9 centrestage This year, Resorts World Genting celebrates 50 years of bringing hospitality and entertainment to Malaysia and the world. As part of the festivities, several celebrity chefs were invited to the mountain resort to continue a culinary tradition. Genting s 50th Anniversary Chef Series uch has changed in the five decades since Tan Sri Lim Goh Tong, founder of Genting, conceived the idea of opening a mountain resort for all Malaysians. There have been many achievements, the latest being Resorts World Genting s First World Hotel earning Guinesss World Records distinction as the world s largest hotel. Indeed Genting not only has the hotel with the most number of rooms; it has also become renowned for its many fine restaurants offering a variety of cuisines, from high-end fine dining to more casual food to meet the palate of its over 20 million customers annually. 8

10 centrestage Renovations are currently underway at the resort to bring about a new era of transformation that will make innovative dimensions in lifestyle dining, retail, accommodation and entertainment a reality. Many new developments will result, chief among them the 2016 opening of the long-awaited, world-class Twentieth Century Fox World Theme Park. The transformation is focused on creating a memorable experience for guests and meticulous thought has gone into creating an euphoric ambience. The aim is to elevate Resorts World Genting to a higher level, by introducing products and assets of international brands, especially in retail and lifestyle dining. According to Ed Holloway, Senior Vice President of Hotel Operations, development plans include a celebrity chef programme aimed at upgrading and exposing the resort s chefs to new cooking skills and techniques. Holloway said, Guests are more discerning these days, with many of them being ardent viewers of celebrity cooking shows on television. They too would want to experience and taste the exciting dishes created by some of the world s most celebrated chefs. We went to considerable lengths to select the three celebrity chefs for our most current round of events in the resort. Firstly, we needed to read through their credentials to ascertain whether they were available, and then, we had to determine what value they would bring to the resort. We selected three excellent chefs and the reaction from our staff and guests was most positive. The spin-off for the resort is that the celebrity chefs do in-house training with the staff to pass on new skills and basically raise the bar for all concerned. In an everchanging world, it is impossible for the resort to evolve to a new level without changes and improvements, in this case, in terms of food and beverage. 9

11 centrestage I believe, that the resort has kept up with current travel and dining trends by creating new experiences for our guests who have become more adventurous in what they eat and where they dine. The celebrity chef programme has been very successful and plans are in place to continue this trend, with famous three-star Michelin chefs at Resorts World Genting. French Wine and Food with Chef Frédéric Prouvoyeur Chef Frédéric Prouvoyeur recently presented an exciting dégustation and à la carte dinner at the signature restaurant, The Olive at Resorts World Genting. The sixcourse dinner was made available to discerning diners who could choose to have just the food, or enjoy it with Barton & Guestier wines the latter carefully curated by the resort s Sommelier, Kevin Yee Hee Yoong. Chef Prouvoyeur who graduated from the Culinary School of le Touquet in 1978, joined Barton & Guestier as Executive Chef of Château Magnol, Barton & Guestier Guest House in January He advanced his career in numerous prestigious restaurants such as the Volkshauss Hôtel in Berne, Switzerland, the two-star Michelin l Oustau de Baumanière Restaurant with renowned Chef Raymond Thuillier on the French Riviera, and the Restaurant Le Gamin in London. Chef Prouvoyeur has been living in the Bordeaux region since 1984, developing his talents, first as an assistant and then Chef de Cuisine at the Hôtel Sofitel Lac, before joining Barton & Guestier in January At the prestigious 18th century Château Magnol, he highlights luncheons and dinners, and also works closely on food and wine pairings to ensure the most unique culinary experience for his guests. His talent is now exported all around the world; the chef showcases his culinary gems at various restaurants, the most recent being Resorts World Genting s The Olive. Some of the delightful dishes from his à la carte menus were Starters of Salade L andaise Au Confit Et Magret Fumé and Scallops Croustillant with Saffron Sauce, paired no less with Barton & Guestier Passeport Côtes de Provence Rosé by the glass. For mains, dishes such as Seabass and Seafood Aumoniere were paired with Barton & Guestier Passeport Chablis, and Chicken Supreme Stuffed with Gambas and Curry Sauce was paired with Thomas Barton Graves Blanc. Exciting desserts included Fruit Gratin with Sauternes Sauce, to go with a glass of Thomas Garton Sauternes. 10

12 centrestage Chef Christophe Rose s Classical French Cuisine In September, Chef Christophe Rose appeared for just two nights at The Olive to offer guests a menu highlighting excellent food paired with premium wines. Guests at these two five-course dinners matched with five wines, tasted the exquisite dishes of Chef Christophe, who is the main chef in Les Chartreuse, the Cos d Estournel Château in Bordeaux since He cooks exclusively for the winery owner and his guests. At Les Chartreuse, according to market availability and the season, Chef Christophe offers gastronomic cuisine that gives authenticity and refinement to locally produced ingredients. Through subtle food and wine pairings, his cuisine especially appeals to lovers of the prestigious vintages of Cos d Estournel. Chef Christophe attained formal education in classical cooking at Lenôtre School in Paris. He commenced his career as a chef in 1993 at the Hôtel Golf des Vigiers in Monestier before moving to other restaurants. From 2002 until 2013, the chef operated his own restaurant. His enticing menu at The Olive included several of his signature dishes. 11

13 centrestage Chef Janice Wong s Boundless Cuisine Boundless is the word which aptly sums up the cuisine of Chef Janice Wong who also displayed her culinary skills at The Olive. Her refined and ever-evolving dessert creations began with her pastry studies at Le Cordon Bleu Paris, arguably the world s best culinary school. Dissatisfied with how desserts were never the highlight of a meal, she actively sought to change this perception with the opening of 2am: Dessert Bar in Singapore s Holland Village. Her endless passion for culinary art motivates her to test the limits of dessert making, including constantly blurring the boundaries between sweet and savoury. Eager to perfect her craft, Chef Janice worked in numerous respected restaurants in Singapore, Paris, New York, Chicago, Madrid, Barcelona, San Sebastián and Majorca. These experiences allowed her the opportunity to work alongside celebrated chefs such as Gunther Hubrechsen, Loretta Fanella, Oriol Balaguer, Juan Mari Arzak, Will Goldfarb, Alex Stupak and Pierre Herme. In addition to her participation in many globally recognised culinary events, Chef Janice was the lone representative from Asia at Valrhona Madrid Fusion 2010, a leading global gastronomic forum. In 2011, she was invited back to co-host the opening dinner for Madrid Fusion with Chef Andre Chiang. The chef has since embarked on yet another exciting new culinary adventure. Instead of opening another branch, she opted to create 2am: Lab, a meaningful, non-profit expansion of the philosophies of 2am: Dessert Bar. 12

17 wassup! REGIONAL SERIES Passion Excellence Recognition hree very important words encapsulate the Hospitality Asia Platinum Awards (HAPA) passion, excellence and recognition. The first two are commonly heard in the hospitality industry as everyone from chefs to general managers and back-of-thehouse staff strive to do their best for their guests. HAPA injects that additional third quality by recognising those within the industry who go the extra mile to ensure they deliver the best service possible, at all times. Since their inception in 2002, HAPA has set out to recognise and honour the most outstanding and deserving establishments and individuals in the hospitality industry throughout the region. HAPA has also stood firm in acknowledging that the core strength of this dynamic industry is invariably credited to individuals who contribute tirelessly in their efforts to uplift service standards. A spectacular and glitzy award ceremony is planned for 2016 in, in one of the city s grandest ballrooms. The region s most deserving hospitality individuals and teams will gather for a memorable night of awards, entertainment, food and beverages with proceeds going to a deserving cause. Through HAPA, an impressive number of recipients have been awarded for raising the hospitality standards in their respective countries. These recipients deserve recognition as they have shown tremendous passion and dedication to the industry and have persevered with all the challenges that they encountered in performing their duties. The judging panel had a difficult task determining who attained the ultimate benchmark of excellence for the coming series of awards. HAPA s constant search for establishments, properties and individuals who have the Passion for Excellence is a feature of the awards. Excellence is defined as having outstanding qualities. Aiming for excellence requires inspiring leadership skills, a desire to be succeed, strong passion, high energy and a partnership with an engaged team by building long lasting guest and customer relationships. The evening s success requires incredible commitment from the organiser, committee, the extensive panel of judges, nominees and the sponsors, who have all devoted their time and energy to identify those with unparalleled commitment to the industry. With HAPA s new direction, we will be looking for passionate, dedicated and hard working individuals, outstanding establishments and properties that constantly challenge themselves to excel and deliver the best without compromising quality and service. This recognition is based on benchmark scores set by the HAPA Committee, regardless of the number of nominees participating in each category. In other words, there will no longer be recipients for the Best Five or Best Ten. HAPA now recognises and awards nominees who surpasses HAPA s benchmark score and will present them with a recognition plaque/trophy for their achievement. This is to encourage industry players with a Passion for Excellence to set an example and ultimately improve the benchmark. As always, as part of HAPA s corporate and social responsibilities, the Committee will be working with a deserving children s charity to ensure that the HAPA Awards benefit a broader community, other than the one it serves.
