1 Second annual Victoria musicians reunion On a Sunday afternoon in June, four local musicians were honored for their many years of service to Tejano music at the Club Westerner. Local music players that have contribute to the Tejano and country music genre from Victoria, Texas and the home-grown music scene for decades were recognized at the second annual reunion and presented with awards for their life-long achievements. The following gentlemen were recognized: Francisco G. Garcia, better known as Panchito Dale Shine Garcia, now at the age of 80 years old, was the middle child from a family of thirteen children. In 1955, he was taught to play the accordion by his brother. He also learned to, play the guitar, but the accordion became his passion. His passion took him far. In 1957, he started the band known as El Conjunto Alamo and played all over South Texas. His specialty was Ranchera music which he wrote many polkas and even recorded some. He rubbed shoulders at the Club Westerner with big names, such as Freddy Fender, Flaco Jimenez, just to name a few. When Panchito played, the crowd would stop dancing, just to see and hear him play. His talent captivated the crowd. In 1974, during a show in Corpus Christi, the crowd called out for a polka by saying dale shine, which is a slang that means go with it. Panchito played an unnamed polka he had written and that night he named it Dale Shine. The name stuck and as time went by, he became known as Panchito Dale Shine Garcia. Panchito is also known as the Accordion doctor. Not too many have the talent to repair and tune such a delicate and complex instrument. And he is still active and writes polkas and performs at family functions, but most of all he is now instrumental in teaching young musicians how to play the accordion. Henry Garcia started playing guitar at the age of 14. He was taught by Leslie Monroe and inspired by Jay Palacios. Proctor named new chairman of VC Board of Trustees Bland Proctor, new chairman of the Victoria College Board of Trustees. Contributed photo. Bland Proctor was named the new chairman of the Victoria College Board of Trustees during the board s May 21 meeting. Proctor, who has served as the District 3 representative on Victoria College s Board of Directors since 2011, replaced Ron Walker, who stepped down after a 10-year tenure as chairman in May. It s an honor to be elected by my fellow trustees to assume the chairman s position, and I am humbled to be following Ron Walker s tenure of exemplary leadership, said Proctor, who is a Victoria attorney. Exciting times are ahead for VC, and I look forward to working with VC President Dr. David Hinds and his outstanding administrative team. I would like to publicly and personally thank Ron for his mentorship as I came on as a new president at Victoria College almost three years ago, Hinds said. We are excited to have Bland Proctor take over as chair of our Board of Trustees at Victoria College. Luis Guerra will continue to serve as vice chair, and Dr. Daniel Cano will take over the role of secretary. Walker will remain as a trustee. Bland has the full support of his fellow board members, Hinds said. He is a long-serving member and will bring his many talents, intellect and dedication to bear in this new role. We are fortunate at VC to have such a dedicated board. Proctor said he looks forward to addressing challenges facing higher education. While maintaining the longstanding practice of sound budgeting and fiscal effectiveness, we will address the modern-day challenges facing higher education and ensure that Victoria College has what it needs to prepare our students for the demands of the modern-day workforce, Proctor said. Whether it is an associate degree or a certificate, a post-high school education increases one s earning potential and improves quality of life. 2 2 Revista de Victoria, June Kick off grilling season with food safety in mind For many Americans, the summer grilling and travel season begins this upcoming weekend. The U.S. Department of Agriculture s (USDA) Food Safety and Inspection Service (FSIS) wants to make sure you and your family avoid food poisoning this summer. An estimated 128,000 Americans are hospitalized with food poisoning each year, but foodborne illnesses can be prevented during summer months by properly handling perishable foods during travel, and by using a food thermometer when grilling. If you re traveling to your favorite grilling location in a local park, or simply grilling in your backyard, perishable food items, including raw meat and poultry, need to be handled safely before they hit the grill. Bacteria grow rapidly in warm temperatures, so perishable foods need to be kept at 40 F or below to reduce bacterial growth. Perishable foods that are held above 40 F for more than two hours should not be consumed. In hot weather (above 90 F), food should be discarded if it sits out for more than one hour. The best way to keep food cold during the summer when you re away from home is to use a cooler. Consider packing beverages in one cooler and perishable food in another cooler. The beverage cooler may be opened frequently, causing the temperature inside of the cooler to fluctuate and become unsafe for perishable foods. Prevent juices from raw meat and poultry from cross-contaminating other items in your cooler by placing raw meats in waterproof containers before placing them in the cooler. Contributed photo. grill. Grab these items to help ensure a safe grilling experience: Food thermometer Paper towels or moist towelettes Two sets of cooking utensils (tongs, spatulas, forks, etc.). Use the first set to handle raw items and the other for cooked foods. Plates or containers for cooked items. Never place cooked foods on the same plate or container that held raw meat or poultry. Before eating any meat or poultry you have grilled, verify any potential illness-causing bacteria has been destroyed by using a food thermometer. Use the following safe internal temperature guidelines for your meat and poultry to ensure they are done: Food safety tips. Contributed art. Beef, pork, lamb and veal (steaks, roasts and chops): 145 F (63 C) with a three-minute rest time Ground meats: 160 F (71 C) Whole poultry, poultry breasts and ground poultry: 165 F (74 C) Once finished, make sure all leftovers are refrigerated or put on ice within two hours after cooking, or one hour if the temperature is above 90 F. His background in student services, coupled with his invaluable experience already serving as a president, prepare him to provide the leadership required for UHV s continued development into a destination university. (Bob) Glenn has been named the sole finalist to become president of the University of Houston-Victoria. Glenn currently serves as the president of Athens State University in Athens, Alabama. We are fortunate to have such a knowledgeable and industrious administrator fill this important position, said UH System Chancellor Renu Khator. His impressive track record in higher education will strengthen both the University of Houston-Victoria and our the 36th president of Athens State University in 2008, Glenn served as vice president for student affairs and vice provost for enrollment and academic services at Middle Tennessee State University ( ) and dean of students at Missouri State University ( ). While at ASU, Glenn led the transition to become a fully independent state university with an autonomous board of trustees. The university had been governed by the state board of education. In addition, he created the university s first advancement department and implemented more than 50 new degree programs. I m very excited to be joining the University of Houston- Victoria where there are a lot of great opportunities. I was really impressed with the people I met there who seemed tremendously committed to the institution and to the community, said Glenn. I feel confident that there are great things ahead and I m eager to take advantage of all the skills and abilities that are already there. Pending approval from the UH System Board of Regents, Glenn is expected to succeed Vic Morgan. Last year, Morgan announced he would retire as UHV president in fall He took the reins as interim president in 2014 and was named president in A thorough and exhaustive national search was conducted to fill the UHV presidency, chaired by former UH System Regent Roger Welder and Dona Cornell, vice chancellor of legal affairs and general counsel for the UH System. Aided by an executive search firm, the presidential search committee which includes representatives from the UHV student body, faculty and staff, as well as the Victoria community delivered a strong and diverse pool of experienced candidates with Glenn emerging as the sole finalist. Glenn earned a Bachelor of Science in chemistry from Birmingham-Southern College where he began his career as a residence hall director before climbing the ranks to become the director of student services. His father, grandfather and great-grandfather all attended the school. He received a Master of Science in student personnel work and his doctorate in counselor education from the University of Alabama. Glenn and his wife Laura have been married since 1978 and have three adult children. Founded in 1973, the University of Houston-Victoria serves more than 4,400 students by offering 70 bachelor s and master s degrees and concentrations in the arts and sciences, business administration, education, health professions and human development fields. Contributed photo. by Meridith Byrd As you might imagine, feeding nearly 30,000 people each month takes a lot of work. Even with the incredible, dedicated staff we have at the Food Bank, we just do not have the manpower to accomplish everything that needs to be done. We rely heavily on volunteers to help with essential tasks; our volunteers are essential to fulfilling our mission of helping to heal the hurt of hunger in our area. Who can volunteer? Nearly everyone can volunteer with us, though we do ask that an adult accompany children under the age of 18. Please wear comfortable clothing and closed-toed shoes; no sandals or flip-flops. When can people volunteer? We accept volunteers from 8:00 12:00 and 1:00 5:00 Monday through Thursday, and 8:00 12:00 on Fridays. We have additional Volunteer Days on the 2nd and 4th Saturdays of each month from 8:00 12:00. Does the Food Bank accept large groups? YES! We love large groups of volunteers! If your group (at least 10 people) is unable to be here during working hours, we can decide to stay open after hours on a weeknight. Please call the Food Bank at to schedule an evening for your large group. What do volunteers do at the Food Bank? Repacking In our warehouse we have large bins of dry beans, rice, and coffee. Before we can provide these foods to our partner food pantries, our volunteers repackage them into smaller Ziploc-sized bags. Bagging produce Similar to repackaging the beans and rice, if we have large quantities of fruits or vegetables, they must be put into grocery bags so that we can provide them to families at our mobile distribution sites. Sorting - We receive near-daily food donations from retail stores and food drives, so there are always bins of unsorted canned goods, cereal, beverages, pasta, and more. Volunteers are crucial to getting these sorted into individual boxes so that they can be moved into our warehouse and made available to food pantries. Landscaping duties As a nonprofit, we must make very wise use of the funds we have. We do not hire anyone to maintain the property around the Food Bank, so the mowing, weed eating, and other landscaping duties are either performed by our staff (provided they have the time) or volunteers. Senior bags We provide food to seniors who live in low income housing complexes, so our volunteers fill bags with a variety of canned goods and other food for these seniors. Assembling boxes of food Volunteers assemble our Rescue Boxes, which contain 2-3 days worth of nonperishable items: rice, beans, dried fruit, canned goods, and more. I want to help but don t have time to volunteer what can I do? Consider holding a food or fund drive on our behalf! Ask your coworkers, church members, neighbors or friends to bring nonperishables or monetary donations to you. Set the food aside in bags or boxes, then call the Food Bank at when you are ready for the donations to be picked up. We will make it as easy for you as possible. We couldn t do the work we do without our dedicated volunteers! Please contact the Food Bank if you would like to volunteer with us. Leslie Monroe started playing with his brothers and sisters who were all musicians by the age of 10 years old. His first real group was a trio named Trio Continental. Playing at the theater Venus during the night of aficionados, back in 1957, his first instrument was the maracas. Next, he played with conjunto Las Estella s, during which time they recorded four 45 singles, with the label Discos del Valle. Later he started playing with his brother Tony and uncle Freddy, where he played the drums. After leaving his brother s group he started playing with El Conjunto Alamo. At that time, he started his own group named The LDJs, played the guitar and wrote the arrangements for the horn section. Several years after starting his own group, he then started playing with Dario Perez. In 1966 Leslie was drafted into the U.S. Army, where he served in Vietnam until When he returned from Vietnam, he started playing with Roberto Sustaita. He played the guitar and arranged music for the horn section. Other groups that he played for before re-enlisting in the U.S. Army were Clem and the Jokers and Los Ultimos. Immediately before you leave, check and double check windows and doors to make sure that they re locked. Believe it or not, many residential burglars don t have to go to the trouble of breaking in, they simply enter through an unlocked door or window. Give your home that lived in look by stopping mail and newspaper delivery. A mailbox packed with mail and a driveway full of newspapers is a dead giveaway that no one is home. You can also have a neighbor or relative check on your home from time to time, park in your driveway and maintain the yard. Timers on your lights or TV s are also a good investment. Anything to make it look like someone is home. Always be conscious of your social media posts. Blasting to the world that you re away from home may be inviting a criminal to take advantage of you. You can always tell everyone about your trip when you return. Tell them what you did, not what you re doing. Oh, and don t forget about your vehicles. You may be on vacation, but burglars aren t. Make sure you still remove all your valuables from your car, lock the doors and take your keys with you. Some burglars in vacation hotspots target tourist vehicles. Although nothing is one hundred percent effective, every little thing you do is an improvement. Make your home, your vehicle and yourself hard targets for criminals and minimize the opportunity for someone to make you a victim. Since 1985 he has played gospel music at his church, Cornerstone Apostolic in Bloomington, Texas. Johnny Alegría started playing as a musician in the 1950s with a neighborhood band named the LDJs from the Lane (Juan Linn Street). When the band broke up, in 1963 he then played with El Conjunto Alamo and at the same time Johnny had formed his own group called Little Johnny and the Sunsets - playing rock and roll and rhythm and blues in juke joints all over Victoria. After leaving Conjunto Alamo, he began playing with Felix Quintanilla y su Conjunto. He then started playing with Joe Kino y Los Luceros and recorded under the Zarape label in Johnny also played with Roberto Sustaita y su Orquestra in When the band disbanded, Johnny left Tejano music and started playing and singing country with Roy Templen and the Credit Cards as a house band at the Mardi Gras and played with the Acrylics run by David Aguayo in1974. He later went on to sing as a solo singer with a band called The Fabulous Four, in 1975, and was the lead singer for Pan Dulce, he also joined the Fantastic Five and formed the Country Classics band and performed with a country band called the Kent Brothers playing base guitar and singing. He also played with Freddy Fender in Johnny continued playing Tejano with Los Últimos, El Gusto Musical, Los Amigos de Cuero Texas, La Guerra Musical, and El Grupo Sol in the late 70s and 80s. Johnny stopped playing music for several years but started playing in the early 1990s with a country group called Gone Country. After several years with Gone country, Johnny started a new band named the Majestics in 2005 that are still playing today. TORTILLA SCRAMBLE WITH FRESH SALSA 1 tablespoon butter ½ cup snipped fresh cilantro 1 small bunch green onions chopped 1 (10 oz.) can purchased enchilada sauce 5 cups yellow corn tortilla chips 1 recipe Fresh Salsa, recipe below* 6 eggs lightly beaten ¼ cup milk Sour cream (optional) Farmers cheese (optional) 1. Heat 1 teaspoon of the butter in a 12-inch skillet over medium heat; add half of the cilantro and half of the green onions (use remaining for Fresh Salsa). Cook and stir 1 minute. Stir in enchilada sauce; gently stir in chips. Cook and stir until chips are coated in sauce; reduce heat to low. 2. Meanwhile, prepare Fresh Salsa. 3. For scrambled eggs, in medium bowl whisk together eggs, milk, and ¼ teaspoon each salt and pepper. In large skillet melt remaining 2 teaspoons butter over medium heat; add eggs. With spatula, lift and fold partially cooked egg mixture from edges to center so that the uncooked egg portion flow underneath. Continue for 4 to 5 minutes or until eggs are cooked through, but still glossy and moist. Remove from heat. 4. To serve, slide chip mixture onto large patter. Top with eggs and Fresh Salsa. Serve with sour cream, cheese, and lime wedges. Makes 4 servings. 5. *Fresh Salsa: In bowl combine the reserved cilantro and green onions; 1 cup grape tomatoes, halved; 1 avocado, peeled, seeded, and chopped; 1 Serrano pepper*, seeded and chopped; and the juice from half a lime. Cut remaining lime in half into wedges for serving. 6. *Hot Peppers contain oils that may burn skin and eyes. Wear plastic gloves. If using bare hands, wash well with soap and water. TEX-MEX SPINACH OMELET 1 cup refrigerated or frozen egg product, thawed, or 4 eggs 1 tablespoon snipped fresh cilantro Dash salt Dash ground cumin Nonstick cooking spray ¼ cup shredded Monterey Jack cheese with jalapeño chile peppers, reduced-fat cheddar cheese, or reduced-fat Swiss cheese, shredded (1 ounce) ¾ cup fresh baby spinach leaves 1 recipe Corn-Pepper Relish 1. In a medium-mixing bowl beat egg product, cilantro, salt, and cumin with a whisk or rotary beater until frothy. 2. Coat an unheated 10-inch nonstick skillet with flared sides with cooking spray. Heat skillet over medium heat or until skillet is hot. 3. Pour egg mixture into prepared skilled. Cook, without stirring, until egg mixture begins to set on the bottom and around edge. Run a spatula around edge of skillet, lifting egg mixture so uncooked portion flows underneath. Continue cooking and lifting edges until egg mixture is almost set. Sprinkle with cheese. Top with threefourths of the spinach and half of the Corn-Pepper Relish. Using the spatula, lift and fold an edge of the omelet partially over filling. Top with remaining spinach and the remaining relish. Cut omelet in half; transfer omelet to warm plates. 4. Corn-Pepper Relish: In a small bowl combine ¼ cup chopped red sweet pepper, ¼ cup frozen whole kernel corn, thawed; 2 tablespoons chopped red onion; and 1 tablespoon snipped fresh cilantro. Makes 2 servings. APPLE BUTTER HOTCAKES ½ cup butter, softened ¼ cup honey ¼ teaspoon ground cinnamon 1 (12-ounce) package frozen pitted light or dark sweet cherries ½ cup cherry jam or cherry preserves 1 teaspoon finely shredded orange peel 1½ cups packaged regular or buttermilk pancake mix (not compete pancake mix) ¾ cup milk 2 tablespoons cooking oil 2 eggs, lightly beaten ½ cup purchased apple butter 1. For flavored butter, in a small mixing bowl, use a small whisk to combine, honey, and cinnamon. Whisk until well combined; set aside. 2. For cherry sauce, in a medium saucepan, combine frozen cherries, cherry jam, and orange peel. Bring to boiling over medium heat, stirring frequently; reduce heat. Simmer, uncovered, for 10 minutes or until sauce has thickened slightly. Cover and set aside; keep warm. 3. In a medium bowl, stir together pancake mix, milk, oil, eggs, and apple butter. Stir just until moistened (batter should still be lumpy). For mini-size pancakes, spread about 1 tablespoon batter into a 1½-inch circle onto a hot lightly greased griddle or heavy skillet. (For standard-size hot cakes, spread about ¼ cup batter into a 4-inch circle). Cook over medium heat about 2 minutes on each side or until cakes are golden brown, turning to second sides when hot cakes have bubbly surfaces and edges are slightly dry. Serve warm with flavored butter and cherry sauce. 4. Makes 32 to 40 mini-size or 8 to 10 standard-size hot cakes.`
