Press Release 30 May 2016 Angelo Musa, the new Executive Head Pastry Chef at the Hôtel Plaza Athénée Angelo Musa, World Champion Pastry Chef in 2003 and winner of France s top vocational award in 2007 ( Meilleur Ouvrier de France hence the blue, white and red collar), is joining the Hôtel Plaza Athénée as Executive Head Pastry Chef. At the beginning of April 2016, Angelo Musa was appointed by Alain Ducasse and François Delahaye to lead the teams of pastry chefs at 25 avenue Montaigne. With long-standing experience in France and other countries, the Man from Nancy is unfazed about the new challenge facing him. I m delighted to be joining the staff at the Plaza Athénée beside Alain Ducasse, and to be able to work closely with the Head Pastry Chef Alexandre Dufeu.. His job? He knows that it will be hard work but he describes it with his usual modesty and with great enthusiasm. With his staff of 21, he will be bringing his own creative touches to the menus in the Cour Jardin, the Galerie, the Relais Plaza and the Terrasse Montaigneas well as stamping his mark on functions and room service! There s no shortage of subject matter but he approaches everything methodically, as a new set of challenges His concept? His watchword is balance! Balanced flavours come first. The flavours may have their own distinct characters but they should blend delicately with each other. Then come balanced textures (to create various sensations on the palate soft, crunchy, melt-in-the-mouth etc.) and, finally, the balance between sweet and sharp or sweet and acidic. His preferences? He enjoys giving the classics a new twist. He works through each stage of the process with the same attention to technical excellence. The flaky pastry in a vanilla slice must be perfectly crisp and the cream very, very fresh. Pastry cases for custard desserts or fruit tarts must be baked blind with the precision of a watchmaker before being dressed. The cream filling for an éclair has to be beaten until it is soft and smooth, to create a contrast with the crunch of the choux pastry.

Angelo s aim is to amaze even the most experienced taste buds with a subtle combination of flavours and textures. He tests things out, plays around with the results, tastes what he has created and has fun. Eventually, he stops - he s created something that he s happy with! Now he wants to test it on somebody else now, right away! He works closely with his staff and discusses his ideas with them before trying them out on his friends. He likes people. He likes to see them enjoying themselves. Their delight is his reward. Looks like he s in the right job, wouldn t you say! Who is Angelo Musa? Born in Nancy in 1970, Head Pastry ChefAngelo Musa is a graduate of the hotel school in Metz. He won the Coupe de France competition in 2001 and the World Pastry Cup in 2003. He learnt his trade at the Pâtisserie Bourguignon in Metz then at the Relais Desserts Oberweis in Luxemburg before joining Pascal Caffet s Palais du Chocolatin Troyes. Since 2007, he has been one of the Meilleurs Ouvriers de France (best craftsmen in France), a prestigious and much-coveted title. In March 2008, he set up a consultancy firm, Papilio Conseil, through which he developed Thierry Tessier & Philippe Conticini s Pâtisserie des Rêves in the 7th and 16th arrondissementsin Paris. Now, it has led to his appointment as Executive Head Pastry Chef at the Hôtel Plaza Athénée. Press Release May 2016 The Plaza Athénée s Cour Jardin will provide a backdrop for Philippe Hiquily s work this autumn From 26 September to 16 November, the courtyard at the Hôtel Plaza Athénée will provide the backdrop for an exhibition of sculptures by the French artist, Philippe Hiquily. A dozen sculptures will be placed in the foyer (La Marathonienne) and the courtyard, where the most outstanding exhibits will be the gentle, elegant curves of La Reorneadora and Les Epicuriennes. Throughout a career spanning more than fifty years, Philippe Hiquily enjoyed working with metal, bringing it to life, twisting it and gradually discovering the thousands of ways in which iron, steel or brass can be transformed and shaped. This exhibition is being organised by the Galerie LOFT and curated by Marie-Béatrice Lavau. After working as an art dealer in Asia, Marie-Béatrice Lavau has specialised in providing consultancy services for art lovers. The exhibition will be open to the public every day from 10am to 7pm in the Cour Jardin at the Plaza Athénée. The courtyard will provide a superb setting for the artist s sculptures and they, in turn, will create a truly special event, particularly because of their wonderful patina and their delicate balance.

Philippe Hiquily Philippe Hiquily (1925-2013) was a multi-talented artist, considered as one of the greatest sculptors of the 20th century along with César or Arman. He was close to artists such as Man Ray, Max Ernst or Jean Tinguely but Hiquily always refused to be linked to any one particular school. Nevertheless, many of his works were reminiscent of Surrealism and New Realism and he is seen as one of the forerunners of kinetic art (notably because of mobiles such as Ariane or Cheng Er.). He began working with bronze circa 1980 and his pieces were exhibited for the first time in 1986, at the Galerie Patrice Trigano in Paris. A graduate of the Ecole des Beaux-Arts (1953), Philippe Hiquily believed that the aim of sculpture is to amaze and he chose to achieve this through the use of metal. He travelled through periods in history and across continents, one of those sculptors who leave a mark on their period while constantly reinventing what they do. Philippe Hiquily s work can be seen in many museums, notably the Museum of Modern Art (MOMA) and the Solomon R. Guggenheim Museum in New York, the Smithsonian American Art Museum in Washington, the Museum of Contemporary Art in Montreal and the Musée National d Art Moderne in Paris. The Galerie Loft has been representing him for more than 25 years. The Galerie Loft Founded in 1985 by Jean-François Roudillon, the Galerie Loft in the heart of Saint-Germain-des-Prés has always specialised in discovering young, contemporary artists from all backgrounds, encouraging them and promoting their work among art collectors in Paris and elsewhere in Europe. From the outset, the gallery looked after the most significant artists of their generation and it was instrumental in publicising contemporary movements such as Street Art and graffiti. The Galerie Loft is also particularly active internationally, organising numerous exhibitions and lending works by its artists to institutions and foundations in other countries. Press Release September 2016 An ice rink at the Plaza Athénée from November to January! From Sunday 27 November 2016 to Sunday 29 January 2017, visitors will be taken into a magic world decked out in the colours of Christmas. As it does every year, the Hôtel Plaza Athénée will be installing an ice rink of almost 100 sq. metres in the Cour Jardin! The rink is designed for children between the ages of 6 and 12 who will be able to enjoy skating safely, watched over by qualified instructors. The latest cakes by Angelo Musa, the new Executive Pastry Chef, will be served in the gallery at teatime, as part of a menu at 48 euros per person including a hot drink. The menu provides entry to the ice rink for two children. Offer valid subject to availability. Practical information: The ice rink is open from Wednesday to Sunday between 3pm and 7pm. (There cannot be more than 10 children on the rink at any one time. A member of hotel security will be present during opening hours on Wednesdays, Saturdays and Sundays. The welcome for which Werner and his staff are famous, the shimmering lights and the centrally-placed piano create such a warm first impression. You feel you re with friends here! A word about Werner Kuchler: Werner Küchler s expertise and spontaneity have been delighting clients at the Relais Plaza for the past forty years, giving them the feeling that they belong to one great family. He provides a sincere, warm welcome but his impeccable manners ensure that he never intrudes on a client s personal space. When he was appointed Director of the Relais Plaza in 1987, Werner, who originally came from Bavaria, quickly won over his clients thanks to his wonderful personality and his charisma. Enhancing the communal areas with a delicate touch Internationally acclaimed interior designer Bruno Moinard was chosen by the Hotel to redesign the lobby, La Galerie, La Cour Jardin, the Salon Organza (previously known as the Salon Marie Antoinette) and the new ballroom named the Salon Haute Couture. In order to create a spectacular yet discreet atmosphere, without changing the Hotel s concept, Bruno Moinard has placed emphasis on a subtle silver colour scheme complementing the existing features of the Hotel highlighted by light effects, be they natural or electric. The Lobby When entering the lobby, guests will be instantly immersed by Haute Couture. Floral displays add to the welcoming atmosphere and are changed every week. New bronze, marble and brushed oak furnishings have been designed, along with wood panelling on the walls. The Alain Ducasse at Hôtel Plaza Athénée Restaurant François Delahaye and Alain Ducasse appointed the Jouin Manku agency to redesign the new Alain Ducasse at Hotel Plaza Athénée restaurant. Patrick Jouin and Sanjit Manku used their innovative vision for the restoration of these space and embarked on a project using architectural design and playful dimension. In order to create their vision they used the expertise of several artistic craftsmen from the national association Meilleurs Ouvriers de France. Patrick Jouin and Sanjit Manku have created a space that shakes up all the codes of Fine Dining. The restaurant offers a radical and surprising aesthetic with the exceptional know-how of local craftsmen, who helped create the furnishings in particular. Although guests will be in the same restaurant space, the atmosphere will differ between lunch and dinner. The decor, light, table settings, and seating arrangements all play a role in the restaurant s transformation by night. Breakfast can also be served here for Hotel guests only. In conjunction with the products served on the menu, the two designers have chosen authentic materials including tables made of wood, leather and stainless steel. Huge elegant silver bells, that recall the service bells used in aristocratic households in the last century, reflect the crystal drops of the chandeliers. In the evenings only, the back wall opens up to reveal the chef s treasure trove, a cabinet full of culinary objects reflecting a history of tableware. Combining pieces taken from Alain Ducasse s personal collection and elements chosen from the greatest French manufacturers, such as Christofle and Cristalleries Saint-Louis, the aim of this treasure chest is to encourage conversation and enhance the sense of curiosity within the restaurant. The idyllic Bar Patrick Jouin and Sanjit Manku have adopted a bold and creative approach to Le Bar, plunging guests into a distinctive and dreamlike atmosphere. Known as one of the top evening destinations in Paris, Le Bar has been redesigned to create an innovative setting. Using a contemporary style, the space is decorated with a blend of blue and brown tones. The ceiling is hidden under an installation composed of wreaths of fabric whilst the oversized bar in transparent resin levitates within the space. The chairs and sofas are elegantly designed with saddler topstitching, inspired by some of the finest vintage cars in the world. Who is your #PlazaBuddy tonight? Thierry Hernandez and Julien Lambert, respectively bar director and artistic director of Le Bar du Plaza Athénée, have designed a cocktail menu with six categories represented by mascots created specially for the Plaza Bar, a modern interpretation of the hotel s teddy bear. Depicted on the menu and on the coasters, the mascots form a leitmotiv for the Bar, with a unique #PlazaBuddy signature. BESPOKE COCKTAILS Inspired by the habits of today s younger generation, the cocktails are served in glasses specially designed by the Jouin Manku Agency, also responsible for the Bar s innovative décor, and specially hand-blown in Murano. They come in three sizes - small, medium and large - so that clients can order exactly what they want, no more and no less. Another highlight of the cocktails is the possibility of an ephemeral signature on a marshmallow, sitting atop the rim. Guestrooms and suites designed as private apartments For the restoration of some of the guestrooms and suites, the Hotel chose Marie-José Pommereau, who has been responsible for decorating the rooms for the last 14 years. The Hotel now has 154 rooms and 54 suites, having created an additional 14 rooms including eight suites and six guestrooms. Marie-José Pommereau chose a range of warm tones for the walls including peony, suninfused yellow and silver as well as using materials such as damask, embroideries and plain silks from top couture houses to adorn the windows, armchairs and beds. Suite Prestige Eric Laignel Our aim from the beginning has been to create spaces in line with our guests dreams and expectations, in other words guestrooms and apartments that remain intimate and extremely private, which they will be delighted to return to each time that they stay in Paris, as if they were coming back home.

Suite Prestige Eric Laignel Located directly above Harry Winston, the six newly created apartments overlook avenue Montaigne and can be privatised for guests exclusive use as well as being transformed into one apartment. The eight new suites, at 21 avenue Montaigne, above Le Relais Plaza, include two new signature Eiffel suites, a Deluxe suite and a Prestige suite, all decorated in grey with pink or violet tones. As if looking at a painting, the signature suites overlook the Eiffel Tower through a silver-framed window. The other part of Marie-José Pommereau s mission included renovating many of the bathrooms. This technical and aesthetic task was primarily focused on the lighting. Luminous Calacatta grey-veined white marble, sourced from Carrara, was used to adorn the walls, and new mirrors reflect the light to transform these bathrooms into boudoirs of our time.

100 years of history On 20 April 1913, the avenue Montaigne was all astir as the Plaza Athénée opened its doors at number 25 with sixteen guestrooms per floor, apartments on the top floor and a restaurant overseen at the time by chef Jacques-Léon Colombier. The Hotel soon became a new haunt for both composers and artists who regularly ate at the restaurant after an evening performance at the theatre. The roaring twenties evoked the post-war period. It was a time of jubilation and embellishment. The architect Jules Lefebvre was chosen to create the fine apartments, La Cour Jardin, and the Salons Régence and Marie-Antoinette. Le Relais Plaza restaurant opened in 1936: its décor was entrusted to the interior designer Constant Lefranc, who transformed it into an Art Deco temple. It was in 1947 that Christian Dior set up his couture house on avenue Montaigne right next to the Plaza Athénée. Whilst 1968 marked a time of change politically with the student rebellions of May 1968, the Hotel also went through a change in management: Paul Bougenaux in 1969, the former head concierge, organised a staff demonstration to protest against the threatened sale of the Hotel; Franco Cozzo followed his footsteps in 1979 and Hervé Houdré in 1995, who oversaw a major redesign of the Hotel in light of the growing competition. In 1999, François Delahaye became managing director and initiated key changes. He chose Alain Ducasse to supervise the Hotel s catering services and create the menu for the Alain Ducasse at Hotel Plaza Athénée restaurant, which obtained three Michelin stars in 2001. Meanwhile, chef Philippe Marc was appointed at Le Relais Plaza, and acclaimed pastry chef Christophe Michalak was appointed at La Galerie des Gobelins. In 2001, Dorchester Collection announced the acquisition of the Plaza Athénée. Le Bar was redesigned in June 2001 by designer Patrick Jouin and soon became one of the most popular destinations in Paris. Cour Jardin in the 1960's In 2003, Laurence Bloch, the Hotel s manager, commissioned interior decorators Bettina Mortemard and Marie-José Pommereau to decorate the 194 guestrooms, which included 46 suites. Two years later, a 450-square metre Royal Suite opened on the fifth floor and 2008 saw the launch of the Eiffel Suite with unparalleled views of the Eiffel Tower. That same year, the Dior Institut opened at the Hotel and received the Living Heritage Company (Entreprise du Patrimoine Vivant) prize in 2011. It was in 2012 that the Plaza Athénée was awarded the official French distinction of palace, and on 20 April 2013, the iconic Hotel celebrated its centenary, 100 years to the day from when it opened. A time capsule was created to mark the occasion, in which objects from the past and from the present were included to be passed down to future generations for the next 25 years.
