1 November 2009 YES IT IS HOLIDAY LIGHT TIME AGAIN! Well here it is November and time to put up those holiday lights. This year the annual Holiday Lights Tour will again be held at the Green Valley Recreation Center. The date will be Saturday, December 12, The first bus will leave at 5:30 and the last bus at 7:30. As always we will be serving chili from Bennett s along with cookies and drinks. Again this year we will be inviting the school children of the area to perform along with the Highlands Ranch Community Chorus. The GVR Metropolitan District will have a crafts table set up again, so those talented children of Green Valley Ranch can make something special for their parents. As an added treat, we have school supplies left over from GVR Days and they will be handed out in an orderly manner. We hope this will help the children get through at least part of the second half of the school year. Please submit your name and address to the HOA Manager for consideration in the judging. All entries must be received by Friday, December 4, 2009 at 4:00 P.M. to be considered. Judging will be between 6:00 P.M. and 9:00 P.M. December 7, 8 and 9. Be sure if you have submitted your name for consideration, your lights are complete and turned on by then. We are also looking for volunteers to help judge and to act as guides on the buses. Please submit your names for either of these important roles to the HOA Manager by Thursday, December 3, 2009 at 5:00 P.M. All submissions can be made to the Association Manager by either manager@gvrhoa.com (please put Holiday Lights in the subject line) or dropping a note in the white drop box at 45 th and Tower. 5 Recipe Corner Red Beans and Rice v15.1 Submitted by: Gary B Haley Ingredients for 6 to 10 helpings, depending upon how good they are: 1 pound of red beans 18 to 24 ounces of vegetable broth (depends on the size of your crock pot) Worcestershire sauce 1 large bay leaf Finely ground red pepper and/or chili powder and/or chipotle seasoning 1/3 cup of Vermont s Sugar Free Maple syrup (or half that much honey) 1 white or sweet onion 1 small red onion 1 large green bell pepper or enough jalapenos to turn up the heat to your taste Smoked meat of your choice (optional) Sour cream (optional) Cornbread (optional) Please just trust me and read ALL the directions first. Making good red beans and rice is an art. Patience is a prerequisite. Start with red beans. Use kidney beans only in an emergency. No, really, find authentic red beans if it is at all possible. On the night before you intend to cook the beans, rinse them thoroughly and discard the ones that float or look bad, and remove any foreign objects (I find pebbles occasionally). Take the time to search for bad beans. You ll know them when you see them. More than a couple of bad beans can seriously affect the taste of the finished product. Soak the beans for at least an hour, rinse them thoroughly again, and then soak them in water overnight. If you had to use kidney beans, make sure they are covered with plenty of water - they will swell 2-3 times their size. Red beans will swell only a little. In the morning, rinse the beans thoroughly again, and remove any other bad ones you find. (If you don t have time to soak them overnight, boiling them rigorously for an hour and rinsing them a couple more times in cold water is a mediocre substitute.) Put the beans in a crock pot and add the vegetable broth (or the water if you have no broth). The liquid should cover the beans by about an inch or so. It s okay to add some water to your broth to finish filling it. Set the crock pot to its highest setting so the beans can start heating up. Add four or five good splashes of well-shaken Worcestershire sauce, the bay leaf, the finely ground seasoning of your choice, to your specific taste, the syrup or honey and the meat of your choice. Some suggestions would be smoked ham hock, smoked sausage, smoked turkey wings. (Did you notice the smoked theme?) Cover the crock-pot and walk away, somehow resisting the urge to open the lid and stir it, except maybe once, after about an hour, and another time maybe after about three hours if your crock pot is especially hot. Check on them now and then though, and don t let the liquid get down to the level of the beans. Keep the liquid covering the beans, but don t open the crock pot unless you need to add liquid, or feel you must stir it once or twice. Every time you open the lid, you ll need to add 10 minutes or so of cooking time. While the beans are cooking, dice the pepper(s) and about a third of the white or sweet onion and chop the rest of it and the red onion into stamp-sized pieces. After about four and a half hours, longer if the beans are still hard, remove and discard the bay leaf, take out the meat and set it aside to cool a little, and take about two thirds of the beans out (don t forget to put the lid back on) and either mash the beans, blend them, or use my favorite tool, a hand held smoothie-maker. A chunky result is a little better than overly smooth, but that s up to you. Replace the beans into the crock pot along with the diced pepper and stamp-sized onion. Slice the meat into bite-sized morsels and put them back in the crock pot for another hour and a half to two hours. Serve in a bowl or on a bed of rice. Sprinkle some of the finely chopped onion over the top as you serve each helping. A spoonful of sour cream is a nice touch and a slice of cornbread on the side is good. Enjoy!
