I would like to extend thanks to Goldie Dunaway for leading volunteers while helping with Kids Fest and Brenda Williams for leading volunteers while helping with the health fair! During the month of April, I taught a series of diabetes classes covering hemoglobin A1C, blood pressure, and cholesterol. I taught the Live, Laugh, and Learn Playdate where we read The ABC s of Fruits and Vegetables and had sweet potato pancakes as our snack to go along with the book. I held Cooking Through The Calendar where we learned to make 10-Minute Bean Soup and discussed the nutritional and economic benefits of that recipe. We also hosted the leader lesson training on gardening in small spaces for surrounding counties. I participated in the Baby Gala with Shannon Smith, Bracken County FCS Agent, teaching a lesson on Easy Family Meals. I taught a lesson on My Plate at the health fair for high school freshmen that I planned along with Ashley Kirk, Youth Service Center Coordinator. I also helped run the health fair at Meadowview Regional Hospital. Tuesday, July 25 through Thursday, July 27: Turn your Fresh Food into Pantry or Freezer Staples! Have you ever wanted to can tomatoes, dry apple chips or freeze green beans? It s easier than you might think! And when you join us for a three-day food preservation workshop, you ll learn all the basic techniques to make sure that your food is safe to eat and store. During this hands-on program, you will learn how to safely preserve homemade jam, salsa, and a variety of fruits and vegetables.
Recipe Corner Strawberries are in season from May through June in Kentucky. They are a great source of vitamin A, vitamin C, iron, fiber, and folic acid. Never remove the caps before washing. The cap prevents water from soaking into the berry, which lessens the flavor and changes the texture. Remember to buy Kentucky Proud products at your local grocery store or farmers market!
