4 Kolumnentitel The new opening Header RECIPE PÃO DE QUEIJO / CHEESE BREADS * INGREDIENTS 80 ml milk or soy milk 80 ml water 120 ml olive oil or butter 1/2 tsp salt 270 g tapioca flour 2 eggs, whisked 50 g freshly grated Parmesan 2 tsp chopped garlic for 6 portions METHOD For the Pão de Queijo, pour the milk and water into a saucepan. Add the oil and salt and bring to the boil. Place the tapioca flour in a bowl. Pour over the hot milk mixture step by step and continue until all the mixture has been added. Stir well and fold in each egg at a time. Finally, add the grated cheese and garlic. Line a baking tray with baking paper. Use a tablespoon to form small dumpling shapes from the dough and then shape these using your hands (dust hands with flour first). Place on the baking paper leaving sufficient space in between each one. Bake the Pão de Queijo in a pre-heated oven at 180 C for ca. 25 minutes when cooked, they should be crispy and still soft inside. * The Pão de Queijo are served as part of the breakfast buffet of select IntercityHotels. 7 Rhine-Main Special Rhine-Main Special SALMON FILET Recipe by Philipp Henkes WITH CITRUS FRUIT BUTTER, ROAST ASPARAGUS AND WILD GARLIC POTATOES Divide the salmon into four equal portions and leave to stand in a cool place. Cut the lower 2-3 cm off the white and green asparagus. Boil the potatoes in salted water and peel. Place both asparagus varieties in baking paper and season with salt, sugar and a little white pepper. Add ca. 30 g butter and drizzle over a little orange juice. Firmly tie the ends with roasting string and close the baking paper over the asparagus. Bake in the oven at 180 C for ca minutes. Season the salmon with salt and pepper and fry on the skin side until golden-yellow. Add a little orange and lemon juice to the pan and remove from the stove, add ca g cold butter. Place the salmon in the oven and cook for 6 8 mins at 160 C, depending on the thickness of the salmon. Place the potatoes in a frying pan and toss in the butter on medium heat. Add the chopped garlic and season with salt and pepper. Carefully remove the asparagus from the paper and arrange on the plates. Place the salmon on the asparagus, arrange the potatoes around this and pour over the citrus fruit butter sauce. The rustic atmosphere which is emphasized by tucked away seating corners with wooden tables, lovingly crafted carvings and a carefully chosen decor recalls the hotel building s past as former stables. There was mention of a piggery as excursion destination here already in Quite a bit has changed since then! In 1949, the building which had been destroyed during the war, was rebuilt and, to preserve the original charm, replacement parts such as doors and troughs were brought in from Bavaria.
