1 Introduction 1.1 General The Avery Berkel slicing machine and its accessories are manufactured in accordance with the EEC 89/392 Machinery Directive and further modifications. They meet all legislative requirements valid at the date of manufacture. Its principle characteristics are easy cleaning, robust manufacture, safe and reliable operation. The materials utilised, anodised aluminium, stainless steel and plastics have been selected with due regard to hygiene regulations, and ensure that the machine has a long life. 2 Safety 2.1 Electrical safety devices The electrical safety devices in accordance with the EN 60204 standards are: Note: Start and stop pushbuttons. Control circuit provided with electric servo-control; in the case of blade clamping the machine must be restarted manually. Device to stop the rotation of the blade if the clamping handle of the blade guard is released. When the machine is not used: Make sure that it is off. 2 Safety 2.2 Mechanical safety devices The slicer is manufactured according to EEC 89/392 Machinery Directive and further modifications. The mechanical safety devices are: Product holder removable only with the slice thickness control on 0 (slice thickness plate positioned to protect the blade). After removing the product holder the slice thickness plate is mechanically clamped. Protection devices mounted on the product holder to prevent the operator from any accidental contact with the blade. Blade guard. This fixed ring protects that part of the blade which is not used for the cutting operation. A special mechanical safety device which permits sharpening of the blade, keeping the fingers of the operator away from the cutting edge of the blade. 2-4 Service Instructions RP-M251CE/RP-M301CE/RP-M351CE

3 Operation 3.1.3 Slicer operation and use The following products can be sliced: sausages, ham, cheese, bread. If large quantities of bread or cheese are usually cut, a teflon coating is recommended. (Optional accessory 97). Note: The following must not be sliced: non-edible products. foodstuffs with bones. frozen products. How to load the product to be cut 1. Check that the slicer is switched off and set the slice thickness control to zero. 2. Pull the product holder towards the operator. 3. 3 Operation 4. Place the product to be cut against the wall of the product holder and the slice thickness plate. 5. Place the last slice device on the product to be cut in a position away from the slice thickness plate. The product is fed by gravity to the slice thickness plate making cutting easier. 6. Set the slice thickness control to the thickness desired. 7. Press switch to switch on the machine. 8. Push the product holder at a steady speed towards the blade end then pull it back towards the operator, and repeat the operation. 9. After cutting the product, leave the product holder in position back towards the operator end. 10. 3 Operation How to load short goods for cutting (last slice) WARNING: DO NOT USE YOUR HANDS TO PUSH THE GOODS TOWARDS THE BLADE. FOLLOW THESE INSTRUCTIONS WITH GREAT CARE. 1. Check that the slice thickness control is set on zero and the slicer is switched off. 2. Pull the product holder towards the operator. 3. Lift and rotate the last slice device outwards. 4. Place the product to be cut against the wall of the product holder and the slice thickness plate. 5. Push the goods against the slice thickness plate using the last slice device. 3 Operation 6. Set the slice thickness control to the required thickness. 7. Press pushbutton to start the machine. 8. Hold the handle of the last slice device. Apply a light pressure on the goods towards the slice thickness plate and push the product holder to the end of the blade stroke; then pull it back to the operator and repeat the operation. 9. After cutting the product, move the product holder back towards the operator. 10. Press pushbutton to stop. Reset the slice thickness control to zero, and remove the product. Sharpening If the product is not cut frequently, the blade must be sharpened following the instructions indicated in 3.1.5. 3-8 Service Instructions RP-M251CE/RP-M301CE/RP-M351CE

3 Operation 3.1.4 Cleaning The machine must be cleaned once a day or more frequently if necessary. Clean all the parts using a cloth moistened with water and washing up liquid, and a brush (do not use strong detergents). WARNING: DO NOT USE A WATER JET. DANGER: PERFORM THE CLEANING OPERATIONS WITH GREAT CARE: DANGER OF INJURY. Component removal Product holder 1. Rotate the product holder clamping handle counterclockwise. 2. Set the slice thickness control to zero. 3. Pull the carriage to the operator end of its travel. A click will inform the operator that the product holder is clamped. 3 Operation 4. Remove the last slice device from the guide bar. 5. Lift the product holder from the carriage. The slice thickness control remains clamped on zero. Note: The slicer thickness control is clamped on zero. Slice deflector 1. Loosen the fixing screw and remove the slice deflector. Blade cover 1. Loosen the blade cover fastening handle by rotating it counterclockwise. 2. Lift the blade cover from the blade by pushing on the handle in the direction indicated by the arrow. Note: Once removed from the blade cover, an interlocking device stops the rotation of the blade. 3-10 Service Instructions RP-M251CE/RP-M301CE/RP-M351CE

3 Operation Blade cleaning 1. Lift the blade cover. DANGER: TAKE CARE TO AVOID ANY ACCIDENTAL CONTACT WITH THE BLADE WHILE CLEANING IT. 2. Press a damp cloth on the front side of the blade and move slowly from the centre towards the edge in the direction of the arrow. 3. Follow these instructions to clean the other side of the blade. 4. Dry both sides of the blade with a cloth in the same way. 5. Insert a damp cloth between the blade and the protection ring. Pull it outwards and move it to and fro to clean the inside of the protection ring. 6. After cleaning re-place the blade cover; insert the fastener and screw it clockwise to clamp the blade cover. Lower the sharpener protective cover. IMPORTANT: Leave all the parts to soak in warm water and washing-up liquid (do not use strong detergents) and clean them by using a brush or a cloth. 3 Operation To assemble the machine follow the reverse of the procedure for disassembly. 3.1.5 Blade sharpening If the cut is unsatisfactory, the blade must be sharpened. The intervals between the sharpening operations depend on the use of the slicer and the kind of products being cut. This operation must be carried out by qualified personnel. The blade must be replaced when its diameter is 10 mm less than that of a new one. WARNING: THE REPLACEMENT OF THE BLADE IS A DANGEROUS OPERATION. IF THE SHARPENING QUALITY IS NOT SATISFACTORY, REPLACE THE STONES. CONTACT CUSTOMER SERVICE AT AVERY-BERKEL. WARNING: SLICERS FITTED WITH A TOOTHED KNIFE (OPTION) ARE ONLY SUITABLE FOR CUTTING BREAD. THE KNIFE SHARPENING MUST BE DONE ONLY BY A TECHNICAL ASSISTANCE CENTRE. 3-12 Service Instructions RP-M251CE/RP-M301CE/RP-M351CE

3 Operation The sharpening operation Wear protective gloves Follow the instructions below for correct blade sharpening: 1. Clean the blade and remove any greasy residue. 2. Make sure that the machine is switched off. 3. Set the slice thickness control at zero to make sure that the blade is covered by the slice thickness plate. WARNING: DURING THE FOLLOWING OPERATIONS THE BLADE MUST ALWAYS BE COVERED BY THE REMOVABLE PROTECTION. 4. Lift the sharpener cover. 5. 3 Operation 6. Release the lever; the blade sharpener will be correctly located. 7. Push pushbutton to start the machine. Note: The sharpening operation will take 10-15 seconds. STOP 8. Sharpening: rotate the handle to bring the two grinding wheels on to the blade. The blade will be sharpened and burred simultaneously. 9. 3 Operation 10. Pull the lever to restore the sharpener to its initial position. 11. Lower the sharpener cover. Cleaning the grinding wheels For satisfactory sharpening the grinding wheel must always be clean. Remove dirt and grease with alcohol and the special brush supplied. 3 Operation 3.1.6 Guides lubrication This operation must be carried out after cleaning the slicer or whenever the sliding action is difficult. Use Berkel slicer oil. Lubrication of the guide bar for the last slice device 1. Drop some oil on the bar. 2. Slide the last slice device along the guide bar. Lubrication of the guide bar for the product holder carriage 1. Push the product holder towards the operator. 2. Pour lubricating oil into the special carriage bar lubricator. 3. Push the product holder to and fro and repeat the operation. Blade cover 1. Loosen the blade cover fastening handle by rotating it counterclockwise. 2. Push on the handle in the direction indicated by the arrow to lift the blade cover from the blade. Blade cleaning 1. Lift the blade cover. Note: When the blade cover is removed an interlocking device prevents blade rotation. DANGER: DURING BLADE CLEANING OPERATIONS, TAKE CARE TO AVOID ACCIDENTAL CONTACT WITH IT. 2. Press a damp cloth on the front side of the blade and move slowly from the center towards the edge in the direction of the arrow. 3. Follow these instructions to clean the other side of the blade. 4. 3 Operation 5. Insert a damp cloth between the blade and the protection ring. Pull it outwards and move it to and fro to clean the inside of the protection ring. 6. After cleaning replace the blade cover, insert the fastener and screw it clockwise to clamp the blade cover. 7. Lower the sharpener protective cover. IMPORTANT: Leave all the parts to soak in warm water and washing-up liquid (do not use strong detergents) and clean them by using a brush or a cloth. Rinse them in warm water and dry them. 3 Operation 3.2.5 Blade sharpening If the cut is not satisfactory, the blade must be sharpened. The intervals between the sharpening operations depend on the use of the slicer and the kind of products cut. This operation must be carried out only by qualified personnel. Make sure that the machine is switched off. 3. Set the slice thickness control to zero to ensure that the blade is shielded by the slice thickness plate. Cleaning the grinding wheels The grinding wheel and its pin can be removed from the sharpener by taking it off in the direction of the arrow. 3 Operation 3.2.6 Guides lubrication This operation must be performed after cleaning the slicer or whenever the sliding action is difficult. Use Berkel slicer oil. 4 Installation 4.1 RP-M251CE/M301CE/M351CE 4.1.1 Installation The slicer must be mounted horizontally on a stable, robust and antiskid base capable of supporting its weight (3.1.2 and 3.2.2). The recommended height of the working table is 800 mm. Check that the product holder is not clamped and the product to be cut can be easily loaded (3.1.2 and 3.2.2). 4.1.2 Electrical supply The machine must be installed near a mains socket. Check that the power supply voltage corresponds to that on the information label and that it is correctly connected to earth. 1. Insert the plug into the mains socket. 2. Check that the blade cover fastening handle is screwed up tightly. 3. Check that the blade sharpener is lowered and that the protective cover is closed. 4. Press pushbutton to switch on the machine (the mains supply light will illuminate). 4.1.3 Preliminary cleaning Before connecting the plug clean off the protective oil from the machine. Lift the machine and loosen the screw (4) on the bracket (3). 2. Slowly rotate the thickness plate until the center of curvature of the edge next to the blade coincides with the centre of the knife, with an even opening of 1-1.5 mm between the knife and the thickness plate, as shown above. 3. 6 Technical Information 6.2 Sharpener settings/adjustments RP-M251CE/RP-M301CE The knife must be replaced when its diameter falls to 10 mm less than its nominal value. The reduction of the knife diameter could mean that a corrective adjustment of the sharpener is needed. It should be positioned as follows: 1. Lift up the protection cover (pos 1 fig 6.3) and rotate the sharpener into its sharpening position (fig 6.3). 2. Loosen the two screws (pos 1 fig 6.3); loosen the bolt (spanner 22) (pos 3) and remove the sharpener assembly (pos 4). 3. Rotate the bolt (pos 5 fig 6.4) clockwise as far as is necessary, and assemble the sharpener assembly by checking that both stones are positioned as in fig 6.5, with the finishing stone parallel to the knife (fig 6.3); check that there is no interference with the movable protection (pos 6 fig 6.3). Put the sharpener into its non-operational position and check that there is no interference between the finishing stone and the knife. Fix the sharpener assembly by fastening the bolt (pos 3 fig 6.3). 4. Reset the knob (pos 2 fig 6.3) and fasten the two screws (pos 1 fig 6.3). Loosen the grain (pos 5 fig 6.7); put the sharpener into its non-operational position (fig 6.6), and rotate the cam (pos 6 fig 6.7) anti-clockwise as far as possible. Loosen the grain (pos 8) and rotate the eccentric cam clockwise or anticlockwise (pos 9 fig 2) and check that the movable protection (pos 7 fig 6.6) projects beyond the knife edge, as shown in fig 6.6a, and then fasten the grain (pos 8 fig 6.7). 4. Return the sharpener to its sharpening position (fig 6.7) and rotate the cam clockwise (pos 6 fig 6.7), checking that there is no interference between the trimming stone and the movable protection (pos 7 fig 6.7) during the rotation, and then fasten the grain (pos 5). 7 Appendices 7.2 Routine maintenance 7.2.1 Cleaning The slicer should be cleaned often; at least once a day. To clean all accessible parts, use a cloth moistened with water and detergent (a non aggressive one): do not use water jets! For effective cleaning follow the instructions given in the Instruction Manual. 7.2.2 Knife control Check the knife diameter and replace the knife when its diameter is 10mm less than its nominal diameter; for the replacement of the knife look at the specific technical sheet. 7.2.3 Knife sharpening When the slicing is not satisfactory, it is necessary to sharpen the knife. Before sharpening the knife clean the sharpening stone. If the sharpening is not satisfactory replace both stones. 7.2.4 Lubrication This operation should be made after the cleaning of the slicer, or each time when the carriage does not slide smoothly; use Berkel slicer oil. 7.2.5 Sliding of the food holding carriage If the carriage does not slide smoothly, lubricate its sliding bar as indicated in the Instruction Manual. 7.2.6 Endgrip sliding If the endgrip does not slide smoothly, lubricate its sliding bar as indicated in the Instruction Manual. 7.2.7 Supply cord Check periodically for wear of the supply cord: if you see that there are evident cuts, replace immediately. 7-4 Service Instructions RP-M251CE/RP-M301CE/RP-M351CE
