Classic chef s training at Remarque in Osnabrück was followed by professional positions that shaped me, as the modest award-winner explains: first at Per Se, one of New York s most famous restaurants, before stints with Joachim Wissler at Vendôme, Schloss Bensberg, world-renowned NOMA in Copenhagen, Daniel Achilles Reinstoff in Berlin and, before moving to Stubai, Parkhotel Surenburg in Riesenbeck, where he was awarded a 10 Milk-fed veal cutlet with chanterelle mushrooms and a port jus

Falstaff Restaurant Guide points and 3 forks In addition to offering international classics, Head Chef Boris Meyer invites us on a culinary journey through Austria. Five and seven-course taster menus as well as classic fondues served in a cable car gondola. The young chef quickly found his bearings in the Pfurtscheller team in Neustift. He has plans for the SPA-HOTEL Jagdhof and inspired by his time at NOMA he is already implementing some of them: René Redzepi always said, Get outside into nature it has everything you could want or need!, and that s the same philosophy as at the Jadghof, stresses Boris. Redzepi s advice is easy to follow given the ingredients obtainable in Stubai s breathtaking surroundings: game from the hotel s own preserve, freshly caught Steixner Alpine char and a vast range of superb produce from local farmers. 24 Snow and slope fun for young and old in the Stubai ski areas STUBAI GLACIER Austria s largest glacier ski area offers 35 downhill runs with 108km of pistes as well as 26 cable cars and lifts. The glacier ski area offers guaranteed natural snow and, thanks to the Stubai Zoo snow park, it s also a top destination for freeriders. ELFERBAHNEN Neustift s local mountain is the Elfer and, with its long, challenging slopes, it appeals particularly to ambitious and experienced skiers.
