Home of the Legendary Chicken Fried Steak! Chicken Fried Steak Festival and Crossroads Balloon Rally is held annually on the last weekend of April. LEGEND HAS IT. One cold windy day in in 1911 a short order cook by the name of Don Perkins created perhaps the tastiest dish created in Texas - the CHICKEN FRIED STEAK. Perkins was known to his family and friends as Jimmy Don and like many discoveries, the invention of the CHICKEN FRIED STEAK was an accident. He could not read well, so when the waitress turned in an order that read, CHICKEN, FRIED STEAK, Perkins misread it to say CHICKEN FRIED STEAK. Not realizing that what she wanted was an order of chicken and an order of fried steak, Perkins was somewhat puzzled as what to do so folks wouldn t know he had no idea how to cook the dish. So he decided to cook the steak like chicken. He took a piece of steak and rolled it in flour and milk and fried it. THE REST IS HISTORY... Perkins decided the best way to serve CHICKEN FRIED STEAK was with French fries or mashed potatoes and cream gravy. People came from all over the steak to dine on the delicacy. The fame of CHICKEN FRIED STEAK quickly spread through Texas and the Southwest to become a beloved staple of a Texan s diet. Perkins is a forgotten name in history but his creation lives on.
