but still have a lot of work to do. All the roads and trails are GPS d. Cindi Stroble and Bryan Everson will be out mowing the field. Mickie asked how long the trail rides are and Traci said no longer than 3 hours. 3

4 Traci said to show up on 5/16 no later than 7:30 am. Tracy Farr said she has $x worth of prizes donated. Traci said that around the first of June the officers of both chapters will get together and go over the hours. Tracy Farr asked if all had a chance to sign the thank you letter (paper passed around) Traci said that on May 23rd Oakland Bay will have a chapter camp out at Kennedy Creek. She invited all to come and wind down. Traci also said that she is working on getting all the geocache location data. Traci also reminded the group about the saw certification class on June 7th. Old Business Chris asked Dean Hartman about printing the brochures as Dean will be out of town on the 8th through the 18th. Dean said he would Glenn Anderson s address to Chris and Chris could work with Glenn. New Business Traci mentioned that the saw certification class form needs to be sent in for those wanting to take the class, which will be at Tracy Farr s residence. Traci also told people to bring a chair. Chris said that the student manual needs to be read before class. For the Good of the Chapter Jeff LaBreck asked Karen when the calendars will be ready. He said we will want to get some but will have to pay for them up front. Jeff will try and figure out how many calendars we should get. Treats for June meeting Sue Koch volunteered. Laura adjourned the meeting at 7:58 pm. It was mentioned to all that the Livestock Coalition ride is June 13th. Contact is Vick Mott, Mark trails from 9 until 12. Respectfully submitted. Chris Enrico Capitol Riders Chapter BCHW for 2015 Regarding the recipes on the following pages - The chicken breasts I had were extremely big and meaty. The recipe did not call for it originally but it would have been a good idea to flatten the meat after it was butterflyed. This way it would both cook faster and I could get more of the roast pepper and basil mix in. But it is extremely tasty and a good recipe for the dutch oven. As for the cake, yes, a level surface is required. One side of the cake was done before the other thicker side and thus the bottom became almost burnt on the thinner side. I was cooking on the ground and did not have either a level, nor the means to level the surface. One more thing I need to obtain is either a cooking table or plow disc stand (with adjustable legs). And of course a small hand level. Cooking here at the house is a piece of cake since I have a level concrete pad to work off of (using concrete block and fire brick as a raised cooking surface.) As for my recipe flub, I ve not made a cake from scratch before. I mixed the buttermilk with the flour BEFORE adding to the chocolate. But as I said, it worked out okay. I added the doughy mix a bit at a time into the chocolate making sure to mix and break it up as well as I could. It had an interesting appearance, chocolate with little white blobs. Once cooked though you d never know and it sure tasted good. Next time which will be shortly I ll do it again and this time I know to add the dry flour to the chocolate along with the buttermilk (a bit at a time, folding it in as I go). As I did not have cake flour handy, do you know how to make your own using all-purpose flour and corn starch? One cup of flour minus two tablespoons, plus two tablespoons of corn starch, sifted to mix. After sifting I d mix in the bowl to thoroughly mix. In my case I need two and a half cups. So the last with a half cup of flour minus one tablespoon plus one tablespoon of corn starch. Personally I like to cook and find it a fun way to experiment with flavours. I have some favorites at htm. Enjoy! 4

5 Roasted Red Pepper, Mozzarella and Basil Stuffed Chicken Ingredients 4 boneless skinless chicken breasts 8 ounces fresh mozzarella, sliced into 8 slices 1 jar (12 oz) roasted red peppers sliced into 1 inch pieces (about two whole red peppers if you roast your own) 1 bunch basil, whole leaves! cup parmesan cheese, freshly grated 1 tablespoon Italian seasoning Salt and pepper for seasoning Method Preheat oven to 400 degrees. Grease a 9x12 casserole dish. Butterfly chicken breasts by slicing into the long side of the breast, stopping just about 1/4 of an inch from the opposite side. Lay chicken breast in casserole dish opened up. Sprinkle the exposed insides of the chicken breast with 1/2 of the Italian seasoning and salt and pepper. Stack the roasted red pepper, basil, and 1 slice of the mozzarella on the bottom side of the chicken. Fold the top flap of the chicken over, tucking in the mozzarella, basil and roasted red pepper as necessary. Sprinkle with the remaining Italian seasoning. Bake chicken for minutes (until chicken is no longer pink). Pull chicken out of oven and turn the oven to a high broil. Top chicken with remaining mozzarella slices and sprinkle with Parmesan cheese. Broil until cheese is browned and bubbly, about 5 minutes. Notes Flatten the chicken meat after butterflying. This is especially critical if the breasts are big and meaty. Prep - Prep: 15 Minutes - Cook: 35 Minutes Source: Hillbilly Castiron Cooking (4 servings) 5

6 German Sweet Chocolate Cake Ingredients Cake: 1 package Baker's German sweet chocolate (4 oz.)! cup boiling water 1 cup butter 2 cups sugar 4 egg yolks 1 teaspoon vanilla 2! cups cake flour 1 teaspoon baking soda! teaspoon salt 1 cup buttermilk 4 egg whites, stiffly beaten Frosting: 3 egg yolks 1 cup evaporated milk 1 cup sugar 1 tablespoon butter 1! cups flaked coconut 1 cup chopped pecans 1 teaspoon vanilla Method Cake: Melt chocolate in boiling water; cool. Cream butter and sugar until fluffy. Add yolks, beating well after each. Blend in vanilla and chocolate. Sift flour with soda and salt. Add dry mixture alternately with buttermilk, mixing well after each addition. Fold in beaten egg whites. Pour into 3 prepared cake pans. Bake at 350 degrees for minutes. Frosting: Beat eggs, milk, sugar, and butter. Cook over medium heat for about 12 minutes, stirring until mixture thickens. Remove from heat; add coconut, pecans, and vanilla. Beat until cool and of spreading consistency. Frost between layers, top, and sides. Source: Cooks.com (Servings: --) 6

7 Well, we bid goodbye to longtime member Karen Johnson, or do we? Karen wants to stay on as chapter director. For one this means the chapter would save on paying for gas (Karen will be about seven miles north of Ellensburg) to and from the board of director s meetings every three months, plus lodging. I am not aware of any other chapters having long distance directors but the membership will have the chance to discuss at the meeting. Deborah Hall is our alternate director but she is out of town a lot and is unsure if she would make a meeting if called upon to do so. (not that that is a big problem since directors can be excused but it s a good idea to have some representation attending.) I, having family in Roslyn (25 or so miles west of Ellensburg) am open to the idea of taking the position on. I really need another reason to get over and visit. I ve got a nephew and his young family a block and a half from the fairground. I exit the grounds, go a block west, turn left, turn right and I m at their house. Oh, then there is the Cle Elum Bakery with maple bars still warm from the oven. (I had a few during Rendezvous let s just say.) Lodging for me is not an issue. Mileage would be from Roslyn to Ellensburg and back. Lest I forget, all who assisted in any way, shape or form with the Kennedy Creek Fun Ride need to get all their hours turned in. Oakland Bay and Capitol Riders will be meeting very soon to work out the split of the ride s proceeds. That amount is about $x. To Be or Not To Be. on the Fort Lewis training areas. Cindy McAllister and I have experienced two episodes on being where we shouldn t have been. The first time occurred a few weeks ago on area # 20. On line it said it was open while when I called to leave my number the phone recording said it wasn t. Me, being retired, didn t know what date it was and simply waited until the end of the recording, listed my # and location and hung up. It wasn t until Cindy, Laura, and Kerri Stoer, and I met Carrie and Barry Russell coming from a different entrance point that I discovered my mistake. Needless to say we were all a little nervous until we got back to the trailers not knowing if there was a ticket awaiting us or worse, a loss of our pass privileges. Interestingly enough, we weren t the only ones not checking thoroughly because there was another trailer parked there. Having learned my lesson, both Cindy and I checked online and the voice recording when we set out to training area # 19 a few days later. When we got there, I dutifully called in our numbers (and really listened to the recording). We found the flags that the Nisqually BCHW members had left behind after their ride and off we went UNTIL we came to a bunker area with a small hut inside (guess what we were thinking) and there were soldiers inside! An officer came out to flag us down and told us that the area was closed and that they were going to be shooting blanks. Cindy asked them if maybe they could hold off for a while until we got back to the trailer, and off we went going a lot faster than before!
