It is used on the floor of the roasting oven in a two-oven AGA to give a baking environment similar to the baking oven found on other models. Its heavy aluminium construction dissipates the heat and an internal cushion of hot air surrounds the cake to ensure even cooking with a flat top to the finished cake.
