Home of one of our largest bailliages, Seattle is a beautiful city with majestic scenery, natural wonders, amazing art, wonderful restaurants, and near to terrific wine producers. Adjacent to the Pacific Ocean and Puget Sound, the city is growing and has a high energy level evidenced by new technology companies. It will amaze you and you may fall in love with the Pacific Northwest. The planning team led by Conseiller Gastronomique des Etats-Unis Mon Roldan, Bailli Provincial Pacific Northwest Bertrand de Boutray, Bailli Robert Cugini, Officier Michele Heidt and their amazing local team have created a wide array of activities that will allow each of those that attend to experience something unique and special. We will be at the 5-star Fairmont Olympic Hotel, in the heart of the city, and within walking distance or a short ride to the top sites. The Fairmont s management, at every level, has been actively involved so our members will enjoy a memorable experience. Although our first official event will be the Thursday evening Welcome Reception at the Fairmont, the dine-around opportunities begin on Wednesday evening and some activities start on Thursday morning. Carefully selected dining opportunities are available for members on both Welcome Message, continued to next page 3

4 WELCOME MESSAGE of those evenings and each have space limitations so you will need to make choices. Friday s activities allow you to experience the area with visits to Boeing, the Museum of Flight, and other locales. And for those not attending meetings, there are additional activities on Saturday. On Friday evening we will honor and thank our Baillis for all that they do to make the Chaîne the vibrant organization that it is and plan the almost 1,000 events held each year in the Bailliage des Etats-Unis. The Bailli Appreciation Dinner will be in Seattle s spectacular Museum of Flight. Be dazzled by the planes flying above you at dinner ranging from the Wright Brothers to a Blackbird Spy plane. Saturday evening we will welcome new members, promote others and celebrate and honor the accomplishments of some at the Fairmont. Our sponsor Champagne Collet will greet us when we enter the reception of this black-tie gala evening, to be followed by an exquisite dinner created by Executive Chef Paul Shewchuk, and you can dance the night away. This will cap the weekend as we make new friends, rekindle those created at other Chaîne events, and set us free for our flights home. These four days will be a perfect opportunity to meet and catch up with old and new Chaîne friends, enjoying the pleasures of the table that are so unique to the values and traditions of the Chaîne des Rôtisseurs. 6 Come Fly with Us! SEATTLE: THE HOST CITY Seattle is a seaport city on the west coast of the United States. It is the seat of King County, Washington. With an estimated 713,700 residents as of 2017, Seattle is the largest city in both the State of Washington and the Pacific Northwest region of North America. According to U.S. Census data released in 2018, the Seattle metro area s population stands at 3.87 million, and ranks as the 15th-largest city in the nation. In July 2013, it was the fastest-growing major city in the United States and remained in the Top 5 in May 2016 with an annual growth rate of 3.1%. The city is situated on an isthmus between Puget Sound (an inlet of the Pacific Ocean) and Lake Washington, about 100 miles south of the Canada United States border. A major gateway for trade with Asia, Seattle is the fourth-largest port in North America in terms of container handling as of The local Boeing company established Seattle as a center for aircraft manufacturing. The Seattle area developed into a technology center beginning in the 1980s with companies like Microsoft becoming established in the region. Internet retailer Amazon was founded in Seattle in 1994, and Alaska Airlines was founded in SeaTac, Washington, serving Seattle's international airport, Seattle Tacoma International Airport. The stream of new software, biotechnology, and internet companies led to an economic revival, which increased the city's population by almost 50,000 between 1990 and 2000; during the same period, the Seattle metropolitan area grew by almost 500,000. Seattle is also home to the largest Bailliage in the Pacific Northwest region. Its members look forward to welcoming Chaîne members from around the world. 6

7 SEATTLE: THE BOOTS ON THE GROUND Seattle is renowned for its foodie scene, with fabulous restaurants, aromatic coffee bars and its landmark culinary destination, the Pike Place Market. The city is, of course, the birthplace of Starbucks and coffee lovers are spoiled for choice, with a coffee shop/roaster most everywhere you turn. The cranes on nearly every block are outward signs of what we know in our bones: Seattle is in constant growth mode. And legions of restaurants are opening to accommodate the hunger. Truth is, in a city this exceptional foodwise, the bigger story is the big picture. Trends rise, trends fall, chefs come and go, but it s the iconic dining experiences that define how fine it can be to take fork to mouth in this town. The volunteers who hold seats on our committees generally remain unknown to the membership, but their accomplishments are truly noteworthy, as each committee is charged with originating and/or vetting ideas and/or policies that will help make the Chaîne a more efficient, effective and enjoyable society. The committees analyze the options, benefits and burdens for each issue before providing its recommendation to the Board of Directors. The Board considers these recommendations in charting the course for the Chaîne. The generous donation of time provided to the Chaîne from our all-volunteer army of leaders, supporters, experts and advisors is greatly appreciated and warmly acknowledged. 10 THE VENUE: THE FAIRMONT OLYMPIC HOTEL The Fairmont Olympic Hotel, originally The Olympic Hotel, is a historic hotel in downtown Seattle, built on the site of the University of Washington s first campus. The hotel opened in 1924, and in 1979, it was added to the National Register of Historic Places. This grand hotel is just a few blocks from the Seattle Art Museum, Pacific Place shops, the Pike Place Market, waterfront and Belltown. The hotel was renovated in 2016 and should provide a wonderful respite from the bustling city surrounding it. 10
