Since we last connected I have been busy experimenting with Health and Wellness Tourism activities in our Caribbean, and I love it!! Countries in the Caribbean such as the Dominican Republic, Cuba, and Jamaica, are actively promoting Health and Wellness Tourism. What is Health and Wellness Tourism? Well, people visit our Caribbean to improve their health and their lives through physical, emotional and spiritual experiences. 2 C M : Tracey Archer, Spa Manager Q. What is your Occupation? A. I am a Spa Manager with the Sandy Lane Hotel in Barbados. Q. What kind of skills/ knowledge do you possess in order to do your job? A. I am able to do nails, facials, wax, apply make-up, and offer massages to the body. I have two Associate Degrees, one in Advance Massage Therapy, and the other in Paramedical Skin Care from the Florida College of Health in Therapeutic Massage and Skin Care. The most important skill of all is being able to properly communicate with people. Q. Describe a typical day on the job? A. Every morning I attend a meeting for managers of the hotel at 8:30 a.m. There, we talk about the arrivals for the day, make sure that all areas are working properly, look at ways each department within the hotel can lower costs, and we talk about the problems in each department. In the Spa at Sandy Lane, the first treatment begins at 9:00 am, and I make sure that each preparation room is fully stocked, and that each member of my team is well prepared. In addition, I check my and telephone messages. Every message is dealt with as soon as possible. At 11:45 a.m. I attend a briefing with my department where we look to identify any problems and work towards solving them. Q. What do you like best about your job? A. I consider myself a people person, because I truly enjoy working with people. I look at trying to help them in every possible way. I like to train people as well. I like to share my knowledge and experience with others so that they can benefit. What I do consider as the best part of my job is helping to make the Spa at Sandy Lane the best spa in the world. Q. Why did you choose this career? A. From the age of 17, I used to give some of my family members a neck rub and also massage along their back and shoulders. People said I have nice hands and should really use them. I realized that this is something I like to do. I lived in London for 8 years and worked in retail. I then moved to New York and joined a singing group with Sony Records. When I first arrived in Florida I managed a restaurant until it was closed. In 1997 I went to school for three years at the Florida College of Heath, while managing a skin care clinic in Coral Gables Florida. I worked massaging pro athletes and this is when I realized I wanted to work in this area. It was something I felt comfortable with and truly enjoyed. I moved back to Barbados in 2001 and started to work at the Sandy Lane Hotel as a Spa Therapist. Q. What would you say are the most challenging aspects of your job? A. The most challenging aspects of my job would be the different personalities from guest and staff. It is challenging when dealing with someone who has a different culture or a different belief to you. I try to understand their way of life and to find a way that I can satisfy their needs. With my work colleagues, I try to find ways to motivate my employees so that they will feel satisfied with their job. 2 Making Waves A Tourism Bulletin for Caribbean Children

3 Recycling ENVIRONMENTAL CORNER Recycling is the process of converting waste (things we throw away) into new materials. For example, waste paper can be converted into new paper goods such as cereal boxes, toilet paper rolls etc. Recycling conserves our natural resources, saves landfill space, conserves energy, reduces water and air pollution, and the green house gas emissions that cause global warming. There are many hotels in the Caribbean which have recycling programs. In the U.S Virgin DID YOU KNOW? Islands at the Maho Bay Camps on the island of St. John, there is an art center which has a Trash to Treasures program, where the resort s trash is recycled into craft items and fine art. On the property there are free nightly demonstrations of glass making from bottles which are usually discarded in the trash. Take a look at some of the wonderful creations done by the hotel. If you recycle one aluminum can, it will save enough energy to power a television for three hours? The Fruit of Angels PAPAYA (PAW PAW) Christopher Columbus called Papaya the fruit of angels. He noticed that the original inhabitants of the Caribbean ate the fruit after huge meals and never encountered any stomach problems. The Papaya also commonly known as the paw paw, remains green on the outside when ripe in some varieties, but most of them turn deep yellow or orange. The flesh may be yellow, orange or a beautiful deep pink. No matter what the colour, there are plenty of black seeds which are found in the center. If you have never tasted this fruit, think of a watermelon mixed with peaches and you will get the taste. The paw paw is very nutritional, and contains vitamins A, B, and E. It is also an excellent source of calcium, iron, proteins, potassium, and aids digestion. The papaya has remarkable medicinal virtues recognized from ancient times, since it greatly reduces inflammation in diseases such as rheumatoid arthritis, gout, and asthma. Popular Tourist Attractions: DOMINICAN REPUBLIC Located in the center of the Caribbean Sea, the Dominican Republic, with a territory of 18,172 square miles, is situated on the eastern part of Hispaniola, the second-largest island in the Caribbean. The Dominican Republic has a population of 9,650, 054 persons. The official language spoken is Spanish although in tourist areas such as Punta Cana, Puerto Plata, etc. other languages are spoken. In 2008, the total number of tourist to the Dominican Republic was 3,979,672 stay over visitors. The majority of stay over visitors are from the United States, Europe, and Canada. 5 Meet Amauri Rafael from the Dominican Republic Hi, my name is Amauri Rafael, and I am from the Dominican Republic. I am 9 years old and I attend the Peces School. I live in the capital, which is Santo Domingo, and the area I live in is known for the Zona Colonial and Ambar Museum. The Zona Colonial is where the Spanish civilization began in what is called the New World by Christopher Columbus and other explorers. The Ambar museum has insects which are trapped in a stone. There are a lot of trees and buildings and it is very nice. I love my country a lot and I like the countryside more than the beach. I enjoy the countryside because there are horses and I get to ride them. I also enjoy El Sendero del Cacao (The Cocoa Trail) because they have great chocolate, and there are a lot of animals. I also enjoy rivers such as the Salto del Limón because it is a cold river. I also enjoy the colonial area especially the food such as, salcocho (Dominican soup), tostones (type of a fried plantain), salami and sweet milk. Some of the fruits grown in the Dominican Republic are mangoes, plantain, and pineapple. My favorite is the mango because it is sweet, and tasty. I also like some mango dishes which are done with salt. Dominican Republic Gastronomy The gastronomy of Dominican Republic is one of the richest in the Caribbean area. We are a melting pot of different cultures that have converged in our island - Spanish, Africans, Taino Indians, French, etc., which makes our food so delicious. Our national dish is Red Beans and Rice, accompanied by beef or chicken stew, green salad and tostones (fried green plantain). Also we have the famous Sancocho, made with different meets and starches, cook together until we reach something between a soup and a stew. Or our delicious Mofongo, mixture of green plantain, belly pork rinds and garlic stock. Right now, the mango season is starting. In our island there are over 90 different varieties of mangoes, including some of our own. Here is a delicious, easy to make mango slaw recipe that goes very well with meats, poultry and fish. We presented this recipe in ExpoMango 2009, a mango fair we celebrated in Baní, our most prominent mango producing city. We invite you to prepare and enjoy this recipe with all your family. Rice vinegar 8 oz. Sugar 0.5 oz. Sesame seed oil 12 oz. Soy sauce In my free time I like to play the guitar and go to new places with my mother. I like tourism. I consider myself to be a Gourmet Child because I like to eat everything. A gourmet food for me is something which is tasty, beautiful and organized. When I grow up, I want to study tourism like my mother. I want to follow her in becoming a chef.
