4-H Country Ham Project Curing begins. In mid-january youth come to the Clark County to begin curing their two (2) green (fresh) hams. Youth first watch a short orientation video and then receive hands-on experience packing the salt cure into the hock and onto the butt face of the hams. The cost of the project is $60.00 ($30.00 paid by youth and $30 paid by 4-H Council) Youth receive $30.00 refunded at end of project. Those who do not complete project forfeits fee and hams. Youth will also complete project record books during the project. Registration & fee due to by December 1. Enrollment form obtained online or from. Cure It!... Hams are wrapped in white butcher paper and socked! The hams hang in the Clark County Ham House until mid-may. During this time the salt and sugar mixture penetrates the meat exchanging the water in the ham with salt to cure the meat. Wash It!... In mid-may youth return to the to shuck their hams. Paper will be removed from the hams and excess salt mixture washed from the hams. The hams are then re-socked in a fresh sock and hams return to the Ham House for the Summer Sweat. Country Ham Speech Kentucky State Fair... Youth are required to write a 3-5 minute speech and present it at the KY State Fair in August. Topics are pre-assigned each year. Youth compete by birth year on the first day of the KY State Fair (August 16, 2018). In preparation for the speech contest youth are asked to watch a video and answer quiz questions as part of their six (6)hours of required education. Youth will also be asked to present speech prior to KY State Fair in a practice session at Extension Office. 4-H Country Ham, Yummy! Upon completion of the project in August youth are rewarded with one (1) of the two (2) hams that they have cured. The other ham may be purchased by the youth or are sold to community members to help pay for the project. The top two (2) Senior and Junior hams are sold at the Clark County Livestock Show & Sale and top four (4) youth are awarded additional premium money!!
