IT S ALL ABOUT THE COW. At the very heart of the holiday region of Gstaad there is the proud tradition of classic alpine farming with the cow, the Simmental breed in particular, at its centre. There are some 7,000 cows almost as many as there are people in the Saanenland producing milk for such tasty cheeses as the popular Hobelkäse, and providing meat as a delicacy. The authenticity of the traditional Züglete, the local name for when the cattle are driven up and down from the alpine pastures every year, has retained the charm for which Gstaad is renowned the world over.
