1 Pinellas County 4-H Clover Quarterly News May 1, 2018 Editorial Ms. Alyssa asked me just the other day to develop an essay for our quarterly 4-H newsletter. As a result, I will use this space as an opportunity to discuss with you, our 4-H community, issues and ideas I feel are timely and important to us. This issue s topic is LEADERSHIP. Leadership is a powerful word, a word that evokes images of people that you remember as great. During election periods many speak of leadership as a very important quality. It is something we print on posters to inspire, we look to others to provide, and preach to our youth as something they should be or to learn. Some say you are either born a leader or not. I disagree, I believe leadership resides in a place deep inside each of us and is forged from experiences of life, accomplishments, failures, triumphs and collapses. Ultimately, leadership grows by how we perceive each event and learn from it. Each time we succeed or fail it makes an impact, making us stronger and more confident to rise to an occasion. Leadership is one of the 4-H core concepts we strive to develop in our youth. We do this through our elected club officers, events, and activities. We ask each club to elect club officers to help 4-H youth develop these experiences under the mentorship of their adult club leaders. We ask our adult club leaders to guide and mentor youth through and to carefully craft experiences that create learning opportunities for them. I said, learning opportunities, purposely because not everything we do will be successful, pleasant, or super fun! Keeping order in a club meeting, giving the monthly report, or developing a presentation can be stressful for youth. Public speaking paralyzes many adults with anxiety! This is why our monthly club business meetings are so important. Will youth struggle with public speaking and be nervous speaking in front their peers? YES! Will they forget to do their monthly treasurer report or fail to keep order during a club meeting? YES! When these things happen, this is the opportunity for club leaders, parents and other caring adults to provide mentorship, guidance and support. To give their children the opportunity to grow their skills and confidence. It is an opportunity for youth to take a chance, to be bold and to become a leader. Making mistakes and learning from them is how people learn and it is ok. I hope our leaders of tomorrow are here in our 4-H clubs today having setbacks and making mistakes! I hope they are learning that leadership is as much about your success as your failures and that nobody is perfect. Great leaders know these things through random life experiences. Let us use these times, these experiences in our 4- H clubs to create positive experiences so that our youth can build their confidence and skills as leaders. Let s Make the Best Better Together! 2 1 st Annual Pinellas County 4-H Cooking Contest Winners & Recipes by Leah Fox 4-H Leader Brooker Creek Explorers Club In January we sponsored our first Cooking Contest and Arts & Crafts Competition. 20 members participated, and we had 32 entries between both the cooking submissions and arts and craft submissions. The BEST IN SHOW entries were: 1. Jovian Barrs Healthy Snack entry 3. In a high power blender, or food processor, blend or pulse almonds until they are finely chopped. 4. Pour the almonds into a medium bowl. 5. Next, process or blend your dried apricots with the coconut oil and salt until you have a smooth paste. 6. Pour the apricot paste into the bowl with the almonds and add your toasted coconut. Mix together until everything is combined. 7. Line an 8x8 inch container or baking dish with parchment paper and scoop the apricot almond mixture into the dish. Press it firmly into the dish using another piece of parchment paper. 8. Cover and freeze the bars for 2-3 hours, then lift the parchment paper out to cut into bars using a sharp knife. 9. Return to the freezer, or keep them cold in the fridge. 2. Bella Theofanous Florida Strawberries entry Mrs. Lara s Bars Ingredients: 3/4 cup coconut flakes 2 cups raw almonds 1 1/2 cups dried apricots 2 tablespoons coconut oil 1/2 teaspoon salt Directions: 1. Preheat your oven to 350 degrees. 2. Spread your coconut on a baking sheet and bake for 3-5 minutes. Watch closely, when most of the coconut is lightly browned, remove it from the oven and cool. Florida Strawberry Cobbler Ingredients 3 cups fresh strawberries, diced ½-3/4 cup sugar 1 cup all-purpose flour 2 teaspoons baking powder ½ teaspoon salt ½ cup sugar 1 cup milk ½ teaspoon vanilla extract 1 stick butter, melted (Continued next page)

Preheat oven to In a medium bowl, add strawberries and ¾ cup sugar. 3. Stir to coat strawberries in sugar and set aside. 4. In a large bowl whisk together flour, baking powder, salt and sugar. 5. Add in milk, vanilla extract and melted butter. 6. Stir until combined. A few lumps are ok. 7. Grease a 9-inch casserole dish. 8. Pour batter evenly into dish. 9. Spoon strawberries evenly on top of batter. Do NOT stir. 10. Baked for minutes or until golden. 11. Serve warm or cold. 3. Isaac Fernando Cookies entry Instructions: 1. Preheat oven to 350 F and line a baking sheet with parchment. 2. In a stand mixer or food processor, combine the almond flour, arrowroot powder, and sea salt. 3. Add the maple syrup and mix until combined. 4. Drop the palm shortening into the mixing bowl in 1 tablespoon increments for easier incorporation. Pulse a few times until a crumbly ball forms. 5. Place the ball of dough in between two pieces of parchment paper. With a rolling pin, roll into a 1/2 inch thick disk. Cut into small bricks or cut using biscuit cutters. 6. Place the cut cookies onto the baking sheet lined with parchment. Bake for minutes until golden brown. 7. Once baked, place on a cooling rack to cool. Once fully cooled, store in air-tight container or bag in the fridge Death Star Shortbread Cookies Ingredients: 2 1/4 cups almond flour 1/4 cup arrowroot powder 1/4 teaspoon sea salt 1/4 cup maple syrup 1/2 cup palm shortening
4 HORSE-N-AROUND at the MANE EVENT by Ivy Robinson 4-H Club Secretary BROOKER CREEK EXPLORERS 4-H ers SHINE AT THE FLORIDA STATE FAIR by Isabella Theofanous 4-H club member On March 11, 2018, Horse-N-Around at the Mane Event hosted a horse show at Helen Howarth Park. 150 people came to watch. Open Schooling Hunter Under Saddle was the most popular class, with 21 participants. Seven High Point trophies in total were awarded. We had 30 sponsors for our show. Some people commented that it was smooth and well run, and the food was great. This was a successful show, and we will do it again in the future. We are looking to put on a series of shows next year. Three members of the Brooker Creek Explorers 4-H Club brought home awards in the Family Living Competitions at the Florida State Fair. Paul Fox received Best in Show in the Hobby Craft Legos division. Anne Fox placed in both Hobby Crafts receiving 3 rd place for her Legos and an Honorable Mention in Sewing. Isabella Theofanous received 2 nd place in Fiber Arts Crochet category for her handmade phone case. CONGRATULATIONS to these three 4-H ers for their hard work! NEW CLUB HIGHLIGHT: HAPPY HELPERS 4-H COOKING CLUB Submitted by 4-H Happy Helpers Club members Our club is Happy Helpers 4-H cooking club. Our club includes Jillian, Skylar, Adriana, Simone, Emma and Malerie. We have made very good recipes. We all have done a community service project. We made candy canes for the sick and elderly. We have had some guest chefs. We have had two guest chefs, Mr. H who made Tostones and Mrs. Jean who made pierogis. We have learned the 4-H Pledge. We learned our knife cutting skills and measuring, microwaving and handling food. Mrs. Alyssa, our 4-H agent, visited us when we made smoothies! We have learned a lot and are having fun!
