Congratulations also goes out to those that won 100 grand in the dirty minds game. If you were like me, I felt like I was performing a dress rehearsal on a game show. Jeff L. sure knew how to be a game show host. Or you can also look at it as an old time comedy show. There are so many of them so please take your pick as to which show. By the time the membership reads this, we will be into March. In case you have not heard, Punxsutawney Phil did not see a shadow and the prediction is an earlier than normal spring. But as the saying goes, March starts like a lion, so will the lion roar so loud that one more snowstorm happens, or will it be degree temps to where the ski slopes stop making snow and close up shop early for the year. That remains to be seen. One thing that is certain, our Park City trip is a go and the west has been getting a lot of snow this year. For those of you who participated in Pat Mullins Killington and Wayne Kirchgasser s cross country trips, hope the conditions were great and hoped that everyone had fun. Also at our February meeting, we started to take nominations for officers and activities. Once again, what kind of trips and/or activities do you want to see the club do? We do not ask for experience, there are plenty of existing folks who are on the board with plenty of experience that can assist those who do not have the background. The main thing is, we ask for people who want to have fun and put together some activities or trips. As I stated in my last article, if you are a newer member and are interested in being nominated for the 4 activities openings, please do not expect to run a trip in your first year. The people that run the trips are usually in their second year in the activities group. It is my hope that we can get some newer blood to step up and put together and or run activities like dine arounds, ice skating, bowling, movies, impromptu wine tastings and pot luck dinners. Other activities can be hikes, bike outings, bird watching, etc. We really need these kind of activities to happen in addition to the trips. So please, if you are a newer member and want to start putting these kind of activities together, or if you are an older member and are interested in any of the administrative positions, please see John Schroeder and/or Barb Siegel, your nominating committee. For our March meeting, the theme is St. Patrick s Day, stay tuned for additional information. 5 Election time is here again! BVSA needs YOU! We have the following board positions open: President (1 yr.) Vice President (1 yr.) Treasurer (1 yr.) Recording Secretary (1 yr.) Corresponding Secretary/Newsletter (1 yr.) 4 Activities Committee positions (2 yrs.) Election time is here again and there are many openings for people who would like to get involved. You know the kind of people who make things happen, the kind of people who have good ideas, the kind of people who think they can do it better, and the kind of people who just like to make other people smile. Yeah! People just like you! Everyone enjoys BVSA s great activities, there is a group of people in the club that make those activities happen, they re called the Board of Directors and the Activities Committee. At election time the club needs new people who can make things happen! Things like trips, picnics, parties and events. As the saying goes BVSA needs you! The offices that are up for election this April are: President, Vice President, Treasurer, Recording Secretary, Corresponding Secretary/Newsletter Editor, and 4 Activities Committee positions. The positions of President to the Corresponding Secretary are 1 year terms, and the 4 Activities Committee positions are 2 year terms. These are the People who create the activities that everyone enjoy so much, these are the people that make the club run so well. So please consider running for one of these positions. If you are interested in getting involved you might want to know what these positions entail. The duties of these positions are as follows: Duties of Officers 1. It shall be the duty of the president to preside over all meetings, to enforce the constitution and by-laws, to enforce rules of order, call all special meetings, appoint all committees not otherwise provided for, and perform such other duties as the office may require. The president shall make no motion or amendment to a motion, or vote on any question or motion, unless the association is divided, then he/she shall cast the deciding vote. 2. In the absence of the president, the vice-president shall perform the duties of the president. The vice-president shall be chairperson of the membership committee. 3. The treasurer shall maintain a record of the name and address of each member. He/she shall receive all monies belonging to the association and safeguard same. He/she shall disburse funds as authorized by the officers acting as a board, or by vote of the membership. He/she shall keep a detailed record of the disposition of all funds received, disbursed, and held in a depository. A summary report of all transactions shall be given monthly along with the depository balance. The treasurer shall provide surety in an amount satisfactory to the membership, but not less than $15,000. An audit committee to include the treasurer shall be appointed by the president and shall annually audit the accounts and records of the treasurer, officers, and committees who have collected or disbursed association funds. 4. The recording secretary shall keep in a book, provided for the purpose, a record of all the proceedings of the association keep minutes of all meetings, read the minutes of the previous meeting, keep a record of the subjects debated, the disputants, and decisions of the association, and shall have charge of all books, documents, and paper s belonging to the association other than those of the treasurer. 5. The corresponding secretary shall be responsible for all correspondence within and outside the association. A detailed membership record including name and address, date admitted to membership, dues payments, and resignations/ expulsions of members. The dues monies shall be turned over to the treasurer no less than twice a month with the names of those members having paid. The eight (8) activities officers shall plan all association activities. The activities officers shall appoint and chair activities committees. The activities officers shall be responsible for submission to the treasurer a final written report including a financial statement for each activity. Ask yourself this, If not you then who? Great activities don t just happen, people like you make them happen. So let s have another great year, full of great BVSA activities. You can make it happen! 7 Italian Wedding Soup Dave Mertz I chose to make chicken meatballs to make the soup a bit healthier. You can adapt this soup by adding a different type of green other than spinach. You can also leave the pasta out if you wish. If you are using pasta, make sure you don't overcook the pasta...there is nothing worse than mushy pasta. serves 8 Ingredients For the meatballs: (you can also use meatloaf mix. Please adjust the recipe/pounds of meat) 1 pound ground chicken 2/3 cup fresh white bread crumbs 2 teaspoons minced garlic (2 cloves) 1 tablespoon dried parsley 1/2 cup freshly grated Pecorino Romano/Parmesan 3 tablespoons milk 1 egg, lightly beaten Sea salt and freshly ground black pepper For the soup: 2 tablespoons good olive oil( I prefer extra virgin) 1 cup minced yellow onion 1 cup diced carrots (3 carrots), cut into 1/4 inch pieces 3/4 cup diced celery (2 stalks), cut into 1/4 inch pieces 10 cups homemade chicken stock 1/2 cup dry white wine 1 cup small pasta such as tubetini or stars 12 ounces escarole, washed, trimmed, and chopped Directions 1. Preheat the oven to 350 degrees F. 2. For the meatballs, place the ground chicken, bread crumbs, garlic, parsley, Pecorino/Parmesan, milk, egg, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl and combine gently with a fork. With a teaspoon, drop 1 to 1 1/4-lnch meatballs onto a sheet pan lined with parchment paper. (With the chicken, you should have about 40 meatballs. They don't have to be perfectly round.) Bake for 30 minutes, until lightly browned. Set aside. 3. In the meantime, for the soup, heat the olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, and celery and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock and wine and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender. Add the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in Leonard Harrison State Park-the Penna Grand Canyon!!! July Was a beautiful trip last year! Great biking trails and if you wish you can white water raft or kayak. The camp ground fills up very fast so if you wish to join me and others on this great biking camping trip. Make your reservations now! These sites also have electric!!!
