1 CALIFORNIA STATE UNIVERSITY, LONG BEACH College of Health and Human Services Department of Family and Consumer Sciences FCS 490 Distilling and Brewing Technology in Barbados (3 Units) summer 2016 Location: Week 1: CSULB; Weeks 2-3: Barbados, Bridgetown, West Indies Instructor: Contact Info: Cheryl Rock, Ph.D. (Most preferred method of contact) COURSE DESCRIPTION Distilling and Brewing Technology in Barbados is a course which provides an in depth understanding and practical exposure of fermentation science in the brewing of beer and distilled spirits (i.e., rum) at the oldest existing distillery in the world which is located in Barbados. Students will be able to observe the practical rum distillation process, wort production, yeast handling, engineering and units of operation in the production of rum and beer globally. During this course, the students will observe how rum is manufactured from Sugar Cane, the main agricultural crop that is knitted deeply in the historical and cultural heritage of Barbadians. This course will be especially beneficial to students studying Food Sciences who may be interested in pursuing future career opportunities in Brewery Science OR for students in ALL other disciplines who desire to globalize their educational experience. Students are required to be familiar with the CSULB policies and procedures regarding independent studies abroad. Students are to abide by the rules and laws of Barbados and register and attend the Barbados Food Law and Industry (BFLI) Conference. COURSE OBJECTIVES Upon the completion of this course, the students will be able to do the following: Compare and contrast the history of rum and beer production and alcohol prohibition in Barbados to the USA. Explain the effects of alcoholic beverage consumption on the body as well as health benefits, after critically reviewing literature and analysis of case studies and journal articles. Articulate the practical applications of the use of microorganisms in fermentation science in the production of rum and beer, in addition to the engineering /technological principles, process and quality of the finished products after visiting the brewery and the oldest rum distillery in the world. Investigate global issues by analyzing the historical and cultural events that shape social interactions in Barbados through its production of rum and beer by traveling to the island. Develop critical and reflective perspectives on difference by seeking an interest in the people and culture of Barbados by travelling to the island and engaging in several site visits, field trips and cultural events. Build meaningful cross- cultural collaborations professionally by attending professional conferences and workshops while in Barbados with international peers from local universities. Compare international interconnections and interdependence of the production of rum, beer, and culture in Barbados as compared to the USA.

3 (Summer 2016) 3 Design a reflective portfolio of the Barbados trip highlighting beer and rum production, and culture. Acquire intercultural communication skills by listening to and communicating effectively with Barbadians using appropriate verbal and non- verbal behavior and dialect. GRADING SCALE (A F) Points based system, 500 total points A = ( %) B = ( %) C = ( %) D = ( %) F Below 100 = (60.0 % >) ASSESSMENT RUBRIC/GRADE DETERMINATION Percentage of Total Points Assessments Total Points Allocated 50% 2 quizzes % 25% 2 Sensory Evaluation Reports Trip Portfolio Total 100% Total =500 Points ASSESSMENT DESCRIPTION Quiz 2 Quizzes (Total 250 Points) Each quiz (a total of 125 points each) MAY be comprised of either, Multiple Choice Essay, and short answered questions. All quizzes will be taken online in BeachBoard Pre (CSULB) and during Trip (Barbados). Sensory Evaluation Reflective Portfolio: 2 Sensory Evaluation Technique Reports of Rum and Beer (Total 125 Points) Each report will be worth a total of 62.5 points. The lab reports will be evaluated for the following components: abstract, introduction, keywords, objectives, materials and methods, results and discussion and references. A grading rubric will be uploaded on the BeachBoard platform outlining the allocation of points to be awarded for each component of the lab reports. All lab reports are required to be typewritten and submitted by each student although lab work may be performed collaboratively in groups. Failure to submit a laboratory report on time will result in a score of zero. A sample lab report is provided in BeachBoard for your reference. 1 Portfolio (Total 125 Points) Students will be required to design and submit a reflective E- portfolio post Barbados trip, which emphasizes the following:(1) history and Culture of Barbados; (2) documented facts about the oldest rum distillery in the world; (3) scientific and engineering aspects of rum and beer production and their relation to the cultural heritage of Barbadians; (4) attendance and experiences at the Grand Kadooment Crop Over Event; (5) professional collaborations and interaction with international peers and students at the Barbados Food Law and Industry (BFLI) Conference and food product development competition.
