Ski season may be less than six months away. Have no fear Ski Club is here. We ve got lots of playtime before Winter fun begins. Let s have a picnic! Our July meeting will be at the Crowley Household. The club supplies the food you supply your own drinkables. Bring a lawn chair, a game maybe. Come and enjoy an evening with your friends The Ski Club Golf outing is just a few days later on Friday, July 9 at Harbor Hills. We will begin teeing off between 6:00 and 6:30 pm. There are still a few spots available. If that isn t enough to keep you busy, how about a bike ride? July 17 is the more ambitious Land of Legend ride while July 18 is the Newark to Granville Ice Cream Run. See the details further in this newsletter. Your trip leaders have been hard at work planning good times for the coming months. The CVSR wine train is going to be super and you won t want to miss the Kokosing River weekend with the Apple Valley finale. What better way to wrap up the Summer than with a trip to Alaska. Two entirely different bike experiences are available the weekend of July 17 and 18. On Saturday, July 17, 2010, the Licking County YMCA will be hosting the 39th Land of Legend Bicycle Tour. Bruce and Kathy Kern 740.403.3910 CHRISTIAN S CHITCHEN Old-Fashioned Cooking Updated for Ease ICEBOX RIBBON DESSERT A Southern Summer Classic from my Sainted Granny, Mrs. Caleb T. Dickson Will be made in 4 separate layers over at least 10 hrs 1 sleeve Honey Graham Crackers 1/2 lb Soft Sweet Cream Unsalted Butter 1/2 lb Neufchatel or Cream cheese 1 cup Confectioners Sugar 1 box Cherry gelatin 1 box Strawberry gelatin 2 cups 2% milk or whipping cream 1 cup Cut Fruit - berries &/or grapes work best Or 1 can Fruit Cocktail 4 cups Whipped Cream (1 container) Layer 1: Crust In a 10x9 glass casserole dish (to better show off the layers), place 1 layer of Graham Crackers. Cream butter, cheese & sugar together until easily spreadable. Using a knife, spread over crackers, attempting to overlap edges to create solid layer. This takes patience, practice & a well creamed mix. Place in fridge for at least 2 hours until solid. Layer 2: Parfait Fully dissolve box of Cherry gelatin into 2 cups boiling water. Whisk 2 cups milk or cream until slightly frothy. Place in fridge for 30-45 minutes to partially firm up. Then ladle over solid 1st layer & return to fridge for at least 4 hours to firm up. Layer 3: Gelatin Fully dissolve box of strawberry gelatin into 2 cups of boiling water. Option 1 - Stir in 2 cups of cold water. Place in fridge for 30-45 minutes to partially firm up. Add the cut fruit, then ladle over layer 2. Place back in fridge for at least 4 hours. Option 2 - Stir in 1 cup of cold water and 1 can of fruit cocktail. Place in fridge for 30-45 minutes to partially firm up. Ladle over layer 2 then place back in fridge for at least 4 hours to firm up. Layer 4: Whipped Cream At any time, using a rubber spatula, spread the whipped cream over top of layer 3 and refrigerate until firm. Cut into squares and use a wide spatula to serve and enjoy. Your friends and family will fight over the last piece. Guaranteed! For extra punch, add pieces of cut fruit on top of the whipped cream in a fun pattern. Feel free to use any flavor of gelatin or fruit. Or use a flavored whipped cream or cream cheese. Add more sugar & use fruit cocktail for a sweeter taste. Plan to take 2-3 days to make so you can make a layer and forget about it until tomorrow. But cover & hide it well because it WILL be gotten into if seen!
