4 nto the Noble Barony Bordermarch, UHE Santiago & HE Elisabeth, do send these warm greetings... T he month of April saw Bordermarch journey to the Stargate/Loch combined baronial event, where we witnessed the stepping down of our good friends Their Excellencies Stargate, Ihon and HE Isabeau. We also witnessed the Stargate Baronial Investiture of Master Robert Michael MacPharland and Baroness Simone Valery la Rousse. The day was filled with heavy and light fighters plying their martial skills for the honor of becoming the newest Champions for Stargate and Loch Soilleir. New Equestrian and Archery Champions were also chosen for the two baronies after a day of heavy competition. Lord Chrestien Brule was awarded a Letter of Marque by TRM Ulsted and Ebergardis during the event. The Letter of Marque grants Captain Chrestien Brule and the crew of the Phoenix TRM s blessings to protect Kingdom Ansteorra s coast from any who would dare trespass with intent to cause harm. And finally, since Bordermarch never travels to an event on an empty stomach, our pavilion was overflowing with food and drink for the many friends who would stop by to visit during the day. Bordermarch s esteemed emissaries of good will, Sir Simonn and Countess Tessa, traveled to Gleann Abhann to witness TRH s Morgana and Havordh s investiture as the newest King and Queen of Kingdom Gleann Abhann, VIVAT! By all accounts it was a wonderful investiture with good times had by all. Sir Simonn and Countess Tessa also travelled to the recent BOD meeting which took place in Houston recently. They reported back that all was well within the SCA, and that they had a chance to visit with many long time friends they d not seen in awhile. Our Baronial event is right around the corner, June 25th, and we should be having a pre-event meeting soon to discuss where we are and what things still need doing. Look for the announcement on the Bordermarch List. July 30th,2011 is the date set for Bordermarch to host the Ansteorra Heraldic and Scribal Symposium at the Beaumont Art League. Lord Biau-douz de la Mere is the Autocrat and will be announcing details and recruiting help to make this a Gotta-Be-There event. Lord Zane s tenure as Bordermarch s Knight Marshall is about to wrap up and we will be accepting applications for a new Knight Marshall. Since we are always looking for those who would like to try their hand at being an officer, let us know if you re interested and I ll bet we ll be able to set you up with a position that will fulfill all your dreams. HE Elisabeth and I are pleased to announce that House Wolfstar s Coastal Pack will be hosting our 2012, 12th Night event! It may seem a bit early to be making this announcement, but it is always better to plan ahead. 12th Night, 2012 will be held on January 7th at St. Stephen s Episcopal Church - Parish Hall, 4090 Delaware, Beaumont, Texas. Our thanks go to House Wolfstar for taking up the torch so early for next year s 12th night. Since May is filled with enough events to satiate those desperate Bordermarchers who just can t find enough things to do, let us once again unite and traverse Kingdom Ansteorra s distant lands together. We shall travel to these events as brothers and sisters, uncles and aunts, we shall call ourselves The Unstoppable Juggernauts!, or The Unstoppable Juggers!, or maybe The Unstoppable Nauts!. Of course protocol dictates we patronize the occasional American institution known as the Donut Shop, but other than that, we will be Unstoppable! 7 Gulf Wars XX th T his year our trip to Gulf Wars XX was totally different from all the years before where we ve arrived at the first possibility, camped and battled the weather storms, helped provide meals within the group, and all toted each others goods and armors and heavy shopping loads... It did not happen that way this year for Simonn & Tessa. This year in both our states of recovering health and mobility modes, Son Zane drove us in his vehicle and we arrived two days into the week to quarter ourselves at the motel by front Gate. Zane did build his tent to camp with Bordermarch family. We had a handicapped parking tag which allowed us daily to drive in from the motel, up close to the lane behind Merchant s Row; Tessa s walking was supported by a roll-about walker and Simonn s arm, while Simonn s walking was supported by Photos by HE Countess Mistress Tessa, HE Simonn, and Lord Zane. Viewpoint This Year of The Infirm Ones Tessa s arm and ever watchful eyes, with word gone out that he was not to put on armor (did not even pack it to war), not to be hit, especially in the sternum area! Nor move a tent pole, nor carry a heavy shopping load. Watching ravine battles or field battles whether rapier or chivalric where Zane or James or Sven were involved was always a thrill a minute! Sven gave his all, over and over. Zane again was part of the success of the flags in the ravine. James was in good form and having fun as well. But that caused an itch Simonn could not scratch (could not armor up to do battles himself). 8 ...Gulf Wars XX continued from the battles. Nothing over 5 lbs was purchased, and was thereafter loaded into the basket in the rollabout walker. The weather held out nicely; the motel respite was appreciated at the close of each day. The Bordermarch camp clan was fewer in number than other years, yet a jovial time was had when clustered there. Also, in Osprey s camp, most Bordermarchers gathered one evening for Kittyanna s famous supreme camp chicken meal. We learned about tanzine cooking and observed instruction in other skills. Periodically, a GW golf cart would be seen delivering this elderly infirm couple to a different destination, so ordered by Sir Asad in charge of parking and the main Merchantcrat, Mistress Seraphina. Thursday evening escorted to the Green Dragon Inn, S & T were ushered to sit in the large thrones reserved by name tags, for the evening concerts: Baldwin of Erebor, Heather Dale, and other live concerts. Friday morning, similar to other years, the hospitality at Ansteorran Rapier Rose Breakfast and Tourney was plentifully provided by Duke Gunthar and Countess Elizabeth Seale s efforts as well as the dream team of List Mistresses, Countess Rebecca, Lady Lessa, Mistress Nessa, and Baroness Lissa who again managed 102 rapier contestants to finish exactly on time! Duty of The Princess Guard involved Zane s attention and pleasure in the royal company of Her Highness Gwen & His Highness Lochland who both love to come to Bordermarch, and we can look for them at our June event. It was frustrating to not be able to armor up; to not labor to erect the camp; to not serve GW hours on gate, security, waterbearing, or other services; to not be feeding masses of people, to not tote and pack for others who had a need. Yet we very much appreciate being upright and mobile, on top of the ground, able to be present, and are very happy about Sven s court recognition as a fighter, of the service hours of Theresa, Peg, Erin, Malcolm, the Whitewolf s, and all Bordermarchers who contributed their labors! Next year: we both plan to return with restored exuberance! Ansteorran Heraldric & Scribal Symposium Contributed by Lord Biau-douz de la Mare*, Scribe of Bordermarch he Ansteorran Heraldric & TScribal Symposium is set to be held on July 30th, at the Beaumont Art League, hosted by Bordermarch s office of Scribe. This is a kingdom level event held annually at about the same time as the first weekend of Pennsic. Scribal officer, Lord Biau-douz de la Mera, is currently awaiting budget signatures, before submission and securing the date on the kingdom calendar. Any and all help is welcome. Just keep the Ansteorran Heraldric & Scribal Symposium event in your minds and in your calendar. There will be hat & bat demos for those who are willing during said event. Commitments from those interested in teaching and/or attending the event are greatly needed. Some big names in calligraphy and illumination, have already been secured, as well as heraldric categories to lend hand in teaching. This has all the markings of a truly well-crafted workshop for those in and out of the SCA wishing to explore medieval artistry. Volunteers are most welcome. Remember, many hands make light work. Secondly, there are tentative plans to hold an event planning meeting for the Symposium on Friday, May 20th, at the Art Studio, 6 p.m. Scribal officer will personally contact the primary persons for this meeting to invite them to help plan. Thirdly, how does the populace feel about me shifting the Scribal Guiild times to Fridays, 6:30 p.m.- 9:30 p.m. at the Art Studio? Please send feedback.

9 Barony of Steppes de Bard Twins Turn BAM into a Hardcover Book Contributed by Christianna inghean Fearghus, MOC of the Barony of Steppes lena and Anabella de Bard, mka: Amelia and EMiranda Wilson, are my, Lady Christianna inghean Fearghus, and Lord Duncan de Bard s twin daughters. They are 11 and in the 5th grade. Recently they had the opportunity to write a book, at their elementary school in Flower Mound, Texas (Dallas-Fort Worth area). The book was then published and bound by the school publishing company and read to their class. Their deadline was just after Thanksgiving and they chose to write a non-fiction book about their camping trip at 2010 BAM. This is supposed to be a fun project that helps the kids develop writing skills and it is not for a grade; it is optional. These books are put together entirely by PTA volunteers, so it takes a while to get them back. The family just Ferocious Creation Contributed by Lord Germanicus de Atlan, Central Region Youth Combat Marshal, Kingdom Ansteorra hese two ladies are not only Tferocious Youth Combat fighters, but VERY creative! For a school project, they created a hardcover coffee table book called BAM, An Adventure and subtitled A Kid s Perspective of Bordermarch Autumn Melees. This book is absolutely amazing. Elena and Annabella de Bard received the book back from the school last week. I helped a little with the introductory explanation of the SCA, but the bulk of the book was written by the girls, also photos taken on the trip were added. The book talks about their youth authorization class taught by Lord Germanicus and the melee and bridge battles they fought in their first real battles. It also tells of other fun things they did with the children at BAM, such as storytelling, visiting the soup kitchen, attending Court, seeing the Equestrian events, and hanging out by the campfire. And there are a lot of descriptions of food they ate. It is a side of BAM that most people don t see. A few extra copies of the book were given to Lord Germanicus, Baron Duncan and Baroness Genvieve. Our hopes are to use the BAM Book to show people with children that there are a lot of fun activities for kids, as well as for adults, in the SCA. Photo by Lord Germanicus presented a copy to me, Lord Germanicus, as well as another to Baron Duncan of the Steppes at Glaslyns Defender of the Flame 2011, and we were floored! These young girls have done an outstanding job! I hope that the rest of our Kingdom and the SCA experiences their book and the de Bard twins get the recognition they wholeheartedly deserve!

10 For All the Saints Saint Elisabeth of Hungary Contributed by Lady Ellen the Quiet of Bordermarch t. Elisabeth of Hungary was born July 7, 1207, to King SAndrew II of Hungary and Gertrude of Merania. At the age of four, she was taken to the court of Thuringia in Germany; and at fourteen, married Louis of Thuringia. Louis was twenty-one, and the marriage had been arranged to strengthen the ties between Hungary and Germany. At court, Elisabeth was trained in the ways of the world and not in the ways of Christ. However, this training was lost on Elisabeth as she took every opportunity to follow her heart s desire to devote her life to God. Alban Butler writes that even when the chapel doors were locked, Elisabeth would kneel at the threshold to say her prayers; and that surrounded, even besieged, by worldly pleasures, she had no use for them. To Elisabeth, there was no other use for money but to give it to the poor. The legend of St. Elisabeth tells that one day she was leaving the castle to give bread to the poor. Her husband stopped her and wanted to know what was hidden in the bulging apron of her dress. Elisabeth showed her husband the contents of her apron. Louis found, instead of bread, a pile of glorious roses. The only loaf unchanged was the one hidden behind Elisabeth s back. Louis sister Agnes was close to the same age as Elisabeth, so they were educated together. When the girls made their first appearance in church, they were dressed alike and wore coronets set with jewels. Upon entering the church, Elisabeth took off her coronet and refused to put it back upon her head. When Louis s mother, Sophia, demanded an answer, Elisabeth told her she could not wear a crown of jewels while Christ wore a crown of thorns. Elisabeth s saintly behavior did not sit well with her future inlaws. That very day, Sophia and Agnes plotted to send Elisabeth to a convent or engage her to a lesser nobleman. The attempts failed, and Elisabeth married Louis. Louis actually took great pride in Elisabeth and her good deeds. He loved her very much and so did his people. Saints continued on next page...

11 ...Saints continued Louis joined with Emperor Frederic Barbarossa in one of the Crusades. While en route to Jerusalem, Louis died of fever in the kingdom of Naples. He and his beloved Elisabeth had been married seven years and had three children. Upon Louis s death, the powers that be tossed Elisabeth and her children out of the castle with nothing. Butler writes that, Envy, jealousy, and rancor, all broke loose at once against the virtuous landgravine, which during her husband s life, for the great love and respect which he bore her, had been raked up and covered over as fire under the ashes. Elisabeth was left to fend for herself and her small children. In time, Louis allies became Elisabeth s champions, and Elisabeth and her children were returned to their rightful place in the castle and the country. She continued her devotion to Christ and her service to the poor. At twenty-four, Elisabeth fell ill and died on November 19, Pope Gregory IX canonized Elisabeth on Whit-Sunday in St. Elisabeth has a long list of patronages. Among them are bakers, beggars, charities, falsely accused people, people ridiculed for their piety, tramps and widows. She is often represented as a woman wearing a crown and tending to beggars and as a woman wearing a crown carrying a load of roses in her apron or mantle. Her name means worshipper of God. 12 Tales of Two Events Stargate/Loch Soilleir Championships and Stargate s Investiture Contributed by HE Santiago of Green Mountain Keep Hey! ord Chrestien Brule, Lnow that you have a bone-eh-fied Letter of Mark signed by TRM, why don t you write us a few words about that deer in the headlight look you were sporting in that Facebook video of the Letter of Mark being signed? And let us know just what that Letter of Mark cost you. I want to thank Lord Sasha for the wonderful bit of entertainment at last weekend s Stargate/Loch event. It seems he was walking right in front of God and Country when he stepped on Lady Angelica s dress and started wind milling. I now realize why nobody rushes to help me whenever I start to take a tumble; the hilarity of it is paralyzing! I didn t think Lord Sasha would ever get his legs back under his torso, but he kept mumbling his mantra, Party, Thrust, Pie fermo, Party, Thrust, Passo Grando, like only a true cadet of Don Armand s would. When he did finally right himself he quickly scanned the area to see if anyone saw his mishap; he was safe, there were no witnesses. I want to thank Lord Calvin for holding on to those three sticks while HE Dona Leah and HE Elisabeth set up the baronial pavilion. Lady Jillian and company provided some mighty tasty eats for the whole group, and everything was much appreciated. Since the lyst was already completely surrounded with pavilions when we arrived, we really appreciate the Phoenix Company and Wolfstar spending the night or arriving early enough to secured a spot for HE Elisabeth, me, and the rest of Bordermarch, along the lyst field. By the way, Bordermarch s Phoenix Company s new pavilion is looking mighty spiffy with all their banners and flags. There are some artist within that group who we must exploit! Our thanks go out to Lady Claire la Combe and friends for providing much needed food and drink for everyone. Olaf s new hair-do inspired me to be ughhhh... a better person? Lord Biau brought some of our Scribal Guild s gear to loan out during the event, it was much appreciated. I was concerned when he asked me to go over to the scribes who were using the gear and tell them that they couldn t keep the stuff! A few folks were accidently culled from our caravan to the event. We don t know what happened, but they ended up about 50 miles behind us. Lady Padraigin arrived at our departure point in a such timely manner so as to be able to depart with the rest of the crew. She even had time to show off to HE Elisabeth her new articulating monkey pendant. It was extremely hot during the day, but thankfully the wind was gusting just enough to blow the cool dust and grass particles high enough to be able to capture some with your eyes and mouth! I m wondering if some of those who attended the event with us could write their own description of something that they either witnessed or pilfered during the day. We had a great time at the event, and we had fun visiting with all our Bordermarchers and friends, let s do it again! 13 Stargate/Loch Soilleir continued dress (which I know he is gonna really love you sharing with everyone LOL) When I got the call saying that Sasha didn t wanna go by himself, I looked over at Sanishio and said do you wanna ride. With this stupid look on his face, he declared that the pain he was in was too much to ride that far, but for me to go and have fun. So, I accepted the proposal to ride, NOT knowing there were stipulations till the night before it was time to leave!! The thing was that Lord Sasha would be here at 7:30, and if I was not ready to walk out the door I was being left, also to go to the privy before we left because he was not stopping. Needless to say, I was not happy!!! Much to his and everyone else s surprise I was ready and waiting!!! We get to the site, after a long hot ride, and get things unpacked. As soon as I finished getting dressed, I walked out of the tent and informed Sasha the reason I don t wear the dress I chose anymore is because people tend to trip on the train or are always standing on it! So, your Excellency he had fair warning of the dangers of the dress!!! Once I informed him of this, I ran to find the captain and other members of my crew. I was glad to see they were easily noticeable with the new banner m Lady Magdelena de Paz painted for the group. Once there, I was informed that the fashion in which I was wearing the Company of Pheonix s favor was not the way it was to be worn. So, my humble Captain snatches a black belt out of his case and wraps it around my waist. I then decided he needed to know the rules of fashion, that the dress I was wearing was of the Italian reniassance style and belts just don t work. I was told to like it or... #?$@. All was okay once I informed him that I had brought food, and lots of it! Then it was all not okay when I told him it was not hot links. I didn t see Wolf Star or the rest of the crew belly aching about it being light foods. WOOOHHHOOOO! We were told by the Captain that it was time for us to get our letter of mark. BUT WAIT, I noticed one of our newest crew members was not wearing the personal favor I had given to him at 12th night. So, I ask m Lord Madoric where is the favor I gave to you?. With a holy cow look on his face, he decides to tell me it s gone. Come to find out he had let a girl coax him into letting her wear it!!! Once she had tried it on, as he put it, he lost track of where it went. This would be the worst weekend of his life now!!! LOL!!! In that moment of questioning, I also noticed something else was missing, THE CREWS FAVOR!!! So, I let my big mouth fly, and told the Captain that something else was missing. When the Captain questioned Madoric of the whereabouts of the crews favor, Madoric replied that it was in the tent. Come to find out it was at home!!! DOUBLE TROUBLE!!! Madoric s rest of the weekend was spent trying to find someone who would have sympathy towards him since I was not letting it go, but he soon found out there was no one to feel sorry for him. We had so much fun at the small Haffla that was held. Oh and a BIG WOOOHOOO to m Lady Magdalena for getting out and dancing for the first time at a Haffla. It took some coaxing from the crew and our cousins Wolf Star, but she got out and did it. I was like a momma bird happy for her baby bird s first flight! All in all, after that it was a very good weekend and a very relaxing one. Other than hearing the word SNAKE at 6 a.m. and jumping from my bed. Captain and anyone in yelling distance now know that Lady Angelica is deathly afraid of snakes! Everyone found it very funny, my reaction, because I did all this from a dead sleep! Come to find out the snake was seen by the Captain as he was walking down some path. I didn t care, it was seen and that was my que to pack it up and head out! It was a great getting to see old faces and meet new ones. I definitely say it needs to happen again!! So, that s my story and I am sticking to it!!

14 On the Road to Gleann Ahbann, Next Kingdom Over to the East Coronation Contributed by Countess Mistress Tessa of the Gardens, MP Founding Baroness Bordermarch Blackfox Award: Best Article - A.S. 43 he weekend of April 9, subjects of the Tfive-year old Kingdom of Gleann Ahbann (Louisiana, Mississippi, Arkansas, Tennessee) gathered for Spring Coronation. This particular incoming Queen Morganna is amazingly special to Bordermarch friends, thus did Sir Simonn & Mistress Tessa venture from these homelands across the River Divide (The Sabine) into Gleann Ahbann to witness and celebrate as invited guests. The journey was about a 5-hour ride through beautiful countryside along the River Divide. Among the first faces we saw was Her Ladyship Ellene Kirchenknopf / Lisa Baumer whose original home was Bordermarch, now a resident of Gleann Ahbann. Ellene is well known both here and there for her talents as a calligrapher, potter, and researcher. She was to be in the kitchen for most of this coronation event, lending her hands and knowledge to the feast steward (see further notes below).* In a green glen shaded by densely forested ancient pine trees seemingly undisturbed during hundreds of years, the retiring Crown were Radu II and Broinnfinn II whom many Celtic knotwork arch into feast. Bordermarchers will remember. When the incoming king, Prince Halverd III (having already been king 3 times prior) approached the court to claim his crown, as Halverd IV, the descending King Radu II announced he and his Queen Broinnfinn II were planning to take over the entire Knowne Worlde to become Emperor of All. Pondering this their weary exhausted retinue -who have already served their twice across many miles and months- feverishly -r-io-t-e-d- and did encircle to slay both the royals whose bodies were thereafter carted away. Thereafter, Princess Morganna was announced to enter the court to receive her crown as Queen at the hand of King Halverd IV while all in attendance did bow low to the ground. Her Now Majesty Morganna along with His Majesty Again, Halverd IV, have been guests at BAM who have highly encouraged their populace to come to Bordermarch. His Majesty Halverd IV is wed to the legendary Duchess MaryGrace. The two of Their Graces in conference with Their Excellencies Morganna & Ifor chose months ago (as Duchess MaryGrace s modern job places particular demands upon her) for Duke Halverd to carry Her Excellency Morganna s favor into crown tourney. His Excellency Ifor, himself in recovering health, thinking the idea agreeable, did therefore long to see his wife become queen and sit the throne aside His Grace Halverd. Their Excellencies Ifor and Morganna are the retired Baron & Baroness of Axemoore (New Orleans area) who were followed as B & B by * His Excellency Charles du Burbon (who started his SCA career in Bordermarch) and Her Excellency Martha. Readers here will see how the ties strengthen: History of Bordermarch is woven with threads of Axemoore, beloved Axemoore neighbors; * young Charles grown into Laurel High Table Photos by TE Tessa and Sir Simonn peerage and now a landed baron; Princess now Queen Morganna, an adored neighbor friend of Bordermarch! For added interest, * Master Charles was stewarding this coronation feast. Princess Morganna had insisted months back that Sir Simonn & Mistress Tessa, both in recovering health, both get well attend her coronation. Dissimilar to camping in Ansteorra, this forested haven has multi-bunk cabins scattered throughout with nearby communal rest rooms and a commons kitchen with adjoining hall. 15 Gleann Abhann Coronation continued stove & refrigerator, bath, screened patio, two comfy bedrooms, linens, pots, pans, and table settings. To our delight, Mistress Seraphina, known as the Gulf War Merchantcrat and Pennsic cook for Ansteorra, with her treasured spouse, Master Cynric, bard of reknown and Lion of Ansteorra, shared a vacation cabin with us, arranged by Her Highness Morganna to be right next door to herself and HE Ifor. Her Majesty Morganna, as Her Highness, had insisted that Mistress Seraphina and Mistress Tessa come from Ansteorra to be guests at Her Queen s Luncheon. So great is the hospitality of Gleann Ahbann that the ladies at luncheon were all treated like royalty. Mistress Seraphina had been presented a scroll as Citizen of Gleann Ahbann due to her labors of friendship including Pennsic care. The scroll was in Greek, created by Mistress Jane Beaumont, who will be personally known by any Bordermarcher who has ever sat front gate/ Troll at Gulf Wars. Other guests at the luncheon were former queens of GA, many of whom have attended BAMs. HM Morganna s staff spread a table beyond compare, both in beauty to the eye and in pleasing to the palate. Inside a regal tent tucked under shaded forest heights, decorated tables and chairs were set with white calla lilies and purple accents which awed one s senses even before the elegant repast was served: bacon-wrapped dates, cucumber sandwiches, pasta salad, grapes with cheese and breads, ginger tea cakes, marzipan, dipped strawberries, scones, teas, lemonade, and champagne a wonder land luncheon prepared perfectly by Lady Alicia, Lady Gen, and other devotees. Afternoon in the shade, His Majesty Halverd IV did oversee a champion s tourney where his warriors did show their prowess. Watching from aside, seeing Simonn & Tessa or Cynric & Seraphina, many warriors and their support folk did venture into discussions of their love for Ansteorra and their hopes to attend another BAM. Great are the bonds made through friendly battles! A gentleman discussed his hopes for a forthcoming BAM that he might possibly sponsor a torchlight tourney at the BorderKeep and have a celebration there. Throughout the afternoon, other business meetings did progress, including an invitation for Simonn & Tessa to chat with rapier fighters about several possibilities. There was also an afternoon court in a yet different shaded location where breezes moved ancient mossladen branches as though to fan the court. Their Majesties of GA did notice and reward many of their subjects, to the Queen Muirgen joy and approval of the crowd whose great applause, laughter, and shouting did truly cause the branches above us to sway. Particular greetings are sent to Bordermarch from Their Majesties Halverd IV and Morganna; from Her Grace MaryGrace, now moving into AnTir; Master Charles, whose new job will now take him away to AnTir as well; Master Erik & Mistress Bridgett, whom you would know from GW s Early Period Life, and their daughter Lady Rose; Friar Lord Gilbert and Lady Marcilla, former Yule Mis-Rule Court in Bordermarch; Baroness Lady Barbara, their Kingdom Historian, who has frequently visited Bordermarch over decades; and Lady Ellene Kirchenknopf who promises to be here to teach at Lord Bieau s forthcoming scribal day. A giant Celtic knotwork adornment created an arch gateway into the feast arena. The grand evening feast was presented by Master Charles and his apprentices underneath lit rows of tented tables where visitors found the tables to be already spread with cloths. Purple blooming garden pots framed the approach to high table which was laden with high candles and kingdom colors of black and red linens. Ample and delicious were the breads, onion soup, plentiful flowing water or tea, leeks, potato pancakes, sausages, quiche, salat, and a variety of fruit desserts. As musicians provided music, His Majesty Halverd was moved to get up and dance with the little children who were prancing to keep time with the music. Ahhh, the life of a king! Aside torch lamps, bards did deliver inspiring tales; servers were cheerful throughout the evening as dusk attempted unsuccessfully to darken the celebratory mood. Vivat, the hospitality of our neighbor kingdom Gleann Ahbann, and, as goes the cry in their kingdom: A L L H A I L!!

BoD quarterly meetings circulate locations across the continent. Some 50+ populace were in the audience to witness as the high table of Directors conducted their business and invited commentary from the audience. Their Majesties Ansteorra, as well as Their Majesties Outlands were present and other Ansteorrans who are either currently serving as landed Barons and Baroness or other officers, or have done so in the past. Some ancient friends, including Duke John Bearkiller were well met. For a lunch break away, Don Tivar Moondragon and his dear wife Mistress Aethlyean, and Mistress Nerak la Tisserande joined Tessa and Simonn at a Chinese eatery. When afternoon business resumed, Sir Modius presented a large screen vision of many of the findings of the SCA Census, which data is now being gathered to be published. Sir Modius, having served his term on the BoD is now ready to retire, announced this with jovial accoutrements provided by members of the BoD and his particular gift to each one of the Directors. Below is some research I have come across about Manchet Bread from The Good Huswifes Handmaide Published The term Manchet seem to mean two flours mixed together, and I take it to mean white and wheat. The making of manchets after my Ladie Graies use. Take two peckes of fine flower, which must be twice boulted, if you will have your manchet verie faire: Then lay it in a place where ye doe use to lay your dowe for your bread, and make a litle hole in it, and put in that water as much leaven as a crab, or a pretie big apple, and as much white salt as will into an Egshell, and all to breake your leaven in the water, and put into your flower halfe a pinte of good Ale yeast, and so stir this liquor among a litle of your flower, so that ye must make it but thin at the first meeting, and then cover it with flowre, and if it be in the winter, ye must keepe it verie warm, and in summer it shall not need so much heate, for in the Winter it will not rise without warmeth. Thus let it lie two howers and a halfe: then at the second opening take more liquor as ye thinke will serve to wet al the flower. Then put in a pinte and a halfe of good yest, and so all to breake it in short peeces, after yee have well laboured it, till it come to a smoothe paste, and be well ware at the second opening that yee put not in too much liquor sodenlie, for then it wil run, and if ye take a litle it will be stiffe, and after the second working it must lie a good quarter of an hower, and keep it warme: then take it up to the moulding board, and with as much speede as is possible to be made, moulde it up, and set it into the Oven, of one pecke of flower ye make ten caste of Manchets faire and good. Modern terms: The making of manchets after my Lady Gray s use. Then put in a pint and a half of good yeast, and so all to break it in short pieces, after you have well labored [worked] it, until it come to a smooth paste, and be well aware at the second opening that you put not in too much liquor suddenly, for then it will run, and if ye take a little it will be stiffe, and after the second working it must lie a good quarter of an hour, and keep it warm: then take it up to the molding board, and with as much speed as is possible to be made, mold it up, and set it into the oven, of one peck of flour you make ten cast of Manchets fair and good. Recipe Ingredients: 500g plain WHITE bread flour unbleached stoneground (plus extra for dusting etc.) 200g WHOLEMEAL bread flour stoneground if possible and sieved 1tsp of sea salt (ground) 450ml of warm water (bottled still mineral water heated) Raising Agent: use either 30g of fresh yeast & 1 tsp of natural brown sugar / or / 15g of active dried yeast & 1 tsp natural brown sugar

18 Yeast: If Fresh Yeast: You need twice as much fresh yeast as you would dried yeast, and you should use it in half the time after activating it. Make in exactly the same way as below for Dry Yeast: Active Dried Yeast: In a small bowl or jug pour in half the warm water, (250ml) dissolve in the sugar, and sprinkle in the yeast and stir it thoroughly with a plastic or wooden spoon. Leave to sit for 7 to 10 minutes in a warm place to allow the yeast to start to work. Check occasionally to see if the yeast is rising and frothing. After about 4 5 minutes, it will have a creamy and slightly frothy appearance on top. Do not allow the yeast (barm) to sit longer than 12 minutes before using, leaving it too long will exhaust the yeast before it is in the dough. When ready, stir and pour in all the remaining warm water, 250ml. Making The Manchet Bread Into a large mixing bowl sieve in both types of flours, using a medium meshed seive Sprinkle in the ground sea salt then with your fingers make sure you mix the ground sea salt in with the flour, so that it does not interfere with the yeast when added. Make a well in the center of the flour. When the yeast is fully activated (8 to 10 minutes) add the yeast water ( barm ) into the well made in the flour and spoon the flour and water together into a dough. Add some more plain white bread flour (if needed) until you form a firm dough which you can knead, it should still be on the sticky side, but not so that it is difficult to remove from the bowl. You are looking for it to be springy. Take the dough out of the bowl and onto a flat floured work surface. Start kneading the dough for about 7 minutes. Kneading dough is a push-pull technique to break the gluten and starches down in the flour. Let is rise. After the dough has almost doubled in size, knock it back, this means to punch it once to remove most of the air out of it. Remove the dough, and gently knead it again between your hands for two minutes. Shape the dough into a ball and place on a greased non-stick baking tray, or a traditional bread baking stone. Important: Leave to rise once more for a further 35 to 45 minutes (this is called the second rise). Preheat the oven to 230 C After the second rise use a sharp knife to make a shallow circular cut all around at the bottom of the dough and cut a cross into the top. Place the oven tray or baking stone into the pre-heated oven and bake for 10 minutes, then reduce the temperature to 200 C and cook for a further 40min, or until your bread looks nicely browned and sounds hollow when tapped. Remove the Manchet Bread and leave to cool for an hour. Eat within 36 hours and keep the bread covered or in a bread tin. What does all this mean? Here s a simplified standard method: 1/2 cup sourdough starter 1 1/2 cups water 3 1/2 cups white flour 1/2 cup wheat flour 1/2 teaspoon salt Mix the starter and water together. Combine the flours and mix in. Let rise in a warm dry spot for 12 to 18 hrs. Sprinkle lightly over with salt. Let rise an hour or two, until doubled. Punch down dough and knead further until springy. Shape two loaves and let rise for 1 more hour. Bake at 400 degrees for 40minutes. Another Bread Redaction I have adjusted: Really Simple & Really Quick Sift together: 2 c Flour; [have extra ½ cup or more Flour on hand] 2 tsp Baking Powder 1 dsh Salt Pour in: 8 oz mead Stir well together. Test dough for flavor to determine if you rather add ¼ Sugar. Knead briefly, and if it is too soggy or sticky, add extra Flour til clump holds together. Form into an orb loaf which will somewhat flatten when placed on a buttered pie pan. Bake at 375 degrees F. for 30 to 35 minutes or until golden on top. The loaf will be dense, not fluffy. When you thump the loaf and hear a hollow reply, it s ready. Remove from pan to cooling rack several minutes before slicing. Endorsement: Simonn eats it!
