4 O BOSNI I HERCEGOVINI Bosna i Hercegovina posjeduje veliki potencijal u poljoprivredi i u sektoru prerade hrane zbog brojnih pogodnih uvjeta kao što su: preko 1,5 miliona hektara poljoprivrednog zemljišta, odlični klimatski uvjeti kao i plodno tlo, te visoko kvalitetna voda, većina tla u sebi ne sadržava hemijska gnojiva i nema praksu upotrebe pesticida. Osim toga, BiH ima dugu tradiciju u ovom sektoru, kao i iskusnu i vještu radnu snagu. Svi ovi uvjeti stvaraju sjajno okruženje za proizvodnju raznovrsnih sorti voća i povrća, s mogućnošću berbe prinosa i plodova i do tri puta godišnje. Proizvodi od voća i povrća imaju ogromni tržišni potencijal koji je identificiran u BiH. Procijenjeno je da trenutno postoji 14 miliona sadnica šljive, kruške, jabuke i drugog voća, koje se koristi za izvoz sirovine ili za proizvodnju soka i njegovog pakovanja. S obzirom na dati potencijal organske proizvodnje i opskrbe čistom vodom, lako je razumjeti zašto međunarodni distributeri hrane i pića konstantno ulažu u ovaj sektor. Pogodni klimatski uvjeti Na jugu zemlje preovladava blaga submediteranska klima, koju karakteriziraju duga i topla ljeta te blage zime. Više od 200 sunčanih dana i u prosjeku 1400 L/m² padavina godišnje omogućava uzgoj skoro svih poljoprivrednih kultura. Dovoljna količina vode, raspoložive površine za poljoprivrednu djelatnost i veliki broj sunčanih dana čini jug BiH idealnim mjestom za razvoj vinograda, voća i povrća. Postoje i odlični uvjeti za plasteničku proizvodnju. U centralnom dijelu BiH vlada planinsko-kontinentalna klima. Ovo su idealni uvjeti za proizvodnju krompira i kupusa kao i organsku proizvodnju. Na sjeveru zemlje je tipična kontinentalna klima. Zbog raznolike klime i topografije zemlje, postoje idealni uvjeti za proizvodnju žitarica, voća i povrća. 2. ABOUT BOSNIA AND HERZEGOVINA Bosnia and Herzegovina has great potentials in agriculture and food processing sector thanks to numerous favorable conditions such as: over 1.5 million hectares of agricultural land; excellent climate and fertile soil, as well as high quality water; most soils do not contain chemical fertilizers and there is no practice of using pesticides. In addition, BH has a long tradition in this sector, as well as experienced and skilled workforce. All these conditions create an excellent environment for the production of different varieties of fruits and vegetables, with the possibility of harvesting and gathering crop and fruit as many as three times a year. Huge market potential for fruit and vegetables products has been identified in BH. It is estimated that currently there are 14 million seedlings of plums, pears, apples and other fruits, which are exported as raw materials or used for juice production and its packaging. Considering the given potential for organic production and clean water supply, it is easy to understand the reasons why international food and beverage distributors are constantly investing in this sector. Favourable Climate A mild sub-mediterranean climate, characterized by long and warm summers and mild winters dominates the south of the country. Over 200 sunny days and an average 1400 L/m² of rainfall per year allows for growing almost all crops. Sufficient amounts of water, surface available for agricultural activities and a large number of sunny days a year make the southern part of BH an ideal place for the development of vineyards, fruit and vegetables. There are also excellent conditions for greenhouse production. Mountainous and continental climate dominates the central part of BH. This offers ideal conditions for the production of potatoes and cabbage, as well as organic production. On the north of the country there is a typical continental climate. Given the diverse climate and topography of the country, there are ideal conditions for the production of cereals, fruits and vegetables.

5 6 7 Organska hrana Bosna i Hercegovina ima velike površine ekološke, nezagađene i obradive zemlje, čistih izvora vode i čistog zraka, što predstavlja optimalne uvjete za intenzivnu organsku proizvodnju kako biljnih tako i životinjskih kultura. Dodatne prednosti su relativno niski troškovi radne snage i rijetka upotreba mineralnih gnojiva te hemikalija za zaštitu biljaka u BiH u zadnjih 10 godina. Svijest o zdravlju i tjelesnom izgledu dovela je do konstantnog rasta potražnje za tzv. laganim, zdravim, funkcionalnim i organskim prehrambenim proizvodima, što uz blizinu najvećih svjetskih tržišta čini ovaj ekonomski sektor izuzetno privlačnim za ulaganja. Istovremeno, trajno smanjenje broja površina za uzgoj organske hrane u Evropi čini BiH vodećim potencijalnim proizvođačem organske hrane na ovom kontinentu. Organska kontrola (OK) je certifikacijsko tijelo u BiH za certifikaciju proizvođača organske hrane koje je akreditirano od IFOAM-a godine. Mogućnosti za ulaganje - voće i povrće Prilike za investiranje u sektore proizvodnje voća i povrća u BiH odlikuju se mogućnošću ulaganja u primarni proizvodni kao i u prerađivački sektor. Mnoga od ovih postrojenja trebaju nove i savremene tehnologije. Ovo može biti šansa za potencijalne investitore koji mogu ostvariti investiciju u BiH u ovom sektoru kroz privatizaciju postojećeg postrojenja ili jednostavno investicijom u ledinu. Investicijom u BiH otvaraju se mogućnosti pristupa tržištima susjednih država s kojima BiH ima potpisan ugovor o slobodnoj bescarinskoj trgovini (CEFTA ugovor). Awareness about health and physical appearance has led to constant growth in demand for the so-called light, healthy, functional and organic food products, which, in addition to the vicinity of the world s largest markets, make this economic sector extremely attractive for investment. At the same time, permanent reduction of the number of areas for cultivating organic food in Europe makes BH a potentially leading producer of organic foods on this continent. Bosnia and Herzegovina is characterized by high-quality fruits and vegetables that can be used as a final product, fresh, but also as raw material for the final product. Years of experience in processing with highly trained personnel and experienced professionals in primary production create broad range of opportunities for potential investors. Growing fruit and vegetables has a long tradition in BH and is an important branch of the BH economy. Before the war BH has had a developed industry for processing of fruits and vegetables. Many of these facilities need new and modern technologies. This may be a chance for potential investors to invest in this sector in BH through privatization of existing facilities or simply an investment in the land. Investment in BH opens up access to the markets of neighboring countries with which BH has signed the Central European Free Trade Agreement (CEFTA). Historically, BH represented a

Zahvaljujući svojim prirodnim bogatstvima i različitim klimatskim tipovima unutar zemlje, neke od poljoprivrednih kultura mogu se uzgajati i više puta u toku iste kalendarske godine, što investitoru pruža mogućnost brže otplate investicije kao i kontinuiranog snabdijevanja tržišta sirovinom. Strani investitori imaju pravo na pogodnosti prilikom ulaganja u BiH kao što su: pogodan porezni sistem za strane ulagače, ulagački kapital ne podvrgava se oporezivanju (oslobađa se plaćanja carine i carinskih troškova na investiciju), slobodno zapošljavanje stranih državljana, u skladu s radničkim i imigracionim pravom u BiH, slobodan transfer prihoda u inostranstvo kao rezultat investicije u BiH, zaštita od nacionalizacije, eksproprijacije, oduzimanja imovine ili mjera koje imaju sličan efekt. crossroads of civilizations, religions and cultures. Thanks to its natural wealth and variety of climate types within the country, some of the agricultural crops can be grown several times during the same calendar year, which gives the investor a possibility to repay the investment faster and continuously supply the markets with raw materials. When investing in BH, foreign investors have the following benefits at their disposal: tax system favourable for foreign investors; investment capital is not subject to taxation (exempted from payment of the customs and the customs investment costs); free employment of foreign nationals, in line with the Labor and the Immigration Law of BH; free transfer of income abroad, as result of investment in BH; protection against nationalization, expropriation, confiscation of property or measures of similar effect.

7 PROIZVODNJA VOĆA U BOSNI I HERCEGOVINI U BiH postoje vrlo dobri uvjeti za gajenje drvenastog voća i jagodastih voćnih vrsta, što se uglavnom odnosi na povoljne zemljišne, klimatske, komunikacijske i demografske uvjete. Proizvodnja šljive se u predratnom periodu odvijala na prostorima Majevice, Podrinja, Potkozarja, Gradačca, Brčkog i u drugim krajevima gdje su bile zastupljene sljedeće sorte: Požegača, Stanley, Rutgešteter, Bilska rana, Kalifornijska plava, Aženka, ska nena, kao i niz domaćih sorti šljiva. U današnjem vremenu prisutan je trend zamjene starih voćnjaka gajenih po ekstenzivnom sistemu uzgoja s modernim sortama: Čačanska rodna, Čačanska najbolja, Čačanska ljepotica, Hanifa, Yo-yo, Anerbaher, Top 2000, Toptint i drugim. Kada je riječ o proizvodnji jabuke, sve više se podižu voćnjaci gdje su prisutne moderne evropske sorte: Gila, Breaburn, Fuji, Elstar, Jonagold, Granny Smith, Golden Delicious, Klou Painders, Arkšam, Pinoux, i druge, a još uvijek su prisutne Jonathan, Idared, Melrose i niz slatkih i kiselih sorti autohtonog sortimenta. Plantažni voćnjaci kruške podižu se po najsavremenijim agropomotehničkim zahtjevima gdje se primjenjuju savremeni uzgojni sistemi, moderna agropomotehnika, armatura i obavezni sistemi za navodnjavanje kap po kap i uz novi sortiment kruške Viljamovke, Pakams triumf, Šampionka i druge. Jagodasto voće doživljava ekspanziju posljednjih godina i ponovo se uvode u proizvodnju malina, kupina, jagoda, ribizla, a u novije vrijeme i borovnica. Ovo su vrlo intenzivne, radno angažirane, dohodovne i izvozno orijentirane voćne vrste koje na malim površinama zapošljavaju veliki broj radne snage na vlastitim imanjima. Razvojem prerađivačke industrije, podizanjem manjih i većih rashladnih kapaciteta stvaraju se uvjeti da BiH postane značajan proizvođač i izvoznik velikog broja kontinentalnih i mediteranskih voćnih vrsta. 3. FRUIT PRODUCTION IN BOSNIA AND HERZEGOVINA BH has very good conditions for growing woody fruit and soft fruit species, which are mainly related to favorable soil and climate, communication and demographic conditions. Plum production in the prewar period took place in the areas of Majevica Mt., Podrinje, Potkozarje, Gradačac, Brčko and other areas where the following varieties were represented: Požegača, Stanley, Rutgesteter, Bilska Rana, Californian Blue, Aženka, ska Nena, and a number of domestic varieties of plum. Currently there is a trend of replacing old orchards cultivated under extensive breeding system with modern varieties: Čačanska Rodna, Čačanska Najbolja, Čačanska Ljepotica, Hanifa, Yo-yo, Anerbaher, Top 2000, Toptint, and other. When it comes to apple production, there is an increase in orchards to cultivate modern European varieties: Gila, Breaburn, Fuji, Elstar, Jonagold, Granny Smith, Golden Delicious, Klou Painders, Arkšam, Pinoux, and other, while Jonathan, Idared, Melrose and a number of sweet and sour varieties of indigenous varieties are still present. Plantations of pear orchards are set up according to modern agro and pomotechnical requirements where modern cultivation systems, modern agro and pomo techniques, armatures and mandatory modern cultivation systems, modern agro and pomo techniques, armatures and mandatory drip irrigation systems are applied together with a new assortment of Williams, Packham s triumph, Champion and other pears. Berry fruits are experiencing expansion in recent years and raspberry, blackberry, strawberry, currant, and recently blueberries, are re-introduced in the production. These are very intense, work-engaging, income and export oriented fruit species which employ large workforce on their own farms, on small surfaces. With the development of manufacturing industry and building smaller and larger cooling capacities, the requirements for BH to become a major producer and exporter of a large number of continental and Mediterranean fruit species have been met.

8 12 Šljiva Bosna i Hercegovina ima dugu tradiciju u proizvodnji šljive u svježem ili prerađenom stanju. Na njenom teritoriju je u godini evidentirano stabala šljive, s ukupnim prinosom od cca tona, dok je prosječan prinos po stablu cca 13,4 kg. Najzastupljeniji je sljedeći sortiment šljive: Požegača, Stanley, Rutgešteter, Kalifornijska plava, Renkloda, Cimerova rana, Čačanska rodna, Čačanska ljepotica, Čačanska najbolja, Čačanska rana i niz domaćih (autohtonih) šljiva. U okviru oglednih površina naučnih i stručnih institucija u ispitivanju su novostvorene sorte, koje trebaju naći svoje mjesto na sortnoj listi Bosne i Hercegovine, a po tome i u proizvodnoj praksi. Najpoznatiji regioni proizvodnje šljive su: Podrinje, Majevica, Potkozarje, Gradačac, Gračanica, Brčko, srednja Bosna i drugi. Šljiva se plasira na domaćem i stranom tržištu u raznim oblicima: u svježem stanju, kao marmelada, pekmez, kompot, džem, zatim sušena, zamrznuta i u obliku alkoholnih pića. Plum Bosnia and Herzegovina has a long tradition in the production of plums, both fresh and processed. A number of 11,604,612 plum trees were recorded in its territory in 2009, with a total yield of approximately 155,767 tons, while the average yield per tree was about 13.4 kg. The following plum varieties are the most common: Požegača, Stanley, Rutgesteter, Californian Blue, Renkloda, Cimerova Rana, Čačanska Rodna, Čačanska Ljepotica, Čačanska Najbolja, Čačanska Rana, and a number of local (indigenous) plums. Newly developed varieties are being studied in the experimental areas of scientific and professional institutions, and these varieties should find their place on the Variety list of Bosnia and Herzegovina, and subsequently in the production practice as well. The most famous plum production regions include Podrinje, Majevica Mt., Potkozarje, Gradačac, Gračanica, Brčko, central Bosnia and other. Plum is sold on the domestic and international markets in various forms: fresh, as marmalade, jam, compote, as well as dried, frozen, and in the form of alcoholic beverages. 13

9 14 Jabuka Jabuka je druga najraširenija voćna kultura po zastupljenosti odmah iza šljive i ima važnu ulogu u ukupnoj voćarskoj proizvodnji u Bosni i Hercegovini. Proizvodnja u voćarstvu se modernizira, podižu se nove plantaže u kojima se sadi novi sortiment i primjenjuje savremena agrotehnika, zaštita i navodnjavanje. Jabuka se gaji širom Bosne i Hercegovine bez specifičnosti za određeni region. Broj rodnih stabala jabuke u godini bio je cca , uz ukupan prinos od tona, i prosječan prinos po stablu od 15,5 kg. Od sorti koje se gaje u Bosni i Hercegovini treba istaći: Zlatni i Crveni delišes, Melrose, Jonatan, Jonagold, Idared, Granny Smith, Gala, Fuji, Breaburn, Akane, Boskop, Elstar i dr. Od domaćih sorti spominjemo samo neke: Budimka, Kolačara, Staklara, Bukovija, Senabija, Đulabija, Šarenika, Šećerlama, Elifana itd. U Bosni i Hercegovini je očuvan značajan broj autohtonih sorti koje vode porijeklo iz vremena Turske carevine i vremena Austrougarske, što je značajan potencijal za pokretanje ozbiljne proizvodnje organskog voća, jer su ove sorte otpornije na bolesti i štetočine od modernih. Stanovništvo tradicionalno proizvodi domaći pekmez, slatko, sušenu jabuku, te spravlja mnoge druge proizvode na bazi domaće sirovine bilo slatkih ili kiselih jabuka. Na tržištu se plasira jabuka uglavnom u svježem stanju, nešto malo kao sušena, te mali procent kao koncentrat, sok, sirće i alkoholna pića. Apple Apple is the second most widespread fruit crop, right after plum, and plays an important role in the total fruit production in Bosnia and Herzegovina. Production of this fruit is being modernized, new plantations are raised and new varieties are planted, where modern agricultural practices, conservation and irrigation are being applied. Apples are grown throughout Bosnia and Herzegovina without the specifics related to a certain region. Number of yielding apple trees in 2009 was approximately 4,610,256, with an overall yield of 71,507 tons and the average yield per tree of 15.5 kg. Of the varieties grown in Bosnia and Herzegovina the following should be noted: Golden and Red Delicious, Melrose, Jonathan, Jonagold, Idared, Granny Smith, Gala, Fuji, Breaburn, Akane, Boskop, Elstar, etc. To mention but a few of the indigenous varieties: Budimka, Kolačara, Staklara, Bukovija, Senabija, Đulabija, Šarenika, Šećerlama, Elifana, etc. A significant number of indigenous varieties that originate from the times of the Ottoman Empire and Austro-Hungary are maintained in Bosnia and Herzegovina, and this represent a significant potential for starting a considerable production of organic fruit for these varieties are more resistant to pests and diseases than the modern ones. The population traditionally produces home-made jam, sweets, dried apples, and prepares many other products based on domestic raw materials - either sweet or sour apples. Mainly fresh apples, but also a smaller number of dried and a small percentage of apple concentrate, juice, vinegar and alcoholic beverages are placed on the market. 15

10 16 Kruška U odnosu na šljivu i jabuku kruška je nešto manje zastupljena, ali vrlo važna voćna vrsta u Bosni i Hercegovini. Plasira se na tržište u vidu svježih plodova. Proizvodnja kruške odvija se na istim prostorima gdje i jabuka, jer su prirodni uvjeti u kojima ove dvije kulture uspijevaju slični. Takođe je na terenu, kao i kod jabuke, prisutan veliki broj starih autohtonih sorti kruške koje narod koristi za razne vidove prerađevina. U godini u Bosni i Hercegovini bilo je rodnih stabala kruške, s ukupnim prinosom od tone, uz prosječan prinos po stablu od cca 12,9 kg. Na prostoru Bosne i Hercegovine egzistiraju sljedeći sortimenti krušaka: Viljamovka, Kaluđerka, Butira, Santa ia, sko zlato, Šampionka, General Leklerk, Kleržo, Pakams triumf i dr. Proizvodi od kruške uglavnom se plasiraju na domaće i strano tržište u vidu svježih plodova, prerađevina i čuvene rakije Viljamovke. Pear and apple are produced on the same surfaces given the similar natural conditions in which these two cultures are grown. Also, as with apple, a large number of old indigenous varieties of pears are present, and the population uses it for various types of products. In 2009, there were 1,928,605 pear trees in Bosnia and Herzegovina, with a total yield of 24,784 tons, and an average yield per tree of about 12.9 kg. The following varieties of pears are grown on the territory of Bosnia and Herzegovina: Williams, Kaluđerka, Butiro, Santa ia, sko Zlato, Champion, General Leclerc, Kleržo, Pakams triumph, etc. Pear products are mainly sold on domestic and foreign markets in the form of fresh and processed fruits, and the famous Williams pear brandy. 17

Od sorti koje se gaje, najzastupljenije su: Mostarski rani i kasni hrušt, Alica, Germersdorfska, Lionska, Hedelfingerska, Merkant, Skeena, Volovsko srce, Karina, Sanburst, Su, Van, Bing, Burlat i druge. Od podloga se koriste: Prunus avium, Gisela G5 i G6, Colt, Santa Lucia i dr. Proizvodnja trešnje u Bosni i Hercegovini u najvećoj mjeri je zastupljena na području Hercegovine. U ovom je području skoncentrirano cca 70% ukupne proizvodnje. Gaje se većinom stolne sorte koje sazrijevaju već početkom maja. Trešnja se na tržištu nudi kao stolna, marmelada, slatko, džem, zamrznuta, kao dodatak jogurtu, za sokove, likere i dr. Proizvodnja višnje se u kontinentalnom dijelu Bosne i Hercegovine uglavnom odnosi na gajenje sorte Oblačinska, koja je veoma tražena u izvozu. U Hercegovini se zbog drugačije klime uzgaja sorta aska koja služi za spravljanje poznatog pića askino, a u konditorskoj industriji se koristi za čokoladne bombone. Broj rodnih stabala višnje prema statističkim podacima za godinu bio je cca , ukupan prinos cca tone, uz prosječan prinos po stablu od cca 8,4 kg. Problemi koji opterećuju proizvodnju trešnje i višnje najizraženiji su u velikom učešću radne snage i skupoj berbi plodova. U posljednje vrijeme se u proizvodnju višnje uvodi mehanizirana berba, što znatno utječe na rentabilnost gajenja. 19

According to 2009 statistics, the number of yielding sour cherry trees was approximately 454,897, with the total yield of approximately 3,803 tons, and with an average yield per tree of about 8.4 kg. The problems plaguing the production of cherries are mostly in the high labor force participation and expensive harvest. In recent years, mechanized harvesting was introduced in production of sour cherry, which significantly affected the growing profitability. 21

13 22 Breskva i nektarina Ove dvije voćne vrste vezane su uglavnom za ljetni period dozrijevanja, pa se najveći dio proizvodnje plasira u svježem stanju na domaće tržište i za izvoz u Hrvatsku za vrijeme turističke sezone. Od sorti se uglavnom gaje Redhaven, Sprin Gold, San crest, Fajet, Sprin Lady, Fantasia i dr. Plodovi breskve i nektarine koriste se za džemove, kompote, marmeladu, slatko i dr. U kontinentalnom dijelu Bosne i Hercegovine se u pojedinim područjima spravljaju specijaliteti od vinogradarske breskve zvane Šeftelija. U godini u Bosni i Hercegovini bilo je rodnih stabala breskve, s ukupnim prinosom od tone, uz prosječan prinos po stablu od cca 15,3 kg. 23 Peach and Nectarine These two kinds of fruit are mostly linked to the summer period of maturation, so most of the products are sold fresh in the domestic market and exported to Croatia during the tourist season. 14 24 Jagoda Navedene jagodaste vrste sve više nalaze mjesto u proizvodnji voća na prostoru Bosne i Hercegovine, posebno iz razloga što se radi o kulturama koje su radno intenzivne, visoko dohodovne, izvozno orijentirane i što se proizvodnjom na vlastitom imanju angažira cijela porodica. Prema podacima iz godine, proizvodnja jagode odvijala se na ha, s ukupnim prinosom od t. Prosječan prinos po hektaru je skroman i iznosi oko 4,6 t na otvorenom polju, dok se u plasteničkoj proizvodnji postiže prinos od 35 do 40 t/ha. Sorte jagode koje se gaje u Bosni i Hercegovini su: Clery, molada, Senga Sengana, Pajero, Arosa, Madalena, Miss, Raurica, a i td. Jagoda se koristi za svježu potrošnju i za razne prerađevine, te za zamrzavanje. Pored industrijske prerade, jagoda se dosta koristi u domaćinstvima za spravljanje raznih domaćih proizvoda. Pored proizvodnje, u našim krajevima je raširena i berba divlje (šumske) jagode koja u izvozu postiže veoma visoke cijene uglavnom kao zamrznuta roba. Strawberry This type of berry is becoming increasingly common in the fruit production in Bosnia and Herzegovina, particularly because it is a labor intensive, high income, export-oriented fruit culture and a whole family can be engaged in its production on their own farm. 15 26 Malina i kupina Proizvodnja maline i kupine je u poslijeratnom periodu doživjela snažnu ekspanziju i veliki broj nezaposlenih je na svojim imanjima našao zaposlenje i dodatni izvor prihoda. Od sorti maline koje su na našim prostorima zastupljene najveći procent oko 90% čini sorta Willamette, oko 5-6% Meeker a ostalo su dvorode sorte Polana, Otom Blis i Heritage. Proizvodnja maline u godini odvijala se na površini od ha, s ukupnim prinosom od t. Malina i kupina se gotovo 95% plasiraju na svjetsko i domaće tržište u zamrznutom stanju. Za uspješnu realizaciju proizvodnje jagodastih voćnih vrsta neophodna je dobra organizacija proizvodnje, siguran otkup, stalni kupci i solidni prerađivački kapaciteti. Ovi će kapaciteti u kratkom periodu prihvatiti, obraditi, u hladnjačama čuvati i za izvoz plasirati jagodu, malinu i kupinu. 27 Raspberries and Blackberries Production of raspberries and blackberries saw strong expansion in the postwar period, and a large number of unemployed found jobs and an additional source of income in the production of these fruits on their farms. 16 28 Grožðe i vinova loza Vinogradarstvo i vinarstvo važna je privredna grana Bosne i Hercegovine. Trenutno se, prema procjenama stručnjaka, pod ovom kulturom nalazi ha. U uzgoju su vinske i stolne sorte vinove loze. U uzgoju vinskih sorti preovladava uzgoj autohtonih sorti i to Žilavke za proizvodnju bijelih vina, i Blatine za proizvodnju crvenih vina. Sporadično se, u manjoj mjeri, uzgajaju i druge sorte kao što su Chardonnay od bijelih, Frankovka, Zweigelt, Pinot crni, Plavac mali od crnih sorti. U proizvodnji stolnih sorti uzgajaju se: Kardinal, Demir kapija, Italija, Viktorija, Black magic, Matilda, Mishel Palieri, Muskat Hamburg, Kraljica vinograda, Beogradska rana, Sublima, Muskat Italia, Prima, Lival, Ora, Red Global i dr. Stolno grožđe namijenjeno je za potrošnju u svježem stanju. Prodaja se vrši na domaćem i inostranom tržištu. Preko 97% zasađenih površina nalazi se na području Hercegovine, dok je preostalih 3% sporadično zastupljeno po cijelom prostoru BiH. Kroz više od dvadeset stoljeća, površine pod vinovom lozom su rasle i opadale, što je zavisilo od migracija stanovništva, ratova, političkih uređenja, a u novije vrijeme od tržišnih efekata uzgoja vinove loze. Na području Hercegovine vinova loza ima veoma dugu tradiciju uzgoja, o čemu svjedoče ornamenti iz rimskog razdoblja (1. stoljeće), pisani zapisi iz 14. stoljeća, ornamenti na stećcima (15. stoljeće), pisani zapisi iz turskog i austro-ugarskog razdoblja, i ta je tradicija očuvana sve do današnjih dana. 29

Sales are made on the domestic and foreign markets. Over 97% of the planted area is located in Herzegovina, while the remaining 3% are sporadically placed throughout the rest of the territory of BH. For more than twenty centuries, areas under wine grapes have expanded and receded depending on migrations, wars, political organization, and more recently depending on the market effects of grape vine cultivation. In the area of Herzegovina, grape vine growing has a long tradition, evidence of which are ornaments from the Roman period (1st century), written records from the 14th century, ornaments on the stećci tombstones (15th century), and written records from the Ottoman and Austro-Hungarian period. This tradition has been preserved to date. 31

18 PROIZVODNJA POVRĆA U BOSNI I HERCEGOVINI Bosna i Hercegovina ima povoljne zemljišne i klimatske uvjete za uzgoj većine vrsta povrća. Povrće u Bosni i Hercegovini se u toku godini uzgajalo na hektara. Po proizvodnim površinama najzastupljenije povrće je krompir, grah, kupusnjače, paprika i crni luk, ali se dosta uzgajaju i salata, krastavac, mrkva, bijeli luk, dinja, lubenica, cvekla. U okviru povrtlarske proizvodnje, evidentan je najviši rast proizvodnje u zaštićenom prostoru (plastenici i staklenici). Ova proizvodnja je sve zastupljenija i u sjevernom dijelu Bosne i Hercegovine, kao i u okolini velikih potrošačkih centara, mada je donedavno bila u potpunosti smještena u regionu Hercegovine. 4. PRODUCTION OF VEGETABLES IN BOSNIA AND HERZEGOVINA Bosnia and Herzegovina has favorable soil and climatic conditions for growing most sorts of vegetables. 19 34 Krompir Bosna i Hercegovina ima veliki potencijal i dugu tradiciju uzgoja kvalitetnog merkantilnog krompira. Istovremeno u Bosni i Hercegovini postoje regioni s povoljnim karakteristikama za proizvodnju kvalitetnog sjemenskog krompira. Po proizvodnim karakteristikama izdvajaju se dva područja: Topliji južni dio (Hercegovina) i region Posavine gdje se uzgaja rani krompir. U tom području krompir se vadi već u maju. Drugo područje je hladniji brdsko-planinski dio (središnja Bosna) gdje se uzgajaju rane, srednje rane, i kasne sorte krompira za merkantilnu potrošnju, industrijsku preradu i sjemensku proizvodnju. Krompir je po površinama najzastupljenije povrće u Bosni i Hercegovini. Prema podacima za godinu, krompir je zasađen na hektara. Tradicionalno, područja gdje se dosta uzgaja krompir su: Fojnica, Glamoč, Bugojno, Travnik, Romanija, Semberija, južna Hercegovina, Lijevče polje. Prosječni prinos krompira u BiH je 11,3 t/ha, a prosječna potrošnja krompira po stanovniku je 67,5 kilograma godišnje. U području s mediteranskom klimom uzgajaju se salatni krastavci u zaštićenim prostorima i na otvorenom polju, te se proizvode za svježu upotrebu uglavnom za domaće tržište. U kontinentalnom području, pored salatnih krastavaca, uzgajaju se krastavci za kiseljenje (kornišoni), koji se proizvode za izvoz u svježem stanju kao i za preradu u Bosni i Hercegovini. Posljednjih godina Bosna i Hercegovina je postala izvoznik svježih kornišona u zemlje okruženja i izvoz se uglavnom obavlja preko domaćih otkupnih stanica. Proizvodnja krastavaca na prostoru Bosne i Hercegovine zauzima površinu od cca ha, s tendencijom širenja zbog povećane potražnje prvenstveno kornišona za kiseljenje. 41 Cucumber Cucumber is cultivated in Bosnia and Herzegovina as early spring and late autumn crops culture. 23 42 Salata Salata se uzgaja u svim dijelovima Bosne i Hercegovine, posebno u okolini velikih potrošačkih centara. Rana proizvodnja je u zaštićenom prostoru i otvorenom polju u Hercegovini. Proizvodi se i na okućnicama i vrtovima, a tokom jeseni se proizvodi u zaštićenom prostoru za zimsku potrošnju kada nema drugog svježeg povrća. Primjetan je trend povećanja proizvodnje salate na osnovu broja proizvedenih presadnica salate, koji je iz godine u godinu sve veći. Prosječni prinosi u zaštićenom prostoru su kg/ha, odnosno 2,5-3,5 kg/m2. Značajni regioni proizvodnje su južna Hercegovina i Posavina. 43 Lettuce Lettuce is grown in all parts of Bosnia and Herzegovina, particularly in the vicinity of large consumer centers. Uzgaja se na manjim površinama i okućnicama malih poljoprivrednih proizvođača, kao i regionima većih potrošačkih centara. Pored graha za zrno, dosta se uzgaja i grah za mahunu koji se dijelom koristi svjež, a dio se prerađuje zamrzavanjem i konzerviranjem. 25 46 Kupusnjace (kupus i kelj) Tradicionalno, velike površine pod kupusom (zahvaljujući optimalnim prirodnim uvjetima) na lokalitetu su Gornjeg Vakufa gdje je čak 10% oraničnih površina pod kupusom, u Bijeljini, Lijevče polju, Kiseljaku i južnoj Hercegovini. U Hercegovini se kupus skida s polja tokom cijele zime i proljeća. Kupus i kelj su se u Bosni i Hercegovini tokom godine proizvodili na hektara, s prosječnim prinosom od 13,87 t/ha. In Herzegovina, cabbage is harvested off the fields during the whole of winter and spring. Cabbage and kale were produced on 5,865 hectares in Bosnia and Herzegovina in 2009, with an average yield of tons / ha. Cabbages, and especially cabbage, are vegetables grown in all regions of Bosnia and Herzegovina, as early production, which requires an early spring sowing for fresh use during the summer and the subsequent planting of cabbage, which matures in the autumn and is used fresh or for pickling. Cabbage for pickling is a sought-after product that is quickly and easily sold on the domestic market, and a part of production is processed and exported.

26 48 Crni luk Crni luk je dosta uzgajano i zastupljeno povrće u tradiciji stanovništva Bosne i Hercegovine. U godini proizvodio se na ukupnoj površini od cca hektara, s približnim prinosom od 6,3 t/ha. Pored uzgoja za glavicu, u Bosni i Hercegovini se tradicionalno proizvodi i mladi luk koji se sije u jesen, a stiže za upotrebu u proljeće. Najveće proizvodne površine su u Hercegovini, okolini Travnika i u Posavini. 49 Onions Onion is commonly grown and represented sort of vegetable in the tradition of the population of Bosnia and Herzegovina. In 2009, it was produced on an area of approximately 5,004 hectares, with an approximate yield of 6.3 tons / ha. Apart from growing for onion heads, green onions, which are sown in autumn and mature for use in spring, are traditionally produced in Bosnia and Herzegovina. Major producing areas are in Herzegovina, Travnik surroundings and in Posavina.
