1 Valorizing the Montenegrin Katuns through sustainable development of agriculture an tourism KATUN Introduction This is the forth and final KATUN project newsletter. The project is aimed to provide knowledge bases for sustainability of the mountain agriculture and to enhance its competitiveness, to preserve important part of the cultural heritage of rural areas and boost the agro-tourism at the katuns. The project in a nutshell was presented in the previous newsletters. Thus, this issue is focused on the key events and activities realized in from raising public awarness to sucessful work on creation of new dairy products with the companies. The public presentation of the project activities and results using different means was extremely important for the project visibility. More details about the project and its activities can be found at project website: Having in mind that project was officially completed in September this year, we would like to thank to all of you who participated and contributed to the project final results, looking forward for future cooperation. Summer at katuns - literary and painting/drawing competition for the schoolchildren - The Katun team organized the literary and painting/drawing competition for the schoolchildren in the elementary schools in Montenegro, theme: Summer at katuns in cooperation with the Ministry of Education of Montenegro in April More than 300 schoolchildren from the 4 th and 5 th grades from Podgorica, Budva, Bar, Nikšić, Šavnik and Pljevlja participated. The idea of competition was very well accepted by the both teachers and children and this opportunity was used to further discuss and promote the importance of putting stronger emphasis on traditional categories of Montenegrin social life, such as katuns, within the existing school program. The prizes were awarded in Žabljak, on June 3 rd The interest showed for the competition proved that the attractiveness of this topic still exists, but it also clearly demonstrated the differences in perception of the katuns life among the children from the northern and southern parts of country. Valorizing the Montenegrin Katuns through sustainable development of agriculture and tourism KATUN is a two year research project (April March 2017, extended till Sept. 2017), led by Biotechnical faculty University of Montenegro, financed by Ministry of Science of Montenegro through the INVO - HERIC grant No: KATUN electronic newsletter 4 December 2017.

3 Study visit to Slovenia The main aim of this study tour was to get better insight into the practice of agriculture/livestock sector in Slovenia, with focus on its mountain livestock production. The visit was organized from 2 nd to 7 th July in Kranj, Bohinj i Škofja Loka (including their surrounding mountain areas). The study program was prepared by the team of the KATUN project in cooperation with the Slovenian partners. The representatives of the partners companies, producers and members of Katun team were participated to this study tour. The main goal of this study visit was to familiarize the study group with different aspects of animal husbandry in Slovenia: the functioning of agricultural communities that share mountain pastures, milk production and traditional dairy production on the mountain, tourist offer, the role of cooperatives, ecological - organic agriculture, autochthonous livestock breeds, advisory extension service, higher education and scientific organisations university. Mountain Uskovnica Mountain Krstenica (traditional cheese making) During five days the group visited the Javornik Mountains, Uskovnica, Bohinj meat industry in Bohinjska Bistrica, the mountain - katun Zadnji Vogel (over 1500m above sea level), ecological farm Pr Tonejovc Polje, katun pri Ingotu, Krstenica mountain, Jezersko mountain, Agricultural cooperative Škofja Loka and stores with their main products, farm with about 30 cows and high milk production, renovated Šubic farm that deals with meat processing, Agriculture and Forestry Institute of Kranj, Biotechnical Faculty - Zootechnical Department. Katun pri Ingotu, open kitchen Škofja Loka, agricultural cooperative and their retail stores Farm, Škofja Loka Jezersko mountain, autochthonous breed CIKA cattle

4 New dairy products in HM Durmitor and INTERTEHNA Significant part of the KATUN project plan was work with commercial project partners HM Durmitor and Intretehna Berane on development of the new dairy products. Our team, leaded by Dr. Slavko Mirecki, and accomplished with international specialists for dairy production Prof. Dr Bogdan Perko from Ljubljana (Slovenia) and Prof. Anka Vranješ Popović, from Novi Sad (Serbia), were involved in this activity from the preparation to the execution. In both of the companies, the first experts task was to observe the existing technology, then to rearrange of cheese making equipment and to propose new cheese manufacturing. In company HM Durmitor the experts had worked on five new products - types of cheese: a) semi-hard cheese with spice herbs made from milk that is used for Skorup production; b) semi hard cheese from sheep milk; c) hard cheese from cow s milk; d) whey cheese called Urda; and e) so called cooked cheese. Finally, after several trials and attempts new type of cheese - semi hard cheese from sheep milk was created. In the partner company INTERTEHNA Berane, after several attempts and trials, consultation with the company staff, two new products were created: semi hard goat cheese with aromatic plants and soft low fat cheese. In order to better place to the market dairy products, intensive work has been done on creation of new design and preparing of new packaging for dairy products produced in both the project partners companies. The new packaging for: Polimski goat cheese, Soft goat cheese and Polimski cow cheese as well as for Durmitorski skorup and Prljo cheese was designed, printed and delivered to the companies.

5 Associations of producers or KUČI CHEESE and DURMITOR SKORUP The technology of producing traditional products, starting from obtaining raw materials, processing and storing products, has been carried out in a way that is not changed for centuries. Unique sensory and nutritional characteristics of traditional products are essentially conditioned by the natural factors of the area (climate, soil, botanical composition, cattle breeding, etc.). Hence, there is real need to protect their geographic origin in order to maintain and preserve tradition in this sector. To protect designation of origin (PDO) of Kuči cheese and Durmitor skorup was one of the project objectives. However, it requieres many steps. First is establishing of producers associations. Association of producers of Kuči cheese and Association of producers of Durmitor skorup were encouraged and fully supported by the KATUN team in establishing producers organizations - PO and then in registration of newly established PO as NGO. With the aim to prepare the elaborate and specification for traditional dairy products (Kuči cheese and Durmitor Skorup) meetings and workshops for education producers about quality parameters of traditional dairy products were organized. Some phases in Kučki cheese production In cooperative work with farmer /producers KATUN team prepare two elaborates and specifications for traditional dairy products: Kučki cheese and Durmitorski skorup. The elaborate, strictly in accordance to the national legislation, and the product specification (with product name, precise boundaries of the production territory, characteristics of the rearing and breeds of livestock, climate and botanical composition of the meadows and pastures, mean phases during production, volume of production, channel of marketing, correlation between products characteristics and conditions in production area, the main characteristics of the raw material than the key attributes of the product as such - chemical composition, sensorial traits, all steps in manufacture procedure etc) were prepared for KUČI CHEESE and DURMITOR SKORUP. Some phases in Durmitorski skorup production During the whole project duration the KATUN team had worked with family farms on improvement of traditional manufacture of dairy products primarily to remove critical gaps in manufacture and to improving hygiene. A specification of Kuci cheese and Durmitor skorup was prepared in order to protect the designation of origin. As a conclusion, the involvement of the private sector (the commercial companies and family farms and holdings) in the KATUN project was very important.

6 Raising public awarness and project presentations Presentation of project results to students of Biotechnical faculty May 31th, Presentations were attended by students of basic, specialist and postgraduate master's studies, professors of the Biotechnical Faculty, representatives of the processing industries. The aim of the presentation is to highlight the importance of Montenegrin katunas, the launch of the project, the role of scientific and educational institutions in preserving and sustainable use of natural resources. In the presentation were highlighted the most important project activities - made an overview of the results achieved so far in the project, a review of the production of dairy products and some results obtained during the research. Lecture for pupils,,school educational center Šavnik 15. Sept The goal of the lecture was to bring closer some aspects of traditional animal production in mountainous areas, to point out the importance of preserving forests and biodiversity, including the knowledge and importance of edible mushrooms. Special part of lecture was dedicated to paying attention on protection of forests, especially against forest fires and other environmental issues (The importance of preserving forest and biodiversity). The lectures were attended by children of the agricultural high school whose families are agricultural products in this area. The children listened with great interest about these the project and its results. Lecture Rural tourism in Montenegro, addressing most important results of the katun project, analysing main points: natural and cultural heritage resources, agro-products and tourism activities, as well as the challenges and potential for developing rural tourism in the region, were given by doc.dr. Sanja Pekovic at the College of tourism, Varna in Varna, Bulgaria, in April In this period, two mobility trainings were realized at partner institution Istituto per le tecnologie applicate ai beni culturali, Consiglio Nazionale delle Ricerche in Rome, for learning IT technologies in cultural heritage presentation. Dr Olga Pelcer-Vujačić realized training on topic GIS-Geographic informational systems for cultural heritage and Dr Tatjana Koprivica was working on Analysis of characteristic of traditional cultural landscape and vernacular architecture. The benefits of both of these trainings are going to be in enabling KATUN researchers to apply the new and innovative techniques and procedures, useful both in the interpretative process and in public presentation of Montenegrin mountains cultural heritage. It is also important to stress that even similar scientific category does not exist anywhere in Montenegro, neither as independent institution, nor as specific department within the University or any other research institution. 7 In cooperation with Montenegrin cinemateque, the KATUN team organized the presentation of the one of the oldest documentary movies with thematic of Durmitor, produced in The film follows the climb of Branimir and Marijana Gušić to Bobotov kuk. The cameraman was Karl Koranek. The movie was part of the first Yugoslavian ethnological exhibition where the Durmitor mountain heritage was presented as an authentic Yugoslav natural and cultural context. The screening was held in the hall of the University Cultural and Sports Center on April 11, This presentation was also presented at the Faculty of Philosophy in Ljubljana on July 4th. different public events were organized Organization of the exhibition Rural architecture of Montenegro and China, presenting the architecture of katuns. In cooperation with Montenegrin Ministry of culture, the Katun team taking part in the exhibition Rural architecture of Montenegro and China, presenting the architecture of katuns. The exhibition was held in the National Museum of Montenegro-Biljarda in Cetinje from May 29 th till June 29 th KATUN team provided the text and photographs with thematic of katuns life. It is important to emphasize that textual and graphic material provided from this project attracted the significant attention and space covering some 20% (12 billboards of 56) of all contents of Montenegrin part in exhibition.. The same exhibition was held in the Museum of Chinese Gardens and Landscape Architecture in Beijing in August from the exhibition opening, Biljarda, Cetinje Graphical designer Nikola Latković, MSc. in cooperation with KATUN team prepare the exhibition KATUN, on the Days of Science 9-16, October 2017, supported by Ministry of Science. The exhibition was posted in Art Gallery in Podgorica attracting a significant attention. The idea behind it was to have the artists presenting their works inspired by scientific projects ongoing within the Montenegrin universities.

8 The KATUN project final Steering Committee and MT meeting with FINAL KATUN CONFERENCE was organized at Žabljak September. The project partners representatives were gathered together. The WPs leaders presented the main achievements on the project during the whole project, and afterwards all project partners discuss the lessons learned during project realisation, as well as to discuss possibilities of extension of the project spirit and activities in different project possibilities like HORIZON 2020 or similar. With idea to provide an overview of different experiences and good practices in development of mountain areas, to improve understanding of the challenges in dynamic social and economic environment, the Panel discussion: THE KATUNS HOW TO MOVE FOREWARD, was organized. A part of KATUN team members with gests on Mt. Durmitor Sedlo, 28. September Introductory presentation: Culture, Agriculture and Innovation for Sustainable Development was given by prof. Dr Stefano Grego from World Agricultural Heritage Foundation (WAHF), Rome, Italy. After that the panellists: prof. dr Emil Erjavec, Biotechnical Faculty Ljubljana, prof. dr. Matej Ogrin, Faculty of Philosophy, University Ljubljana, dr Ivan Laković, Historical Institute of Montenegro and prof. dr Milan Marković, Biotechnical Faculty Podgorica shared their views on this topic. The KATUN project team members, the professionals involved in different aspects of development of mountain areas and cultural-historical heritage preservation (public stakeholders and agencies, policy makers at local and national level, taken part on panel discussion, which was in English language. from the project results presentation and massages, 28. September During the next day, the results of KATUN project were presented to wider audience. The purpose was to present the results achieved in realisation of KATUN project to the wider audience, to discuss the main lessons learned during the project realisation, to promote scientific results of interdisciplinary and multidisciplinary research, and to share views with different stakeholders on the future of Montenegrin katuns. The WP leaders presented project and main results achieved. The representatives of the partner companies and international research partners, as well as farmers involved in project gave their contribution. Mrs Iwona Borowick, WB representative, attended panel discussion, and took an active role during the next day activities with presentation: Contribution of the HERIC program on Montenegro's science and innovation.

Mirecki,, Podgorica Summer at katuns (children s works) The e book on Kuči mountains katuns, in English language is expected to be published, as well as leaflet: Experience the KATUNS, Montenegrin hidden treasure. Promotion of monography Kuči mountains Katun s The promotion of the monograph about the katuns of the Kuči Mountain took place at the Blue Hall of the University s of Montenegro Rectorate building on December 11th This manifestation was unusually well visited for Montenegrin terms, which additionally testified on good acceptance of the project activities among the wider Montenegrin audience. Prof. Milan Marković, PhD gave the introduction speech summarizing the project activities that led to the monograph publication. The Academician Alexandar Čilikov spoke about the importance of the results presented in monograph, their relevance for overall Montenegrin cultural and scientific identification. Professor Borko Vujičić, PhD addressed the significance of the book for the UoM as the publisher, where such publications attracts wider attention and reading audience. At the end, an editor of the monograph, Ivan Laković, thanked to all who contributed in making this monograph possible, dedicating his thoughts mostly to the local farmers whose continual efforts to bring the cattle to the summer pastures keep the katuns story alive. 10 The main results and outcomes for scientific exelence achieved during the KATUN project realisation are as follow: Wide and detailed survey on the katun resources completed (54 households at Kuči area and 42 at Durmitor region) and In-depth interviews of 13 market oriented producers were carried out (new project value) Analyses of soil composition and forage on the samples taken from both research areas ; and pasture floristic composition impact on milk quality on the samples of grass Characterisation of autochthonous sheep breeds (Bardoka, Ljaba and Jezero-Pivska) phenotypic (the body measures) and genetic characterisation on blood samples was completed; Original technology traditionally used in manufacture of Kuci cheese and Durmitor Skorup were observed in detail and recorded at households prerequisite for products specification; Quality and hygienic parameters of raw milk, Kuči cheese and Durmitor Skorup were determined in the labs - the results were essential for the specifications; Forest health conditions were evaluated, most valuable non-wood forest products were identified and new data collected about distribution of fungi and plant in Kuči mountains and Durmitor; Pinus heldreichii symbiotic fungi and pathogens in Kuči mountains were researched in three different directions: a) needle diseases - pathogens and other associated fungi, b) fungi associated with roots, in combination with above ground fungal fructification and c) forest soils affected with forest fires; their genetic characterization were done by different molecular methods; With the aim to provide a reliable inventory of materiel cultural heritage, more than 200 locations with katuns (approx main objects gladas) were observed and relevant data collected; In protection rural heritage, precise determination, mapping and photo documentation of location of 193 katuns in 18 areas at Kuči and 18 katuns in 8 areas in Durmitor region were accomplished; The GIS database with data from inventory of material cultural heritage has been developed (new additional result and achievement), database with 193 katuns at Kuči Mountains and aprox belonging objects have been listed; Key tourist resources (e.g. natural and cultural heritage), routes and related activities (e.g. recreation, gastro) were identified and described in a sense of level of attractiveness; The Guidelines with ten key measures for sustainable management of tourist destination were proposed; During the project, the KATUN researchers published or presented 25 coolaborative publications in total, 5 of them on SCI listed journals. A part of the obtained results also presented and published in different international conferences in Northern Ireland, Portugal, Cyprus, Greece, Croatia, France, Estonia and Montenegro, as well as on the KATUN conferences.

11 At the end, the KATUN project team would like to extend sincere thanks to all of you we had pleasure to collaborate with during the project realisation: to the producers in both project regions (Durmitor and Kuči) for their hospitality and acceptance to share information and their experiences; to the commercial partners (HM Durmitor, Doo Stara kuća and Doo Intertehna) for devotion to the project activities; to our international partners for the fruitful collaboration and great support; to the representatives of the different institutions and bodies on the municipal and national level for their help, contribution and sharing information; to the management and staff responsible for the administrative and financial issues in BTF, HIM and FTHM; last but not least to the Ministry of Science and the HERIC team for their understanding and support, also for high professionalism and punctuality in responding to our requests.
