3 IT SOLUTION FOR NON-PREPACKED FOOD ACCORDING TO EU REGULATION 1169/2011 In order to cope with the demand of flexibility, LSG Sky Chefs has developed an IT solution to implement the requirements of the EU Regulation 1169/2011 for non-prepacked food in the day-today business. All ingredients and products that are used for cooking a meal are introduced into the LSG Sky Chefs IT system. Advantages of the LSG Sky Chefs IT system: The correct and complete food information is provided with the meal, even when the prepared meal may differ from the scheduled meal. Ad-hoc changes in the menu can be considered. Food information of one-time catering can be provided.

4 ISSUE OF ALLERGEN INFORMATION SHEET FOR NON-PREPACKED FOOD The food is delivered to the LSG Sky Chefs facility. The chef uses the delivered food to prepare the meal. A s a last step, the allergen information sheet is delivered with the trolleys into the aircraft for crew handover. T he supervisor validates and if needed corrects the food ingredients in the IT system and prints the allergen information sheet out of the IT system.

However, we use cereals containing gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, nuts (tree nuts), celery, mustard, sesame seeds, sulphur dioxide and sulphites, lupine and mollusks in our facility. Therefore, we cannot guarantee that - despite of thorough cleansing after each work step - unavoidable cross-contamination may not occur and that the food does not contain traces of allergens FRA ZC/F4 CCOA A13 Version ID: : FRA ZC/F4 CCOA :07 F or each allergen code description six languages are chosen dependent on the country of departure.

6 ON-BOARD OF AIRCRAFT Each airline has its own approach to inform the passenger/consumer that food information is available from the cabin crew. This information may appear on a sign at the entry of the aircraft, on the entertainment system, on a napkin or on the menu card. The approach also depends on the national implementation of the EU Regulation 1169/2011.

7 CHALLENGES WITH THE EU REGULATION 1169/2011 Challenges in daily operations: Development of menus and changes of meals happen frequently and in short-term: menu presentation, supplier selection, documentation of recipes, entry of the food information into the LSG Sky Chefs IT system and preparation of instructions for the kitchens usually have a time frame of between 6 and 10 weeks. Short-term volume changes in passenger figures make planning difficult and require high flexibility.
