1 Ohio ICES Cake Talk......From the Buckeye State! A Publication of the International Cake Exploration Societé - Ohio Chapter Fall 2014 Welcome Back!!! Just as Spring is a time for new beginnings, Autumn is a time for other types of change - temperatures start to slide, leaves turn and fall. Though we miss the warm weather and the fresh Notes from your OH ICES Rep Heather Sandahl colors of flowers, Fall signals the start of another season of celebrations. There s plenty of festive activity ahead, from the first pumpkin and cornstalk display you see to the last truffle you eat from that heart-shape box.. Fall is also the start of a new ICES year. Each Summer at convention, new Reps are given the oath of office and current Reps are recognized for their service. And, the calendar starts again. As for the Ohio Chapter, we re about to have a few changes, as well. During our Spring business meeting, a motion passed to raise the price of the Day of Sharing registration fee. It was cited that we have not been able to sustain the Days of Sharing through the fees for some time, now. And, our treasury is starting to feel the pinch of paying for those items that can no longer be covered with registration fee alone, such as Audio Visual rental. The member price of attending a Day of Sharing has remained at $25 for over 20 years. The decision to raise the price was not taken lightly. Several cost cutting measures, including looking for other places to hold the meetings, were researched, and none of the options would fix this problem, alone. And so, as of the Fall 2014 Day of Sharing, registration will be $35 for members and $45 for Non-members. The hope is, that the this rise will hold the line for a good long time, as it had before. With only two regularly scheduled Days of Sharing each year, the goal is that all of us will be able to plan ahead to put aside that little bit extra. * It s Official.. The 2018 Convention and Show in Cincinnati is officially on the clock. Your 2018 Show Directors will be Shari Buchanan form Liberty Twp (a suburb of Cincinnati) and Karen Garback from the Cleveland area. Stay tuned for more information on how to get involved in the upcoming show. And, speaking of things official, the site for the 2017 Convention and Show has finally been selected - we re going to Spokane WA!! The last ICES convention in the Pacific Northwest was 2001 in Portland, OR. This will be a great chance to see a beautiful region of the country. * One more item for our September Day of Sharing our special guest instructor will be ICES President Kathy Scott CMSA. Kathy will be teaching 3 classes on Saturday September 27th and will show us even more on Sunday, September 28th as a demonstrator for the Day of Sharing. See details inside. See you all soon.. 2 Kathy Scott Sweet Expressions Abbeville, SC About Kathy Scott Kathy is the owner of Sweet Expressions, an independent custom bakery in Abbeville, SC, where she has accrued over 25 years of baking and decorating experience. Kathy is an internationally known decorator, demonstrator, teacher and sugar art judge. She has developed her own line of cake decorating equipment, sold under her name. Kathy is a member of the Retail Bakers of America (RBA), the Southeastern Retail Bakers Association (SRBA) and the International Cake Exploration Societé (ICES) where she currently serves as the organization s President, having been elected to the position for the third time. In addition, she has the distinction of being a five-time Chairman of the ICES Board of Directors. Kathy has also served the organization as Show Director for the 2011 Carolina ICES Convention. She is an RBA Certified Cake Decorator and an ICES Certified Master Sugar Artist. In recent years, Kathy is proud to have won the American Cancer Society Cakes for a Cure Celebrity Chefs Challenge and gained notoriety as a contestant on TLC s Ultimate Cake Off, where she was dubbed the Southern Firecracker. Kathy Scott was inducted into the ICES Hall of Fame in 2011.

Kathy has developed an easy and profitable way to make fabulous Petits Fours. These are absolutely breathtaking and will be the hit of your next party. They look very complicated, but with a few tools, you will look like a pro. Kathy will demonstrate how the basic petit four is made with chocolate and cake and then each student will be able to make, design and decorate some to carry home. Kathy will share her own crusting buttercream recipe and show you how to make it look almost like fondant. She will show you how to use embossing mats on the sides of the cake to give you a quick but very textured finish. She will also show you draping that can be sculptured with your fingers and other textures with simple everyday tools. If time permits she will show how to make a Buttercream rose. Please print and mail both pages Refund Policy Requests for all refunds must be made in writing, and Postmarked (or received by , in the case of on-line registration) no later than Wednesday, September 17, Teachers make their travel plans and arrange for equipment and supplies, based on the number of student reservations. This is also our only way to know when a class has filled. Therefore, we reserve the right to deny any refund request that occurs after the above deadline. Each request will be individually reviewed. On-line registrations will be refunded on-line, through Paypal Refunds from Mail-in Registrations will be made after the event is over. Filled Classes and Waiting Lists Classes will be filled on a First Come basis. Registrations from ICES members, when received along with any other registrations, will be given first preference to fill remaining seats in a nearly-full class. When all seats are taken, remaining registrations will be put on a waiting list, in the order received, to be given a spot in the event of another student s cancellation. If a teacher cancels a class due to unforeseen reasons, those registrations will be refunded.
