CBO-750 ASSEMBLY INSTRUCTIONS

CBO-750 Ovens Should be Installed by a Professional or Suitably-Qualified Individual. Support Base The CBO-750 Oven Support Base must: be constructed of masonry or metal have at least the same area dimensions as the external footprint of the Oven You must check with your local Building Department to determine the amount of clearance required by local building codes between the Oven and Decorative Cover. CBO recommends you add at least 8" for the width (4" per side) and 5" for the depth (on the back side of the Oven) to accommodate the Decorative Cover and Insulation. Never use any combustible materials near the Metal Damper assembly. All building materials used near the Metal Damper assembly should be noncombustible and never made of wood. The Support Base surface must be flat, level and strong enough to support the total combined weight of the Oven (480 lbs.) and the Decorative Cover design you choose. The two vertical support feet of the Support Base are typically made of concrete block. The horizontal Support Base is typically made of a 4"-thick, steel-reinforced concrete slab. The standard height of the horizontal part of the Support Base is 42." The Hearth Insulation shown in this drawing is a concrete base. Use the Isol Board (supplied) for your Oven's Hearth Insulation. 2

CBO-750 ASSEMBLY INSTRUCTIONS Hearth Insulation Super Isol Backup Board (supplied) Your CBO-750 Oven comes with a Super Isol Backup Board (Isol Board) that is placed under the Hearth for insulation. Hearthstone (Hearth) The one-piece CBO-750 Hearthstone (Hearth) should be placed on top of the Isol Board with the front face of the Hearth lined up evenly with the front face of the Isol Board. Place the Isol Board between the Oven and Support Base. Do not use any materials (mortar, cement, glue) to attach the Oven to the Isol Board. It is very important that the entire Oven Base come in contact with the Isol Board. The Isol Board must be cut so that it is flush with the front end of the Hearth, the Support Base and the two vertical support feet in order for the final Decorative Cover to fit properly and protect the Isol Board from exposure to moisture. The Isol Board can be cut-to-size with a regular jigsaw. The Oven s decorative finish should be built on top of the Support Base, not on top of the Isol Board. DOME ARCH HEARTH Super Isol Board 3

Oven Dome (Dome) Once the Support Base is built and the Isol Board and Hearth are in place, the Oven Dome (Dome) should be set on top of the Hearth. STEP 1 Set the Dome back from the front edge so the Arch will line up evenly with the front of the Hearth. Next, put the Arch in place with the Metal Decorative Door attached. Make certain the Door and Oven are correctly lined up. STEP 3 Mix a small bag of refractory mortar with water (1 part water for 3 parts mortar) until the mixture has a consistency similar to that of plaster. Do not mix sand with the mortar for the Oven seams. STEP 2 Once everything is properly positioned, mark the outer edge of the Dome on the Hearth. At this point, remove the Metal Decorative Door and Arch. It is very important to have the Dome properly positioned before mortaring. STEP 4 Lift the Dome off the Hearth and place wood spacers around the seam to float the Dome over the Hearth. 4

CBO-750 ASSEMBLY INSTRUCTIONS Arch Facing Stone (Arch) Once the Dome is in place, position the Arch Facing Stone (Arch) with the Metal Decorative Door attached. Be sure to support the Arch and Door while the mortar is setting as the combined weight of the Arch and Door may cause the bolts to pull away from the oven. Make certain the front of the Arch is lined up in the correct position so the Metal Decorative Door will open freely and be flush with the front of the Support Base. Apply a thin set of mortar between the Dome and Arch. Then, apply a thin set of mortar to the outer seam between the Dome and Arch. Use enough thin set to ensure that the seam is airtight. STEP 5 Place a thin set of mortar (no more than 1/4" thick) all around the perimeter of the Hearth directly under the Dome without changing the position of the Dome. Lower the Dome into position on the Hearth. Check your marks on the Hearth to make certain the Dome is still in position. For a final finished look, smooth out the interior seam of the Dome and Hearth. 5

Chimney When building the Chimney, it is important to refer to your local building code standards. Every CBO-750 Oven comes with a metal damper chimney piece coupling which is fitted in place with screws to the pre-installed insert nuts. Once the coupling is in place, use mortar to make an airtight seam between the flue and Oven Dome. The CBO-750 Oven allows for using a 6" diameter, rigid or flexible metal chimney designed for wood fires. NOTE: Never use any combustible materials near the Metal Damper assembly. All building materials used near the Metal Damper assembly should be non-combustible and never made of wood. Again, check with your local Building Department to ensure you adhere to local building codes. Oven Door The Oven Door is fitted to the Oven with the screws going into the threaded metal inserts (supplied) that are built into the Oven Dome. The Oven Door should already be installed when the Arch is attached to the Dome. The supplied screws leave the Oven Door in place thanks to metallic inserts placed in the Arch and the seam that ensure water tightness and act as insulation. Arch Dome Insulation Blanket VERY IMPORTANT FOR CORRECT FUNCTIONING AND LIFE OF THE CBO-750 OVEN! The Oven Dome must be covered with the supplied Ceramic Fiber Insulation Blanket. The Blanket, which withstands high temperatures, should cover the entire surface area of the Dome. You can cut the Ceramic Fiber to insulate around the Metal Damper assembly. Since most heat loss will occur at the Metal Damper and top of the oven, you should ensure these spots are well insulated. You can choose to insulate the Oven further by packing Vermiculite or other non-flammable insulating material above the Blanket. Operating Instructions Please follow these instructions exactly as written. Failure to follow instructions may cause permanent damage to your oven and your warranty may be void. Although your oven may seem dry once you complete the installation process, there are small amounts of moisture pockets that need to work their way out. If you build a large fire in your oven from the onset, you could compromise your oven's longevity and cooking efficiency, and can ultimately cause permanent damage, which may void the manufacturer s warranty. When lighting the first fire, keep the flames low so the moisture can be slowly released from the oven and surrounding masonry work. This curing process should be conducted at a temperature as close to 212 F (100 C) as possible (do not exceed that temperature) for a period of three days. A good suggestion is to build a fire in a separate location and place the coals into the oven. You will generate heat without the flame and the oven will cure as required. Due to thermal expansion, small cracks may appear in the Dome or Hearth during the curing process. Do not worry; this is normal and the quality of your oven will not be compromised. After you have cured your oven and are ready to start cooking, light a small fire and slowly build it up. The interior Dome of the oven will at first turn black from the fire smoke. You will know the oven temperature has reached 572 F (300 C) when the inner walls turn from black to a whitish grey. This is a perfect temperature for many types of cooking. It is a good idea to not exceed this temperature (572 F/300 C) because it may cause serious damage to the oven. The CBO-750 Oven has a low chamber, so you do not need to overheat it like other ovens that have a high chamber. 6

CBO-750 ASSEMBLY INSTRUCTIONS Other Instructions and Cautions CBO-750 Ovens should be installed by a professional or suitably-qualified individual. Although this oven is capable of warming a room, it must not be used as a method of heating and should not be considered as such. Do not throw chunks of wood violently into the oven. Each time you light a fire, make sure the fire covers as much of the Hearth surface as possible. Always use dry wood (dried for at least two years)! If you see moisture coming from the logs while they are on the fire, the wood is not dry. Using wood that is not dry will cause the oven to throw off a considerable amount of smoke and can also cause damage to the oven because of the high moisture content. Cook in your oven at least two times before actually sampling what you have cooked. Test-bake some basic bread dough on the Hearth and throw it out each of the first two times. Then, you can begin enjoying what you have cooked in your new oven. Always pre-warm a large pot or pan before you put it into the oven. If you place a large cold pot or pan on a hot Hearth, the thermal shock may cause the Hearth to crack. You can also add an Oven Rack so the pot or pan doesn t sit directly on the Hearth. Please use extreme caution around the oven. The Oven Dome, Hearth, Arch and Door will be extremely hot when in use and for hours after use. Never allow anyone under the age of 18 to operate the oven. The manufacturer is not responsible for eventual environment damages, nuisance or smoke and carbon particles. Proximity of Combustible Materials Every local building code is unique. Please consult your local building code or your Fire Department for the exact specifications for your community. You are responsible for following all local building codes. 7
