One is its superb culinary heritage with such famous produce as prosciutto di Parma, salami and mortadella, varied and delicious pastas, Parmesan cheese and balsamic vinegar. The other is its fine engineering, with world famous sports cars and racing motorbikes, as well as farming equipment, machine tools and electrical gear. In Guastalla close to Parma, one company combines the two with an intimate understanding of the culinary arts and true engineering skills. This is the family firm of Bertazzoni, whose stoves are sold throughout Italy and exported to 60 countries around the world. Emilia-Romagna is made up of two distinct parts. Emilia lies to the west of Bologna, with prosperous towns stretched along the old Via Emilia. Romagna runs up to the Adriatic coast east of Bologna. TREASURED TRADITIONS When Rome ruled the world, this land of abundance became known as the breadbasket of the Roman Empire. White truffles, wild mushrooms, vegetables, greens and legumes of all sorts are grown here, and often cooked in soups or with pasta. Polenta and chestnuts, distinctive breads and rice with short, ovular grains used in risotto are prized. Most Italian tomatoes come from here, and many are canned and exported along with many fruits, such as cherries, plums and quince. The origins of prosciutto di Parma Parma ham go back over 2000 years. In 100 BC, Cato first mentioned the wonderful flavor of the cured ham produced around the town of Parma; how the legs were left to dry, greased with oil and would age without spoiling. Parmigiano Reggiano Parmesan cheese is another product from Emilia- Romagna that has been considered the king of cheeses since the Roman era. It is aged for at least one year and its authenticity and quality are regulated by the Italian government. Aceto balsamico Balsamic vinegar is produced in the province of Modena. It is one of Italy s most prized

The region is also Italy s most important for beef and pork. With all this fine produce, the rich culinary traditions, and recipes vary from town to town. Typical dishes include tagliatelle with ragu Bolognese, vegetables pickled in balsamic vinegar and torta fritta wrapped around delicate slices of Parma ham.

ITALIAN PASSION AND PRECISION 12 13 AROUND THE TABLE The food of Emilia-Romagna has become famous all over the world. But this where it originated and is still best appreciated. Family and friends gather around the table for the traditional meal comprising appetizer, starter, main course, second course, pies and fruits. It is an experience of wonderful variety, aromas and colours. The beloved pasta is accompanied by any amount of sauces, from perfumed meat to the many vegetable ragus. It has five or six burners featuring the exclusive triple-ring, high-efficiency burner with separately controlled flames. The oven has a balanced air-flow fan to provide even heat distribution for single and multi-level roasting and baking. A matching range hood and backsplash is also available. Bringing Professional Series power to cooktop convenience, this new model has six burners, with a dual wok burner ranging from 750 to 15,000 BTU. HERITAGE SERIES 50 51 THE HERITAGE The Antonio Signature on each range celebrates the beginnings of the company towards the end of the 19th century. Engineer Francesco Bertazzoni and his son Antonio had been impressed by the wood-burning cooking stoves that began to arrive from Austria into their part of Italy. So they decided to make their own just for local use and to begin with, and in very small quantities. It was the start of an outstanding success story. By the early 20th century Antonio Bertazzoni was exhibiting at a trade fairs around the country, and his woodburning stoves won the Grand Cup of Honour and Gold Medal in Florence. Bertazzoni soon becoming a wellknown name throughout Italy. Antonio ran the new business for some years, later with his own sons Ettore, Attilio, Napoleone and Arturo.

52 53 INNOVATION AND EXCELLENCE Bertazzoni comes from a region of Italy famous both for its food and for its engineering. Knowing all about the craft of cooking and using the latest design and manufacturing techniques has given Bertazzoni its special pedigree of success. High specification Bertazzoni stoves are now sold all over the world. Constantly improving in efficiency, production has doubled since 1998. But ever since Bertazzoni started making stoves over 100 years ago we have never forgotten that our specialization is cooking, and that we exclusively produce the finest cooking appliances.

INNOVATION AND EXCELLENCE 54 55 BUILDING SUCCESS Francesco Bertazzoni, founder of the dynasty first saw wood burning stoves from Austria arrive in Guastalla, home of the Bertazzonis, on the new railroad connecting with the industrial centers of the north. These stoves set Francesco to thinking, and some years later towards the end of the 19th century he and his son Antonio decided to make their own just for local use and to begin with, and in very small quantities. They were soon a success and the Bertazzoni name become known across Italy. The family built their first factory in 1909. In the 1920s they began making cooking stoves on a much larger scale. The discovery of oil and gas in the Po River Basin in the 1950s opened up new opportunities. A number of Italian companies started producing gas-fired stoves, and Bertazzoni soon joined the trend.

INNOVATION AND EXCELLENCE 56 57 In 1953, their first gas table-top units were introduced. Production of the first gas stoves began in 1955, further perfected in 1958 with the addition of an oven. Although competition was fierce, the company prospered throughout the 1950s and 60s. In 1959, the first overseas sales where made in the Mediterranean area, and then in Belgium, Switzerland and Portugal. Exports expanded into in the Far East, selling in the Philippines and Singapore. Today Bertazzoni exports to more than 60 countries around the world selling at the top end of the market through a quality dealer network.

58 59 INNOVATION AND EXCELLENCE THE MODERN ERA Dr Paolo Bertazzoni, with a degree in Economics and Business Studies from Parma University behind him, joined the family firm in 1981. With his sister Elisabetta, he soon gave fresh impetus to the company s competitive edge, using top Milan designers to replace the products utilitarian look with Italian elegance and finesse. Large modern plants were built in the 1990s as expansion continued. Today s advanced manufacturing techniques are adopted from the autoindustry and involve minimal stocks, streamlined flows, and reduced lead times. With product differentiation and specialisation, the business strategy has evolved to cope with the demand for higher performance products. For all its modernization and global marketing, Bertazzoni respects its roots in the traditions of Italian culture and style, and that it remains a specialist in the very personal craft of cooking.
