Information about Puglia (also known as Apulia ) Also known as "Le Puglie" in the plural form, this region contains, in fact, many souls. The heel of Italy's boot, Puglia is a charming region that can be visited all year round and is known for it s nature, history, tradition, tastes and spirituality. This is an enchanting region that spreads lengthwise along the sea with marvellous beaches that will delight every traveller. Puglia is a region that can satisfy any taste and interest, from its ancient history to the Medieval and Baroque epochs, from its castles that line the coast to the tiny, artistic borgos where artisan masterpieces come to life. For a full immersion in history and tradition, Alberobello is a must. The town of the trulli - ancient and peculiar stone houses with a conical roof, built without mortar- is so unique that it has been inscribed on the UNESCO World Heritage List. Besides its trulli, Puglia hosts another UNESCO site in the town of Andria, Castel del Monte, an unrivalled masterpiece of Medieval architecture commissioned by Frederick in the 13th Century. It is interesting to know that the number 8 is the motif of the castle: the sides of the castle are 1

eight, the rooms of the ground floor and the first floor are eight, and the grand octagonalplanned towers are eight-sided as well. Puglia has been for centuries very important to the process of expansion of Judaism in the Mediterranean Countries. The purpose of this tour is to let people know an historical period of extraordinary importance for this land, often overlooked in favor of the most popular periods: the Messianic and Baroque age. The main centres of Judaism in Puglia were Bari, Oria, Trani, Lecce and Santa Maria al Bagno. Day 1, October 18, Thursday. Itinerary Group Arrival at Bari Airport, meeting with the tour leader and private transfer to Bari. Day 2, October 19, Friday Visit of the Basilica of St Nicholas situated in the heart of the old town, and visit of the Norman-Swabian Castle, built by the Normans in the 12th century and restored by the Emperor Frederick II. Welcome dinner. Accommodation at the hotel and welcome dinner. Overnight Bari, hotel Grand Albergo delle Nazioni 5*. Meals: D Breakfast and departure to Trani, a historic fishing port, between Bari and Barletta on the Adriatic coast. It's a lovely place to explore, wander or relax. The town is reminiscent of 1950s films set in old-fashioned seaside Italy: historic buildings fading with casual charm, boats in the harbour and sleepy dogs lazing in the midday sun by the deserted waterfront. Visit of its historic center. Visit to the Synagogue, the cathedral and the Jewish neighborhood, where Jews were living, perfectly integrated into the urban fabric and daily activities of the city. Departure to an Olive Mill. Light lunch at Olive Mill with olive oil tasting. 2

Afternoon departure to Castel del Monte, UNESCO World Heritage Site, one of the most beautiful and mysterious castle in the world. Located in the municipality of Andria, Castel del Monte rises on a rocky hill dominating the surrounding countryside of the Murgia region in southern Italy near the Adriatic Sea. A unique piece of medieval architecture, it was completed in 1240. The castle s location, its perfect octagonal shape, as well as the mathematical and astronomical precision of its layout all reflect the broad education and cultural vision of its founder, Emperor Frederick II. The castle has a mysterious octagonal shape: Ezekiel tells us that God sent an angel to dictate the measures of the new temple in Jerusalem, it had to be measured 111 cubits. Overnight Matera, Sant Angelo Resort 5* Meals: B, L, D Day 3, October 20, Saturday Breakfast and visit of Matera, the city of The Stones, UNESCO Heritage site. Matera is located in a remote corner of southern Italy in the small region Basilicata. It s not the easiest place to reach which is why it has managed to remain relatively unknown, especially to foreign tourists, Since it became a UNESCO World Heritage Site in 1993 visitor numbers are slowly growing and, many of the caves have been transformed into stylish hotels and restaurants but it is still relatively too touristy yet. The Castel del Monte is not a simple castle, but a new temple of God, the God of Akhenaton, who was led out of Egypt with Moses and was the father of the three monotheistic religions: Christianity, Islam and Judaism. Departure to Matera, accommodation at the hotel, dinner. The ancient neighborhoods, known as sassi, are a series of cave dwellings carved out of limestone, into the mountainside. It s one of the most unique and spectacular places in Italy or anywhere in the world. Lunch in a cave, with local specialties. 3

Afternoon transfer to Locorotondo, officially one of the Borghi più belli d'italia, the most beautiful villages in Italy. Visit of the city center. Continue to Alberobello, UNESCO World Heritage site and visit of its trulli. This picturesque destination becoming very popular lately. Walk in the only historical center in the world consisting entirely of Trulli, ancient circular buildings with a funnel-shape roof. A trullo is a small dwelling built from the local limestone, with dry-stone walls and a characteristic conical roof. It is a traditional and simple type of structure which you'll see dotted around this part of Puglia, sometimes in its most basic form used as a kind of shed among the olive groves. The story behind Alberobello, once a town of trullialone, is a typically Italian one: its design was to fiddle taxes and fool the authorities. The local feudal lord, Count Acquaviva, moved his peasant workers here to clear woodland and cultivate the land. To wriggle around laws and taxes, it was important that Alberobello didn't class as an inhabited settlement. So until 1797, when Alberobello was finally given 'town' status, the people had to live in trulli, which could be dismantled in a hurry when necessary. Dinner. Overnight Masseria Greco in Itria Valley Meals: B, L, D Day 4, October 21, Sunday Breakfast and departure to Ostuni, one of the most stunning cities in southern Italy famous for the dazzling effect of its whitewashed houses and charming example of Mediterranean architecture. We will explore it s levels, staircases, small roads, alleys, arches. Hints of the Middle Ages are at hand in every corner and in every view to the sea The brightness of its whitewashed houses, set against the pink-tinged brown of its principal monument, makes the town stand out in the green of the surrounding area. Is this happy combination of the natural and the manmade that has made Ostuni one of the most attractive cities in the region and an essential part of any tour of Italy. 4

Lunch at leisure, on your own. In the afternoon departure to Polignano a Mare and free time to visit the little town nearby the sea, to taste the best Italian ice cream to Gelateria Caruso. Time will be to stroll and do some shopping. Dinner with local fish specialties. Overnight Masseria Greco in Itria Valley Meals: B, D Day 5, October 22, Monday. Breakfast and departure to Oria visit of the most important Apulian middle age center of Judaism. Between the 8th and 10th centuries, Oria reached the pick of its cultural prestige, mainly thanks to the presence of a big Jewish community. During the Middle Ages was living in Oria one of the most important Jewish communities of the Mediterranean. Traces of this community are still extant. Continue to Squinzano ( a small town close to Lecce) and light lunch with wine tasting in an historical mansion. In the afternoon arrival at Lecce, accommodation at the hotel and free time for shopping and relax. Dinner at leisure. Overnight stay. Breakfast and visit of Lecce. At the beginning of the 15th century the Jewish community of Lecce was very lively, from the point of view from the trade, from the craft and also from the arts. One of the most important characters of the Jewish community in Lecce was Abraham de Balmes, whose was dedicated one of the major streets in the historical centre, which runs through what turned out to be the ancient Jewish neighborhood of Lecce. Visit to the Baroque city and the middle ages Jewish neighborhood with the Medieval Jewish Museum, which houses important remains and findings of this community because it was the Synagogue of the city. Lunch. In the afternoon departure to Santa Maria al Bagno. This location became a camp for Jews refugees during the II World War. Guided tour of the town and the Memorial Museum, which preserve the witness of Jewish survivors to the horror of the concentration camps. Continue to Gallipoli. Visit of Giudecca (Jewish neighborhood of Gallipoli). Return to Lecce, dinner at leisure and overnight stay. Overnight Lecce, Risorgimento 5* hotel. 6

Arrival and walking tour of the old town center and the Santa Maria Annunziata Cathedral, that still preserves a magnificent floor mosaic representing the Tree of Life. Return to Lecce. 6. Is this trip right for you? This trip is designed for adventurous traveler. All participants must be reasonably fit, and able to walk on cobblestone streets, walk up and down the hills and stairs. Unfortunately, this trip is not suitable for participants in wheelchairs, motorized scooters, and walkers or with limited mobility. Flexibility, a sense of humor, and ability to manage your own baggage, when required, and a willingness to accept local standards of amenities and services are essential components to the enjoyment of this trip. Some churches enforce fairly strict dress codes. Women may need to have head coverings (scarves) with them, and men and women may need to have their arms and legs modestly covered. 2 bottles of water will be provided per person per day for touring. FOOD in Puglia Orecchiette con le cime di rapa: also called "recchitelle" or "strascinati", are one of the most typical Apulian dishes, especially in the area of Bari. This first course is prepared throughout the region, even with different accompaniments from turnip tops such as broccoli or tomato sauce. 9

Burrata: is a fresh Italian cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture. It is also defined by some sources as an outer shell of mozzarella filled with butter or a mixture of butter and sugar. This agrees with original meaning of the word burrata, literally "buttered" in Italian. It is usually served fresh and at room temperature. Pane di Matera: the bread of Matera is the bread obtained through an ancient processing system, typically used by the bakeries in the province of Matera. This system provides for the exclusive use of durum wheat semolina. 10

Pasticciotto: is a sweet typical of the Salento area in Puglia, made of pastry with custard and baked in the oven. The birth of the pastry cookie dates back to at least the beginning of the eighteenth century, and since then many varieties have been proposed to this sweet which has contributed to making famous the typical Salento cuisine. Brushed egg whites before baking in the oven, the pastry cake reaches its typical amber and glossy gold. It is still to be consumed to make the palate all the best peculiarities of its flavor: the scent of cream and the consistency of freshly baked pasta. Riso patate e cozze: Rice, potatoes and mussels is a typical Puglian dish. It is found in the Bari area and in the province of Taranto; the two versions are known locally as Tiella Barese and Tiella Tarantina. The name derives from the tiella pot traditionally used to prepare the dish: a wide, low clay baking dish in which rich and succulent dinners were prepared for the peasant workers. Because people were often very hungry, the ingredients were poor and there was little time available, the peasants used to use anything to hand: vegetables, rice, potatoes and mussels (the most economical and available seafood). It was cooked over the embers, a metal cover was placed over the top and more coals were placed on top, thus simulating baking in the oven. The result was uniformly excellent, just as yours will be when you make this dish! WEATHER October marks the beginning of autumn in Puglia, a beautiful region in Italy's far southeastern corner. Summer is officially over and the weather slowly makes its way toward the cooler and wetter winter season. The forests and hills in the region are nothing less than gorgeous this time of year, while the coastline still makes for a nice destination as well. There are several great towns to visit and the cuisine is exquisite all-year round it's Italy, after all. October is characterized by an increase in rainfall, although the region is still quite dry compared to other places in Europe this time of year. The total amount of rainfall is 66mm, which makes it the fourth wettest month of the year in Puglia. There are 8 days with rainfall. 11

There are a few types of rainfall that you may experience when visiting southern Italy in autumn. Moderate rain is the most common one, occurring on 45% of the days with rainfall. Thunderstorms are observed on 28% of those days; light rain happens on 14% of the rainy days. The probability that rainfall occurs increases throughout the month. The beginning is the driest part with a 32% chance of rainfall. It gets slightly wetter toward the end, with a chance of 38%. American computer users can choose from these options: Purchase a converter to transform the voltage. Purchase equipment that adjusts internally to either current. Your retention of tickets, reservations or bookings after issuance shall constitute an acceptance of and consent to the above terms and conditions and an agreement on your part to convey the contents hereto to your travel companions or group members. If the client is dissatisfied with any part of the package, the ultimate supplier (hotel, tour company, etc.) is solely in the position and the only one with any authority to make any adjustments. The Company cannot be responsible for any arrangements not made through our agency. All rates pertaining to independent hotels and services are agency s negotiated rates and include handling fees consisting of communications expenses incurred to obtain reservations. The Company will not be held responsible for any differences between rates paid prior to departure and locally posted rates, and absolutely no refunds will be made for such possible differences. 13
