3 Eighth Traditional Serbian Food Festival Welcome! On behalf of the organizing committee, Dobro Došli (welcome) to our annual K-W Serbian Food Festival. It is our pleasure to be able to share with you our culture and cuisine. You will be entertained by a live Serbian band performing contemporary and traditional songs. There is a wide array of authentic Serbian food to try. You can experience ćevape (chevape) and goulash. If you haven t been to a pig or lamb roast, then you can try our delicious roasted pig and lamb hot off the spit. Another item that is often on our menu is a bull roast sandwich (roast beef sandwich) hot off of the spit. A meat lover s must-try. Come to the bar and enjoy a glass of rakija (Serbian plum brandy), a centuries-old drink, with your hosts. Živeli! (Cheers!) For those who have a sweet tooth, we will be serving our traditional desserts, which pair perfectly with a cup of traditional Canadian Tim Hortons coffee :) Our biggest thank you goes to our volunteers. There are countless hours needed to organize and run this festival. Without the volunteers this festival would not be the successful annual tradition it has become. A special recognition to the Kolo of Serbian Sisters for all of their hours spent preparing food and desserts. We would also like to thank the local Serbian community and our sponsors for all of their support and donations. 5 Eighth Traditional Serbian Food Festival A Taste of Serbia Serbia is located in south-east Europe on the route linking Europe and Asia, occupying an area about 12 times smaller than the province of Ontario. Throughout history, Serbians ruled over several smaller states with different name, but in the 13th century, Stefan II Nemanjic (known as Stephen the first-crowned) managed to promote the nation to the status of an empire and to establish the long lasting dynasty of the Nemanjici (Nemanyichi). His brother, Sava Nemanjic (St. Sava), was the first Archbishop of the autocephalous Serbian Orthodox Church, four centuries after the nation was Christianized. Despite Stephen the first-crowned being the first king, Serbians call themselves today sons of St. Sava, showing that the spiritual birth of nation is of greatest importance. Modern-day Serbia is a country with aproximately 9 million people, with another 4 million Serbians living on 5 continents in more than 100 countries. th The country's National Anthem is a song from the 19 century entitled God of Justice, occasionally referred to as the "Serbian National Prayer". If you ever visit Serbia, you will see beautiful ethno-villages, famous mountain resorts, healing spas, century-old architecture, and untouched forests and waterways, with each region of the country being authentic yet linked to all of the others. Christian pilgrimage across the country is also a special experience due to Sebia's many medieval churches and monasteries, particularly in the southern province of Kosovo and Metohija. Serbians will tell you about the nation's many sufferings throughout history, but they will always greet you with a warm-heart and will go out of their way to make you feel at home.

6 6 Eighth Traditional Serbian Food Festival Nikola Tesla was a Serbian American inventor, engineer, futurist and physicist best known for his contributions to designing modern alternating current electric supply. He was born on the 10th of July in 1856 and passed away on the 7th of January, There are many great scientists, but certainly one of the greatest is Nikola Tesla, who is often referred to as the man who invented the 20th century. He is less famous than Albert Einstein or Thomas Edison, but his contribution to mankind is simply immeasurable. Tesla was quiet and modest inventor, a genius who lived and suffered for his inventions and who did not receive the majority of recognition for his work. This mysterious man brought to the world a system of alternating current (what powers every home on the planet), radar, radio, x-rays, quite likely free limitless energy, the transistor, and many more things that we are using in the present. However, as the years pass the significance of Tesla s inventions are increasingly gaining in importance. I do not think there is any thrill that can go through the human heart like that felt by the inventor as he sees some creation of the brain unfolding to success... Such emotions make a man forget food, sleep, friends, love, everything. Our virtues and our failings are inseparable, like force and matter. When they separate, man is no more" Let the future tell the truth, and evaluate each one according to his work and accomplishments. The present is theirs; the future, for which I have really worked, is mine" Life is and will ever remain an equation incapable of solution, but it contains certain known factors." Парохијско имање, величине 3 акра, у западном делу Кичинера освећено је године. Темељи храма освећени су уз саслужење првог Епископа Канадског Г. Георгија и великог броја свештеника. Градња храма је трајала до маја године. Радило се са много воље, одрицања и давања. Црква је освећења 13. маја То је дан који је Србима у Кичинеру донио радост, када су добили свој црквени дом, место где се окупљају на молитви. Црква је живописана у периоду од до године. Од године у храму почивају мошти Св. Јована Шангајског. Срце парохије, за све године постојања, је Коло Сестара Блага Марија. Сестре су уградиле и уграђују себе и свој рад у све што се урадило и што се ради у овој парохији. За њихову љубав и заслуге речи су недовољне. Бригу за млади нараштај, за очување српског језика и за укљученост у српску цркву показује оснивање српске школе и фолклорне групе већ Данас је то српска школа Св. Сава која је у заједници са ЦШО Св. Дуги низ година при цркви постоји хор Св. Роман Мелод, који има и дечји хор. Певачка група Божури окупља младе девојке које певају изворне српске песме. На црквеном имању и у црквеној сали (освећена 1992.) орджавају се многобројне активности које доприносе очувању и промовисању српске баштине. То су прославе црквених празника, фестивал српске хране, концерти хора и Божура, фолкораме, хајдучко и гурсларско посело и друго. Од оснивања парохије до изградње цркве, и у даље развијање парохије уложило се и улаже много труда, одрицања и љубави. 10 10 Eighth Traditional Serbian Food Festival Serbian Cuisine: Pogacha 1 ¼ cups water 2 teaspons water 1 ½ packages dry yeast 2 tablespoons sugar 3 tablespoons oil 1 egg 3 ½ cups flour Dissolve yeast in warm water. Add sugar, oil, and egg. Gradually stir in flour until combined and soft dough forms. Knead in bowl for 1 minute. Place dough in greased bowl, cover, and let rise until doubled. Roll on a floured board into large, slightly flattened circle. Prick with fork all over. Brush top with oil or butter and let sit for 20 minutes. Bake until golden brown at 325 F (for about 30 minutes). Wrap in cloth until cooled down. 11 Eighth Traditional Serbian Food Festival Serbian Cuisine: Krempita 2 sheets thawed puff pastry 8 egg yolks 200 g (7 oz) sugar 6 1/3 cups milk 150 g corn starch 3 packets vanilla sugar 8 oz whipping cream +1 stabilizer Pastry: Roll out pastry sheets onto lightly floured surface, and bake according to directions on a jelly roll pan. Let them cool, and then cut out the shape according to the size of the square pan you will use. Once you cut them to the shape of the pan, cut one sheet into squares that will be the top of the cake. Cream: Mix egg yolks with sugar, until frothy. Add a cup of milk (out of the 6 1/3 cups) and corn starch, and mix well. Set the reminder of milk with vanilla sugar added, to boil, and when it comes to a boil, slowly mix in the yolk mixture, and stir constantly for a minute. Transfer to a large mixing bowl, and let cool completely. When cooled, add the whipped whipping cream, whipped with a stabilizer. Now put the whole sheet on the bottom of the pan, and spread the filling over it. Arrange the cut out sheet on top. Refrigerate for few hours before serving. Dust with powdered sugar. 12 12 Eighth Traditional Serbian Food Festival Serbian Cuisine: Corn Bread Proja 5 cups cornmeal 1 teaspoon salt 8 ounces (2 sticks) softened butter or margarine 3 large beaten eggs 2 cups milk This recipe for Serbian corn bread or srpska proja was a staple among Serbian peasants and more common than white wheat bread. Proja is served warm often with cracklings, yogurt, soft cheese, sauerkraut dishes, kajmak (cream chees) or sarma (Serbian cabbage rolls). Preparation: Heat oven to 375 degrees. Lightly coat a 9x13-inch pan with cooking spray. In a large bowl, mix cornmeal with salt, butter or margarine, eggs and 1 cup milk, until thoroughly mixed, at least 5 minutes. Add remaining 1 cup milk and mix again for 5 minutes. Transfer to prepared pan and bake until golden and crumbs stick to a toothpick. Cut into squares, but leave in the pan, and bake an additional 5-10 minutes, for a total baking time of minutes. The cornbread should be crusty on all sides. Serve warm.

13 Eighth Traditional Serbian Food Festival Serbian Cuisine: Moussaka Musaka Ingredients (for 4 plates) 1 pound (450gr) of beef/pork mince meet combo 2 medium onions, chopped 7 medium potatoes 2 cups of milk 3 eggs 10 tbsp Oil ½ cup of water Salt and pepper to taste It's one of the simplest dishes made in Serbia for a long time. Although the authentic Greek dish moussaka is made with eggplant, Serbian musaka is made with the ground beef (or pork) and potatoes. Preparation Fry finely chopped onions on 5 tbsp of oil at high temperature. After a few minutes add a ground meet. Add a little bit of salt and just enough pepper to taste. Make sure you don't over salt it. Continue to fry it for another 5 minute pressing the meet with your spoon to make pieces smaller. The mixture is done when the water from the meet evaporates and when the meat browns. Peel and slice the potatoes about 1/6 inch thick. Place the first layer of potatoes into the baking dish (usually the glass one is used) making the surface even. The first layer is made of about 2-3 potato slices. Now, add meet/onion mixture evenly over the potato layer. Finally add the layer of the remaining potatoes. Add the remaining 5 tbsp of oil, trying to cover all the potatoes (oil is not allowing potatoes to change the shape). Add the water. Preheat the oven to 250 C. Add the baking dish. Break the eggs, beat them until whites and yolks are well mixed and then add the milk and about 2 tsp of salt. Set a side. After 30 minutes of baking, poke into the potatoes to see if getting tender. If so, pour the egg and milk mixture over the top of the musaka. Put the musaka back into the oven for about 20 more minutes until the top gets brown. 16 16 Eighth Traditional Serbian Food Festival Кратка историја српске Цркве С рби су примили хришћанство у 7. веку, али тада још нису имали сопствену црквену организацију, потпадали су под јурисдикцију Охридске архиепископије. Свети Сава (Растко Немањић) је године рукоположен од стране цариградског патријарха Манојла I за архиепископа српских и приморских земаља, а српска црква добија аутокефалност и достојанство Архиепископија. Од тада се српски архиепископ бирао и посвећивао у српској земљи Оснивању архиепископије пећке огорчено се супротставио охридски архиепископ Димитрије Хоматијан, али без успеха. На територији данашње Македоније, хришћанство је познато још од времена апостола Павла. Од 4. до 6. века Охридска архиепископија је наизменично зависила од Рима и Цариграда. Крајем 9. и почетком 11. века је имала аутокефални статус, као архиепископија, а затим и као патријаршија, с центром у Охриду. Српска архиепископија постојала је све до године. Како је земља била без градских насеља, епархијска средишта су била у манастирима. Средиште архиепископије је било у манастиру Жича, а од године у Пећи архиепископија пећка. Стварањем Српског царства, Српска архиепископија је уздигнута на достојанство патријаршије године на црквеном сабору у Скопљу. Српски архиепископ Јоаникије II је уздигнут на ранг патријарха, а том свечаном чину су присуствовали бугарски патријарх, охридски архиепископ, српски епископи и светогорско монаштво. Средиште српског патријарха се налазило у Пећ и због тога је патријаршија названа Пећка патријаршија. Године 1350, Цариградска патријаршија је реаговала анатемом и одлучењем од Цркве српског цара, патријарха и народа. Услед тога је настао раскол који је трајао све до године. У унутрашњем црквеном развитку није било значајнијих промена. Патријарх је, попут цара, носио титулу патријарха Срба и Грка, а патријаршија је добила положај и привилегије по узору на Цариградску патријаршију. Основано је неколико нових епископија, а неколико епископија је уздигнуто на ранг митрополије. Са османским провалама настају тешка времена за Српску патријаршију. Многи средњовековни српски манастири су запустели или им се чак губи траг због турских разарања. Падом Србије под турску власт 1459, тадашња Пећка патријаршија је била укинута, а затим је обновљена године. Нестанком српске државе, српска црква постаје уз верски и национално-политички центар српског народа. Црквени поглавари постају и народне вође етнарси. Основна функција етнарха састојала се у прикупљању пореза намењених султану и централним органима царевине. У време патријарха Макарија Соколовића ( ) јурисдикција патријаршије покрива широку територију од Охрида до Будима. Црквени поглавари су подизали или подржавали многе буне против османлијских власти. Све ће то уродити укидањем српске патријаршије од стране султана Мустафе III године. Од године српска црква потпада под јурисдикцију Цариградске патријаршије, а већину епископа чинили су Грци Фанариоти. Велики број Срба је емигрирао на подручје Аустрије, а катедра архиепископа пећког је била премештена из Пећ у Сремске Карловце, а затим је године уздигнута на ранг патријаршије. Након успоставе српске аутономије 1832, у Београду је била проглашена аутономна митрополија под јурисдикцијом Цариградске патријаршије, а године је добила аутокефалност. У току балканских ратова ( ) у састав Београдске митрополије су ушле и епархије: Скопска, Велешко-дебарска и Призренска. Све до године не постоји јединствена

Најзначајнија од свих покрајинских цркава била је Карловачка митрополија са седиштем у Сремским Карловцима. Стварањем Краљевине Срба, Хрвата и Словенаца (1918) створени су услови и за црквено уједињење, односно обнову Пећке патријаршије. Од године средиште српске цркве је у Београду, а црква има достојанство патријаршије. Цариградска патријаршија је убрзо признала уједињење покрајинских српских цркава и стварање патријаршије посебним томосом. Српска православна црква има велики број храмова и манастира. Међу најпознатије и најзначајније спадају: Храм Светог Саве на Врачару (који спада међу највеће храмове у свијету), Саборна црква и Црква Светог Марка у Београду, манастири: Хиландар, Студеница, Жича, Грачаница, Дечани, Сопоћани, Пећка патријаршија, Девич, Милешева, Раваница, Љубостиња, Ћелије, Троноша, Острог, Цетињски манастир, Хопово, Крушедол, Враћевшница, Манасија, Ђурђеви Ступови, Лепавина, Крка, Крупа, Драговић, Бањска, Пива, Савина, Соко, Горњак, Витовница, Радовашница, Тавна, Моштаница, Добрун... Многи од ових манастира и цркава су настали у време Немањића (12. век) и имају иконе и фреске од изузетног значаја и вредности за целокупну светску културу, а нарочито за хришћанску културу и цивилизацију. Стога је УНЕСКО на листу светске културне баштине до сада уврстио манастире: Високи Дечани, Студеница и Сопоћани, док се у поступку налазе и манастири: Грачаница и Пећка патријаршија, као и црква Богородице Љевишке у Призрену. 18 18 Eighth Traditional Serbian Food Festival The Serbian Slava For the Orthodox, everything centres on Christ and His Holy Church. The "personal feast day" of the year is not the date of birth, but rather the feast of God's Saint after which one is named. This day is called the "name day and it is kept in one form or another throughout the Holy Orthodox Christian Church as a feast of deep spiritual meaning. In addition to the name day, the Serbs have a very special variation of this wonderful tradition. With them, the name day is not an individual event, but rather a family affair. The feast is called, in Serbian, Slava (Thanksgiving or Glory-giving) and is kept on the feast day of the patron Saint of the entire family. The special spiritual depth of the Slava can only be understood when one realizes that the family celebrates it on the feast day of the Saint which has been the special patron of that family for centuries - ever since the family became Christian. For generations, the patron Saint's day has been a special uniting force in the family, bringing it together to give glory and thanks to God the Creator and Saviour. On the day of the Slava, the home becomes "a church in miniature and the family becomes the congregation, reminding us that the Church is a family magnified". It is the tradition for all members of the family to gather, usually at the home of the eldest living member of the family, to commemorate the patron Saint, to glorify God and to pray for all members of the family, both the living and the reposed. This is perhaps the most beautiful aspect of the Slava: that it celebrates the unity of Christ's Church both on earth and in heaven. The Slava is a sort of spiritual family reunion. Those who are not present in fact are present in spirit; not only living family members who are unable to he present, but also the forefathers of the family who have fallen asleep in Christ, faithful to His Holy Church. The Slava is a purely religious celebration and this is epitomized by the slavsky kolach (slava cake) - a special version of the Paschal Kolach (Kulich in Russian) which is baked for the occasion and which bears the family's prosphora seal with the sign of the Cross and the anagram for "Jesus Christ is our victory". When the slavsky kolach is placed on the table, a bowl of kolyivo is placed next to it. Kolyivo (kutiya) is made of boiled wheat mixed with honey and spices. The wheat, of course, symbolizes the Resurrection of Christ and, by that, the hope of resurrection to all who dwell within His Holy Church. The kolyivo, consisting of wheat gathered up and set apart for the feast, also symbolizes the oneness of all true Orthodox Christians everywhere. Often, an icon of the family patron is placed on the table next to the kolach and the kolyivo. The local priest is called to come and bless the home and all those present, offering prayers for the health and well-being of those unable to be present and for the peaceful repose of the forefathers of the family. The highlight of the feast is the service of the Thanksgiving Prayer (molieben) which is served by the priest before the icon of the family patron saint.

19 Eighth Traditional Serbian Food Festival Brief history of Serbian Orthodox Church T he Serbian Orthodox Church is one of the autocephalous Orthodox Christian churches. It is the second oldest Slavic Orthodox Church in the world (after the Bulgarian Orthodox Church). The Serbian Orthodox Church is the traditional church in Serbia and Republika Srpska (entity of Bosnia and Herzegovina), with 84% and around 88% of the population being adherents, respectively. Additionally, majority of population in Montenegro are at least nominal adherents of the church. The Serbian Orthodox Church is organized into metropolises and eparchies located primarily in Serbia, Bosnia and Herzegovina, Montenegro and Croatia, but also all over the world since many Serbs have emigrated to foreign countries. The Serbian Orthodox Church is an autocephalous, or ecclesiastically independent, member of the Orthodox communion. The Patriarch of Serbia serves as first among equals in his church; the current patriarch is Irinej. The Church achieved autocephalous status in 1219 under the leadership of St. Sava, becoming independent Archeparchy of Žiča. Its status was elevated to that of a patriarchate in the 14th century, and was known afterwards as the Patriarchate of Peć. This patriarchate was abolished by the Ottoman Turks in the 18th century. The modern Serbian Orthodox Church was re-established in 1920 after the unification of the Patriarchate of Karlovci, the Metropolitanate of Belgrade and the Metropolitanate of Montenegro. The Serbian Orthodox Church is the custodian of many significant Christian relics, such as the right hand of John the Baptist, Saint George s hand and skull parts, Holy Cross segments, St. Paraskevi s finger and body of St. Basil of Ostrog, among others. Due to the Kosovo War, after 1999 numerous Serbian Orthodox holy sites in the province were left occupied only by clergy. Since the arrival of NATO troops in June 1999, 156 Serbian Orthodox churches and monasteries have been damaged or destroyed and several priests have been killed. During the few days of the 2004 unrest in Kosovo, 35 Serbian Orthodox churches and monasteries were damaged and some destroyed by Albanian mobs. Thousands of Serbs were forced to move from Kosovo due to the numerous attacks of Kosovo Albanians on Serbian churches and Serbs. Based on the official census results in countries which encompass territorial canonic jurisdiction of the Serbian Orthodox Church (basically former Yugoslavia), there are more than 8 million adherents of the church. Orthodoxy is the largest single religious faith in Serbia with 6,079,296 adherents (84.5% of the population belonging to it) according to the 2011 census, and in Montenegro with 460,383 (74%). It is the second largest faith in Bosnia and Herzegovina with 31.2% of adherents, and in Croatia with 4.4% of adherents. Figures for eparchies abroad (Western Europe, North America, and Australia) is unknown although some estimates can be reached based on the size of Serbian diaspora, which numbers around 2 million people.
