CPCS 2007 Review 2007 has been another memorable and challenging year for CPCS, with strong market demand and volume growth offset by continuously rising food costs.

3 CPCS 2007 Review 2007 has been another memorable and challenging year for CPCS, with strong market demand and volume growth offset by continuously rising food costs. However, it was particularly memorable for a quite different reason, that of our 40th anniversary. A cocktail party was arranged and we were delighted to be able to celebrate this milestone with many of our long-standing business partners. Alex Chau, CEO The relationships that we have built together have remained strong and secure through many and varied economic ups and downs throughout this period, and even though the competitive environment continues to be challenging, I have no doubt that our ongoing relationships will continue to grow and prosper. This will be achieved through our philosophy to make CPCS the most admired kitchen in Asia whilst also working in the best interests of all our stakeholders. We recognise that corporate social responsibility is also an important part of our reputation and brand. We will only continue to be successful and sustainable if we continue to display those values with and on behalf of our stakeholders. These values, we believe, are already being demonstrated through our unreserved commitment to, and strong endorsement of, all applicable antitrust and competition rules prevailing in Hong Kong. It is obligatory that CPCS staff members develop and maintain the reputation of the Company in all business dealings, ensuring that commercial decisions are fair, unbiased, transparent and accountable. A truly successful business recognises that the local community is a key stakeholder and as one of the largest employers within the airport community, we will continue to support our corporate social responsibilities on behalf of the local community. I am proud, therefore, to announce that all of these efforts resulted with CPCS being recognised as a Caring Company by the Hong Kong Council of Social Services for our efforts in the support and provision of volunteer services to our local community. In 2008, CPCS will not rest on its laurels, but with the continued support of you all, shall continue to operate with the highest ethical values and continue to strive for ever improving levels of excellence. I would like to express my heartfelt thanks to our customers, suppliers, staff and all our sister kitchens for their unfailing support. 4 CPCS 40th Anniversary Goes Down in History CPCS held its 40th anniversary celebration on 6th July 2007 in the Grand Ballroom at the Four Seasons Hotel with over 200 guests honouring the occasion with their presence. The event also highlighted the important role that our partners had contributed in helping CPCS to achieve this significant milestone. 40th Anniversary toast by members of CPCS Board of Directors and CPCS Management Team - Cheers! From a small kitchen at the old Kai Tak Airport, CPCS has now grown to provide in-flight catering services to more than 30 international airlines, producing 60,000 meals a day. A video charting CPCS historical journey was shown to the guests including interviews with Mr Christopher Pratt, Chairman, John Swire and Sons (HK) Ltd.; Ms Quince Chong, Director Service Delivery of Cathay Pacific Airways and Chairman of CPCS; Mr Alex Chau, Chief Executive Officer of CPCS; and Mr Daniel Cheung, General Manager of CPCS. Demonstrating the successful and long-term relationships CPCS has enjoyed with many of its airline customers interviews with senior representatives from China Airlines (CI), Cathay Pacific Airways (CX), Korean Air (KE), Singapore Airlines (SQ) and Thai Airways (TG), each of whom have had a business partnership with CPCS for more than thirty years, were also highlighted. 4

From its beginning as Air Caterer Ltd., providing 500 meals a day to 12 airlines, CPCS has grown to be one of the largest inflight caterers in the world. We believe that a tight network and a strong commitment among our employees will provide an essential environment for CPCS to continue to grow and flourish, said Alex. 6 CPCS Receives TG Excellent Service 2006 Gold Award CPCS has been honoured for the quality of its catering services provided to Thai Airways (TG) winning the Gold Award in Excellent Service of Regional Route for the 2006 fiscal year. Mr K K Leung, Airline Account Manager of CPCS, was invited to attend TG s first Inflight Caterer Conference, held at its headquarters in Bangkok from 22nd to 24th November The conference itself was to recognise the outstanding business performance of its caterers and this accolade represents recognition of CPCS ability to provide consistently high quality services and authentic tasting meals for our partner, Thai Airways. CPCS is honoured to receive TG Excellenct Service 2006 Gold Award Partners in Excellence 2006 British Airways British Airways (BA) once again recognised CPCS as Partners in Excellence. 8 Most Popular School Meal Recipes by Future Inflight Chefs Four apprentice chefs from CPCS competed in the Popular Lunchbox Election Recipe and Cooking Competition organised by the Campaign of the Hong Kong Department of Health. This competition aims to introduce healthy eating habits among children and promote creative, attractive and tasty nutritious meals. Two of the CPCS dishes were elected to the Top Ten Most Popular Lunchbox Recipes. They were Alex Kwok s Chicken Roll in Pumpkin Sauce with Corn and Spinach Rice and Stirfried Mixed Vegetables and Kelvin Mo s Vegetable Roll in Strawberry Sauce with Corn and Mushroom Rice and both were awarded merit certificates to reflect the excellence of the meals. 1 Taking part in a competition is a good learning experience, said Kelvin Mo, one of our apprentice chefs. It s really neat to see what else is going on, what other people are doing. It inspires me to be more creative. I feel very proud of the award I ve won. We are absolutely delighted at their accomplishments, as the competition was very fierce with many culinary professionals participating. We hope to nurture the creativity of individual young chefs so as to continually raise the standards of culinary excellence and professionalism in airline catering, said Bobby Shum, the CPCS Production Training and Development Manager. 9 Apprentice Chefs Excel at HOFEX CPCS apprentice chefs entered the HOFEX culinary competition for the third successive year, which this year was held at the Hong Kong Convention and Exhibition Centre from 8th to 16th May 2007 and brought home two bronze medals from the Hong Kong International Culinary Classic (HKICC). To keep in touch with our latest news, please visit our home page at We hope you will find this new website, helpful, attractive and informative. 5S Housekeeping Campaign New Ideas for Workplace Development The 5S quality management system has been adopted by many corporations worldwide to establish and maintain a quality culture within their organisations. CPCS commitment to quality and dedication to continuous process improvement is evidenced by launching the 5S Housekeeping Campaign in the Dishing, Traysetting and Top-up meal areas in May this year. In principle the 5S concept focus is: 1. Sort: To keep the working area tidy and organised. 2. Set In Order: To arrange tools and equipment in an orderly manner. 3. Shine: To uphold a high level of personal and work place hygiene standards. 4. Standardise: To operate in a consistent and standardised fashion. 5. Sustain: To practice the 5S method and establish a 5S culture among all staff. The campaign started with an introductory 5S training programme for all relevant staff. The concept and importance of the programme was stressed to allow our staff to get a clear picture on what to achieve. Together with promotion materials such as posters and banners, all of our staff were well aware of the advantageous changes 5S Housekeeping Campaign aims to enhance our that 5S could bring. productivity and quality The 5S Housekeeping Campaign is an ongoing programme to promote efficient processing and production and we are encouraged by the positive feedback and progress achieved by our production staff. This opening represents a unique opportunity in the expansion of their business and brand in Taiwan. They carefully looked for professional food and beverage equipment and ingredients that would ensure consistent quality products including a wide variety of coffee, tea, breakfast, sandwiches, salad, healthy bread, cake and on-site fresh-baked muffins and scones. The Canadian economy continues to be strong and shows no signs of slowing. Air travel is booming, with most carriers adding frequency and larger aircraft. Rapid response, flexibility and assurance of services are the customer needs of today. As part of China Pacific Catering Services efforts to be prepared, to respond quickly, and to deliver quality, this year they received the internationally recognised ISO22000:2005 certification, a consolidated management system of ISO 9000 and HACCP (Hazard Analysis and Critical Control Point). 11

Vietnam Air Caterers Vietnam Air Caterers won two prestigious awards this year receiving the Diamond Award of Cathay Pacific Airways for 2006 in July and the Golden Award of All Nippon Airways for 2006 in October. This is a double recognition of our success in consistently providing quality products and services for our customers and we wish to pay tribute to the commendable efforts of our staff that brings Vietnam Air Caterers the leverage and prominence it has in the airline catering industry.
