a message from management Greetings Residents and Tenants! It's that time of year again... Pleasant fall weather is behind us and we are heading into colder winter months... This means a new year is approaching fast with big plans for Shanghai Centre! For Shanghai Centre, New Year's resolutions are the same every year: keep improving our facilities and services in order to ensure the best possible environment for our guests. We just spruced up the exterior of the building with a fresh coat of paint, and all apartment corridors and elevator lobbies have been updated to match the renovated apartment units. The hotel entrance will also receive a total overhaul creating a new arrival experience from the moment you enter the motor court (a sneak peek is on page 7). You will also notice changes in our retail plaza... Aside from the revamped City Shop supermarket and a new home for Alice Flower, we welcome PURE & WHOLE (formerly KUSH) to the family. They will bring some of the best vegetarian food the city has to offer. Health conscious people will also be happy to hear that lululemon athletica, Canada's best known yoga and pilates clothes brand will be setting up shop at the second floor of the West Retail Plaza. And instead of just selling nice sportswear, they will also offer regular free yoga sessions for residents and tenants to attend... Keep an eye on your inbox for updates! There were plenty of exciting events over the past year, the first edition of our Family Fun Fair being one of the most memorable ones with over 2000 parents and kids attending. by jrb Will Bray doesn t look like a guy who has woofed down 2000 hamburgers and pizzas in the last ten years. He is tall, lean and fit as an English fiddle. We are sitting at a table in Beef & Liberty at Shanghai Centre and have been discussing how many burgers and pizzas he thinks he has consumed in the past decade. Will seems surprised at the final tally and does the math again in his head. Yep, he grins, I really have eaten an amazing amount! Will is the founder of Beef & Liberty, formerly known as Gourmet Café, the popular hamburger restaurant that was previously in this exact location. I founded Gourmet Café in 2005 on Shaanxi Bei Lu and put everything into running it, he says, while surveying the dinner crowd streaming into his freshly re-modeled restaurant. The revamped space with its New York loft style interior is filling up fast. It took me eight months of hard work just to get that place going, Will continues. I wore all the hats: cook, designer, manager, marketer, and staff trainer and I spent a ridiculous amount of time wondering how to improve on what we were doing. It was actually becoming quite the obsession. It appears his obsession with improving his products and services has paid off. Plates of burgers, carried by smiling wait staff, whiz by our table towards enthusiastic customers. It was basically like an MBA in restaurant management in those first eight months with Gourmet, he laughs. Will is a bit reserved when you first meet him but suddenly fires on all twelve cylinders, as if like a sleek Jag overtaking opponents on a race track, when the conversation turns to food quality and customer service. By the time Will moved Gourmet Café into Shanghai Centre in 2009 the restaurant had earned a great reputation. Even though customers loved us I always believed that we could do so much more. Will s mission has always been to make the best hamburgers in Asia and although the Gourmet Café brand was successful, he felt they had learned so much about what makes a great hamburger experience that they would probably do it differently if given a second opportunity to. Will made the decision to do exactly that and went back to the drawing board. The result of his labor, Beef & Liberty. It is fitting that much of the concept for Beef & Liberty originates in eighteenth century England. Will is a Brit (and yes he enjoys watching Downton Abbey as it reminds him of home, which he misses since having left the UK over 15 years ago). He was born in Dorset, a town two hours outside of London. When I visit the UK now it is like I m a tourist which is great as I can appreciate a lot of what the UK has to offer from an outsider s perspective. From an early age Will has lived in the countryside and has witnessed first-hand the relation between farming and quality food. When I was young I spent a lot of time in the kitchen with my mum and much of the food our family ate came from the surrounding farms, including from my mum s own garden. y world then was all about rolling green hills and quality food (with lots of rain, he adds and then laughs) and this has always stuck with me. Will is confident the reason he is in the restaurant business and has an obsession with quality is because of growing up in a rural environment. Since opening, Beef & Liberty has received very positive reviews and has already picked up awards for its burgers. We re trying to deliver the most incredible burger experience by focusing on the quality of the core ingredients; the bun, the burger, the cheese. And then adds, This is where a great hamburger experience starts for us. The aroma of cooking beef meanders from the kitchen and you can almost taste the sizzling sound the patties made as they hit the grill. The smells and sounds of the restaurant are comforting, familiar and conjure up images of long, sunny summer days that culminated in BBQs with family and friends. Most of our guests have been very happy with our transition from Gourmet Café to Beef & Liberty and they get what we re trying to do, Will continues. Our beef burgers are doing great and our Falafel Burger, a vegetarian option, is proving to be a big hit as well. According to Will a premium burger brand has a lot of potential in Asia. I really don t think there is a very good hamburger experience right now in Asia. We want to provide the best possible quality experience but at affordable prices. The first Beef & Liberty will open in Hong Kong in December and many more in various Asian cities in the coming years. Let s order some burgers, Will suddenly says and calls over a waiter. He orders a Bacon Cheese Burger and I try the Falafel Burger, having spotted a young woman sitting at a table opposite us enjoying one. (By now dear reader you must be wondering where pizza fits into this story...) Well Will and his partners also own the Pizza Marzano franchises in Shanghai and Hong Kong. Under management are 11 outlets in Hong Kong and 7 in Shanghai. Known as Pizza Express in the UK, the brand is famous for high quality food, great service and stylish decor. The 7 outlets in Shanghai, including the one adjacent Beef & Liberty in Shanghai Centre, have been extremely successful with new locations opening soon. Pizza and burgers complement each other, Will says and then adds, It is about offering our guests a surprisingly high-quality experience but at a reasonable price and this is what we constantly strive to achieve with both Beef & Liberty and Pizza Marzano. And besides, he says, I love pizza too! Beef & Liberty is now bustling with the Friday evening crowd. Seating inside the restaurant and outside on the deck are full. Will keeps an eye on how the wait staff is interacting with customers as well as on how the food is being prepared and presented. He has more than enough experience now to ensure that quality is being delivered. It has been a long road but we re getting there. he says with a smile. Just then our burgers arrive and look absolutely fantastic. We both eagerly dig in.

Shanghai Centre events recap Halloween party What a parade of interesting characters we had at our Halloween party. There were the traditional fairies, princesses, witches and vampires but also bees, cats and a cute snake. Plus very original creations like the Sushigirl, the Rock/Paper/Scissors family or the M&M gang. Anyway, you name it, we had them! The events team and the hotel staff did a fabulous job in transforming the Atrium into a gigantic spider web. Plenty of trick-ortreating for this year, kids. Giving Back To The Community As part of our continuous support to the less privileged community in Shanghai, a Shanghai Centre delegation of staff and residents paid another visit to the Puguang Mingong Primary School in Pudong. The reason for this trip was to drop off a donation of school supplies, educational DVDs, computers and to spend some quality time with the kids. We played fun games with the students to improve their English level. Kids and teachers-for-the-day had a blast. Dragon Boat Race For the sixth consecutive year teams representing the whole Shanghai Centre community joined in for the Annual Dragon Boat Race in Qingpu. Our event was part of a citywide dragon boat competition, with more than 120 boats participating! We opted for the smaller, 11- seat boats which made the race even faster than previous years. The Shanghai Centre staff team came in first, followed closely by the US Consulate Muscle Beach team. The boat of the British Consulate closed the top 3. Nice job everyone! A lot happening Lululemon athletica, one of Canada s top sport clothing brands is not just selling clothes, it also gets you to exercise! In anticipation of the opening of their Shanghai Centre store, all office tenants and residents were invited for a complimentary lunch-time yoga session at the spacious 4/F Atrium. Resident ladies were treated with a free manicure, there was the walking tour through the former Jewish neighborhood, an umbrella-painting class and a lecture about incense. And to make resident s last-minute holiday shopping a lot easier, more than 90 vendors joined the Shanghai Centre Christmas Market at the Exhibition Plaza. Meet the people working at Shanghai Centre Introducing Security Supervisor - Paul Tan front line profile How long have you worked at Shanghai Centre? I started working for Shanghai Centre 18 years ago. What do you do exactly? I have been the security supervisor for over 6 years, and I am in charge of over 20 security staff. Do you like what you do? Yes, very much. I am not willing to leave Shanghai Centre because I enjoy working with my colleagues and we have a good working environment. What did you do before you worked at Shanghai Centre? I used to be a pilot in the Chinese Air force and was based in Sichuan. I flew Russian-made H-5 Bombers. During regular army exercises I injured my wrist and had to have two operations. This ended my flying career. What do you like to do when you're not working? My entire family are teachers and love music. From a young age I liked to sing, play piano, harmonica and flute... I also really enjoy gardening, planting flowers and growing Bonsais. Ocean Aquarium Visit just about kids Both Caterpillar & Butterfly kids went on an exciting journey to the other side of the river to visit the Shanghai Ocean Aquarium. After being led through various themed exhibits including the Amazon, the deep Ocean and even the Polar area with penguins, the kids arrived to the stars of the show: the sharks! Everybody came back home with at least one exciting fish-story... We're all now looking forward to the next outing!
