Also, Christmas Songs sing along with Mariel Meysenburg. Since the dissolution of the Keynote Singers, we no longer have that wonderful musical entertainment, but Mariel has graciously agreed to provide piano accompaniment for Christmas caroling at this luncheon. MENU : Choice of 3 entrees: Roasted Pork: Maple roasted pork loin, cranberry zinfandel chutney, shoestring sweet potatoes. Pecan Snapper: Pecan crusted snapper, roasted pesto baby red potato, red pepper butter sauce. London Broil: Marinated flank steak, roasted garlic and parmesan mash potatoes, peppercorn demi glaze. Dessert: Cinnamon and vanilla bread pudding with peppermint creme anglaise. Salad, rolls, butter, coffee, tea and soft drinks included. This is what our Parker Newcomers is all about as well...reach out and support our new members and each other as we get involved in the activities of the upcoming holiday season. Our luncheon will be at Pradera. The program for December, How to Travel With and Pack a Smaller Suitcase, will be presented by Janice Beller. Are you upset about paying extra luggage fees, handling clumsy oversized suitcases, trying to fit everything into your suitcase(s)? Then, as you look forward to taking a vacation after the holidays, Janice will be giving you some suggestions that have made it possible for her to travel with only one carry-on suitcase. It doesn t matter how long the trip from 3 days to 3 weeks she still only has one carry-on suitcase. 2 Sunshine Pat Kramer gmail.com Three of our sisters received Get Well wishes: Louise Stitzer, who fell and bumped her bean really hard, and had to be hospitalized. She denies doing cartwheels in her kitchen, is on the mend, and does not require the skills of the Chicken Soup Committee. Hoping you will be back in the swing of things soon, Louise. Ursula Huber, who had elective surgery and is home recuperating..and apparently has her own Chicken Soup Committee (thank you, ladies). We wish you, good healing, Ursula. Sue Matt, who had a different kind of experience on the way to the Molly Brown House, which included a nasty fall and a bump on her bean (causing a multi colored shiner) requiring her to go to the ER for evaluation..which ruled out a concussion. Sue, we will do the Molly Brown House another day. Happy healing! I appreciated all of your support of my family and me during this time of our sudden tragic loss of our husband and father. He had anchored, loved and nurtured our family for 40 years. It is impossible to express the toll this has taken on our lives. Don was the brightest, most honorable and hardworking man I have ever known and we will miss him and carry him in our hearts forever. Halorin had to return to law school in Boston almost immediately; but, will be home with me for the holidays. Bryce was able to stay home for four weeks before returning to Afghanistan to complete his deployment. You will see what I mean when you read about Peggy Johnson this month. Peggy was born in Pennsylvania and raised in Bethesda, Md., the youngest of four children. After graduating from high school, she earned a degree in Education with a Psychology minor. She heard about an employment opportunity in Alaska which required ONLY a college transcript, an application and a few recommendations. NO interview! Ah, the good old 60 s. Teachers, especially women, were very scarce up north at that time. The ratio of men to women was 10 to 1. She drove herself to Alaska a two week trip on the Alaska Canada highway which is mostly gravel and extremely dangerous. Her brother lived in Wasilla (the home of Sara Palin). She taught 2nd grade and enjoyed winter skiing and hiking as well as water skiing on her brother s lake. She met her future husband within the first month and married him the next year. They moved to Washington D.C. where he worked in the Pentagon and their first daughter, Lynnea was born. Their next move was to San Jose, CA where Rebecca and son Adrian were born and 11 years of being a stay-at-home mom. Then on to the Santa Cruz Mountains where she began her 20 year career with Hewlett-Packard as a lease administrator. After 27 years of marriage, she got divorced, moved to Colorado and accepted a position in customer relations with Agilent Technologies from which she retired in She came to Parker alone, but quickly made friends within the Singles Club. Her daughter Rebecca and her husband live in the area with their two boys, ages 2 and 6. Adrian is also in the area and Lynnea is in California with her two year old granddaughter. Peggy Johnson is our kind of woman busy with gardening, sewing, traveling, volunteering at her church, the Parker Senior Center and Parker Hospital, as well as babysitting grandsons. She is our 3rd vice president on the PNC board after being a member for only two years. You go, girl! There is a ski bus that leaves from Cottonwood area (the old King Soopers) starting in January. You may purchase greatly discounted ski tickets on the bus, as well as ski lessons. There is always someone to ski with you. Want more information, call Katy. Recipe Corner MOCK CHOP SUEY Submitted by Jackie Hitchins 2 Tbs Olive oil 1 LB. Ground beef (or cut up pork) 1 cup Chopped celery 1 large Onion chopped 1 cup Rice cooked 1 cup Water 1 can Cream of chicken soup 1 can Cream of mushroom soup 1 can Sliced water chestnuts 3 Tbs Soy sauce Saute ground beef or pork in olive oil. Add celery and onion. Continue to saute until translucent. Add soy sauce. Add all other ingredients and pour into greased 9 X 13 glass pan. Bake for one hour at 350 degrees. Remove from oven. Top with one large can of crispy chow mein noodles and continue to bake for 30 minutes. If you are taking this to a potluck, leave the noodles off until ready to serve. 4
