I still have a cupboard full of outdated, worn cookware, some Teflon coated, some aluminum & some coated in some other unknown substance. Yes I also have those pans where the "nonstick" surface has literally come off. It never occurred to me that maybe some of that "non-stick" stuff is coming off in the food I am cooking - yuck! The more I read and learn the more worried I become about all the things I am doing that is actually harming my family without even realizing it. They tell you that you should heat your pans for one or two minutes at medium heat to heat your pans up. After that you are told to turn them down because they retain heat for a longer period of time - thus you are actually saving energy by using these because you can cook at a lower heat. I found with my type of stove - I have solid cast iron burners - it took a little longer than the one or two minutes for the pan to heat up to a good temperature but once it reached a decent temperature I was able to turn it down and maintain that temperature. After that, the pan cooked like any normal pan. I didn't

Page 7 of 13 the pan left from frying the bacon. So I put the pan to the big test and just left it sitting after lunch.

When I did the dishes after dinner I was totally impressed. The pan wiped completely clean - no scrubbing required!

I have used the pan many times since and have had the same results every time.

That's another huge plus in my book. All in all I am very impressed with the pan.

The egg hardened to the pan as I suspected it would - I wanted to see how well it cleaned up. When I did the dishes after dinner I was totally impressed. The pan wiped completely clean - no scrubbing required! With any of my other pans I would have needed some type of an abrasive to get that stuff off. I have used the pan many times since and have had the same results every time. The company says you can use any cleaner you would normally use on your pan like SOS pads, Comet etc. and you cannot scratch the surface. That's another huge plus in my book. All in all I am very impressed with the pan. It did take me a slight adjustment period to learn to cook with it properly; like preheating and cooking at a lower temperature but now I'm cooking just like it were one of my every day pans. I use it whenever I possibly can and have thrown out my worn out, old fry pan. The Xtrema cookware & bakeware is now on my list of must-haves.
