11 Did you know? Papas Arrugadas. A classic in the Canaries This is one of the most representative dishes in the Canaries. These tiny wrinkled potatoes are a must try when visiting the Canaries. But how did salted potatoes become so famous? Potatoes aren t even native to the islands! We actually have the Incas to thank for this. Around the 1550s potatoes arrived to the Canary Islands for the first time, brought by explorers to the Andes. At first the potatoes were cultivated in botanical gardens for show. In the 17th century potato cultivation began on the island, and locals still call the potatoes papas (they re patatas in mainland Spanish), just as they do in the majority of Latin America. The best part of papas arrugadas is the salty crust that forms on their skin. The salt is barely visible, but definitely there. The truly authentic way to make papas arrugadas is by boiling the potatoes in seawater. This is a recipe that came from necessity, as fresh water was often short on the islands, and locals had to make due with what they had. No one imagined how delicious they could be when cooked. Pair these delicious potatoes with the most famous sauces from the Canary Islands, the mojos. Mojo picón is red and slightly spicy, while mojo verde is refreshing and bright green. 13 Canary Islands, opportunities for new routes A wide variety of initiatives to improve connectivity With an economy based on a booming tourist trade, representing 34% of their GDP, the Canary Islands are one of the Europe s outermost regions. The distance from the peninsula, Europe and also with nearby Africa is a permanent challenge that has always required initiative, creativity and decisiveness to develop new strategies to improve connectivity. These are some initiatives carried out to improve the connectivity of the archipielago: Tax advantages.the Canary has a special Economic and Fiscal Regime (REF) that allow operators to create a subsidiary or simply open a branch in the Canary Islands and obtain significant benefits, including 4% Corporate Tax rate and for all business generated by operations to and from Canary Islands, with no withholding tax for profit repatriation. Canary Islands Flight Development Fund. The aim of this Fund, that meets the EU Guidelines on State aid to airports and airlines 2014/C 99/03, is to promote the start-up of new strategic routes between any island in the archipelago and airports with which there had previously been no direct connection. Intense marketing activity in nineteen European countries. Canary Islands Tourist Board is running an ambitious and innovative marketing strategy for Canary Islands tourism brand and their island destinations. Aena works in close cooperation with Canary Islands Tourist Board during the whole year and when attending the Routes Development Forums, where we meet with airlines to discuss the routes development. Additionally Aena have an Incentive Scheme, which rewards the opening of new routes and specifically rewards the operation during offpeak days at the Canary Islands, and Marketing Support activities geared towards achieving greater visibility and publicity for the launch of new routes.
