The dish is made with Vialone Nano rice ( risi, as they are called in Veneto dialect) and, peas, ( bisi, as they are called in Veneto dialect) which are produced in the nearby island of Sant Erasmo. Despite its simple ingredients, the dish is nutritious and tasty at the same time. Word has it that this Venetian dish was inspired by the culinary tradition of eating rice with vegetables of the Byzantine people, with whom the Republic of Venice was engaged in trade. Despite its humble origins, it is said that risi e bisi was served at the Doge on the 25th of April to celebrate the city s patron, San Marco.
