I N S I D E T H I S I S S U E : S A V E T H E D A T E 2 After 8 years of standing up to all the weather that North Carolina can dish out, he is starting to lose his protective top coat and developing more cracks. I have been told these cannot be fixed CC M E N S C O O K I N G C L U B 2 and he will deteriorate quickly without shelter. As to why we have a bear in Carolina Colours, here s a little history. In 2009 the City of New Bern was ramping up to celebrate its 300 th Anniversary. In honoring its founder, Baron de R C S P R E S E N T S 3 Graffenreid (originally from Switzerland), New Bern decided to give its many local artists a H A P P Y H O U R S T A R T S 3 new medium in the form of fiberglass bears. The bear is the symbol of New Bern and its sister city, Bern, Switzerland. M I L E S T O N E S 4 K A T H E R I N E S K O R N E R 5 O N T H E M O V E 6 Since Carolina Colours is considered within the City limits, I decided we, too, needed a bear. Volunteers stepped forward to form a committee of Tess Nosal, Mary Ellen Dorsey, Patty Gaulin And Thuy Phan. With local residents and builders generously donating dollars, the process started. We had 9 months to raise $2500 to acquire the bear statue, choose an artist and a design and get him installed in front of our Pavilion phew! Following strict guidelines drawn up by the Swiss Bear Committee, we chose Molly Knazek as our artist and met with her to share design ideas. We wanted a bear that depicted all the activities in Carolina Colours which included golf, tennis, book clubs and various card games. We had residents submit names for the bear. These names were presented to The Swiss Bear Committee and they chose the name Bearon de Colours. On December 9, 2009, Bearon was officially adopted by Carolina Colours and placed in its current location in front of the Pavilion where evidentially he is a big hit with wedding attendees and visitors doing the New Bern Bear Hunt game. Stop by and check him out in his new location when you get a chance. And a big thank you to the Building and Grounds guys for getting this job done.

2 COLOURFUL HAPPENINGS Page 2 CC ME N SCOO KING CLUB - ED KEARNEY The CC Men's Cooking Club, established last year by John Metzbower and Jim Hallenbeck, meets every other month at a member's home. The Host member prepares a four course meal for everyone to enjoy. The club was established for men who enjoy eating, cooking, talking food and socializing. Recently the club partnered with Habitat for Humanity and sponsored a dinner for 25 students from the University of Scranton, who spent their Spring break helping build a Habitat home for a New Bern family. We cooked an Italian dinner including baked ziti, sausage, meatballs, salad, bread and lots of desserts. The home cooked meal was truly appreciated by all of the students. On Saturday February 8th, members of the CC Men's Cooking Club and their wives attended a cooking class sponsored by Frank Crowley, the owner of the Spice Bouquet. The Spice Bouquet offers a regular series of cooking classes in their Kinston test kitchen. Guests get to select a salad, entree and dessert from an extensive menu of traditional recipes. Frank demonstrated each course and then supplemented the meal with appetizers prepared with Spice Bouquet products. His products are available locally at Mitchell's Hardware. SAVE THE DATE - MAY 18 - STEVE SHAFFER The Vietnam War is a tenpart, 18-hour documentary film series directed by Ken Burns & Lynn Novak that aired on PBS in September an epochal story never before told on film. IBM retiree, will present on America's involvement from : 10,000 Days, For those of you who missed some or all of this series and may have some questions or opinions on the film or the war, Tom Leiser, a Carolina Colours land-owner, U.S. Naval Academy graduate, and Tom had three tours in Vietnam: at the Carolina Colours Pavilion, 4:30 PM, Friday, May 18, Navigator, USS Destroyer in the Tonkin Gulf in Commander, 15 river boats in the Mekong Delta & Ca Mau in 1970 & Tourist, Saigon, Hue & Hanoi in Tom has lectured on the subject "Lessons Learned (or should have been learned) in Vietnam" at numerous high schools for 20 years and most recently at Camp Lejeune. Those of us who lived through this event, will now have an opportunity to examine the details with someone who experienced it.

Seven church choirs combine forces for a fund raising concert. This is the third time Faith Through Song has been hosted at Centenary United Methodist Church and the first two were amazing events! Tickets are free to the first 400 people. A free will offering will be taken with all proceeds donated to support Veterans Services at Religious Community Services! The whole job takes no more than an hour, based on previous years. Teenagers are especially welcome.

5 C O L O U R F U L H A P P E N I N G S Page 5 KATHERINE S KORNER - CHEF KATHERINE This recipe is a little fussy at times but completely worth it. This is a variation on a recipe from America s Test Kitchen. Angel food cake just screams spring! You can top it with fresh berries, chocolate, lemon curd,...or nothing. Whatever you like. Happy eating! Angel Food Cake 1 cup + 2 Tbls. cake flour 1/4 tsp. salt 1 3/4 cups white sugar 12 large egg whites, room temperature 1 1/2 tsp. cream of tartar 1 tsp. vanilla or almond extract (or both!) Serves Pre-heat your oven to 325 degrees. Process your sugar in the bowl of a food processor for a few minutes. Cover the top of processor with a towel to prevent a sugar cloud. When the sugar is ground up, take about half of it and set it aside in a bowl. Add the cake flour to the sugar that s left in the food processor.give that a whirl on high for a minute.this is just to combine it well and make a really uniform mixture. Place egg whites in the bowl of a stand mixer, or a large mixing bowl if you re using a hand mixer. Beat until foamy, add cream of tartar and salt. Continue to beat until very soft peaks form. Start adding the sugar a little at a time until medium peaks form. Stir in extract. When medium peaks are formed and sugar is incorporated, carefully fold in the sugar/flour mixture a few tablespoons at a time. Once all the flour mixture is folded in, spoon into an UN-GREASED tube pan with a removable bottom. Bake cake in the bottom half of a 325F oven for mins. Once cake is done, let cool about 2-3 minutes. Then flip over and allow to balance on the little legs. If your pan doesn t have these, turn upside down on top of a shot glass, bowl, flower pot... whatever you have to lift the cake off the counter and allow to cook all the way around. Cool your inverted angel food cake for 2-3 hours, until completely cooled. Once your cake has cooled, use a knife to go around the edge of your pan. Being careful not to dig into that lovely crust that s developed. Turn out your cake onto your serving plate and life the outside of your pan off the cake. Now you can use your knife to remove the bottom of the pan by placing the knife blade between the cake and the bottom of the pan. Now just wiggle it a little to remove it from the center. Now slice and enjoy with whatever topping you d like!

Toth Because of the importance of the topic, I m repeating the article I wrote in March of Spring is almost here! The temperatures, trees, and flowers are telling us so. We re starting to move around outside yey! After that long, soggy winter, we turn our thoughts to our favorite spring activities: golf, cycling, kayaking, tennis/pickleball, running, yard work, swimming, etc. Let s talk this month about an often-forgotten part of our workouts and fitness activities: the warm-up and cool down. I know, I know you don t have time you forget, etc., etc. This topic is especially relevant in the spring as we begin more vigorous activities. You don t want to get sidelined early in the season with an injury! The purpose of the warm-up is to get our joints, muscles, and heart ready for work. As we begin to slowly move our bodies, our hearts and breathing ramp up, our blood flows faster to our muscles and throughout our body, and the fluid in our joints warms up for easier movement. Some people like to stretch as their warm up, before they begin an activity. There is some controversy within the kinesiology community on this. Some say there is no harm, others say you should warm up aerobically first, before stretching. (A warm muscle is more receptive to stretching than a cold one.) The American College of Sports Medicine advocates warming up by doing the same activity you are going to be engaged in, at about 50% intensity. Ok so now you re done with your activity. Don t just leave the course, court, bike, gym, pool, or boat and get into your car and drive home. Take at least five minutes to stretch all the muscles you have used. Hold each stretch for a minimum of 15 seconds, 30 seconds would be better, but I know you re all busy! Warm up, be active, cool down and enjoy your activity for the whole season! Keep moving more!! My suggestion is to warm up doing the same movements, slowly, of the activity you are about to begin. If it s golf, for example, park further from the clubhouse and walk purposefully towards it, getting your heart rate up a little. Once at the tee, do slow squats in preparation for sighting that putt, picking up the ball, and getting in and out of the golf cart. Then, begin to slowly swing a club, in each direction, to warm up the arms, shoulders, spine, core, and neck. It s the same for any activity you are starting. If you are going for a run, start with a slow jog. For cycling, start with some easy spinning. Before a weight workout, warm up on the treadmill, elliptical, or stationary bike for five minutes. For tennis/pickleball, a few jogs around the court, then shuffling sideways each way, followed by the motion of slow swings and slow serves. In other words, don t go full-on into your activity; let your body get ready to move from rest to exercise LAT Training & Fitness
