I have always thought about this museum. I have even dreamed about it. It is a far more personal project than I would have ever thought, because it involves the people that built this company before me. I think of them fondly, with gratitude, as they have enabled me to manage a company and a team that I love. I have learnt the meaning of the words action, collaboration, vision, heritage, and transmission. I would like to take this opportunity to thank all my colleagues who have enabled me to make my dreams a reality, and who will very soon be welcoming you to this beautiful space dedicated to pain d épices. 3 MULOT ET PETITJEAN, ENTREPRISE DU PATRIMOINE VIVANT Founded in 1796, Mulot & Petitjean has a long and prestigious history: born from the alliance of two of the oldest pain d épices producers in Dijon, Boittier and Céry. With its 220 year history, Mulot & Petitjean remains a family business to this day, very attached to the values of the master pain d épices bakers of Dijon: the quality of the ingredients, staying faithful to the traditional recipes, and respecting the know-how of the people. The company Mulot et Petitjean, whose factory is located in Dijon, runs four of its own shops in the region and has a distribution network throughout France. At Mulot & Petitjean, pain d épices has been made in the traditional way for over 220 years. Genuine Dijon pain d épices, with a wheat flour base, remains an authentic product that awakens the indulgent memories of our childhood. In March 2012, Mulot & Petitjean was listed as an Entreprise du Patrimoine Vivant because it meets the committee's various selective criteria: a secular history and heritage, capacity for innovation, unique know-how, a good reputation in the French business network. The original, traditional techniques, the innovations, the inventions in terms of products and processes and the high quality requirements meet customers needs completely. 2

4 AN AMBITIOUS PROJECT ON A SITE BUILT OVER TWO CENTURIES AGO For the occasion of the 220th anniversary in 2016, Mulot et Petitjean launched the renovation of the production site at 6 boulevard de l Ouest in Dijon and built an extension over 1000m² in size. This project also includes the creation of a museum space and a gift shop in the historical part of the building, over about 400m². This space will enable visitors and consumers to find out about the history of pain d épices, the Mulot et Petitjean company and of course the production of pain d épices. 7 MULOT ET PETITJEAN, A FAMILY HISTORY As a visitor, you will begin your discovery in a reconstruction of the management office, where you will be welcomed on the audioguide by Catherine Petitjean, the current CEO of the company. Set in the early 20th century, you can enjoy an audiovisual show where you will be taken right into a conversation between Catherine Petitjean and her ancestors: Auguste Petitjean, Louis Mulot and Barnabé Boitier. Some of the portraits come to life to talk about the past and present of the company. You are then invited to find out how pain d épices arrived in Dijon, and discover its position in the economy of Dijon. You can then go into the next room, the unloading area. THE UNLOADING AREA, AWAKEN YOUR SENSES You can continue your tour in the unloading area. Listening to the audioguide, you can discover which raw materials are used in the production of pain d épices. Thanks to soundscapes and stage design that is very orientated towards the senses, you are immersed in a real unloading area. Honey, flour, fruits and spices, this is a fun and interactive space where you can see, smell and touch these ingredients that are used in the production of pain d épices in Dijon and elsewhere. 6

8 RESPECTING HEALTH AND SAFETY RULES Before entering the production workshop, a certain number of health and safety rules need to be adhered to, as they are essential to the quality of our products. Thanks to an audiovisual projection, you can see how equip yourself before entering the production area. THE PRODUCTION OF PAIN D ÉPICES, YESTERYEAR AND TODAY The visitor is invited to journey through time. You can follow the production stages of the pain d'épices through the exhibition of the collection of machines and tools in the company. Thanks to the windows that look onto the production workshop, you can also see current production in progress. On giant screens, the staff explains the current stages of production of the pain d'épices to the visitors. You can see that while the machines have changed, the process remains the same. THE MAINTENANCE WORKSHOP In this workshop, you can find out about the importance of the role of maintenance in the production of pain d épices. At the beginning of the century, wooden moulds and cases were made for shipping, and of course machines were repaired. 7

THE GIFT SHOP The visit comes to an end in our gift shop, where a tasting area will enable you to taste the specialities you have just learnt

9 THE LABORATORY At Mulot et Petitjean, innovation is our priority. Each year we look for new flavours and formats. It is in this room that our research and development team works on new recipes, and when the laboratory is opened, you will be able to see them at work. THE GIFT SHOP The visit comes to an end in our gift shop, where a tasting area will enable you to taste the specialities you have just learnt everything about. This area has been created with some original furniture, specially recreated for the museum by cabinet-makers. Pain d épices, French cake, glacés minces you will have plenty of choices, with a large range of products produced on site. THE GALLERY Before or after your tour, you can visit the old loading area that has been refurbished as a gallery, with temporary exhibitions. Admire the magnificent clock from 1912, which is still mechanically wound by the maintenance workers. 8
