Fellowship Feeling Hungry? Tuscan roast pork belly Serves 6 2.5kg piece boneless pork belly (skin on) 2 rosemary sprigs, leaves picked 1 tbs fennel seeds Grated zest of 1 lemon 4 garlic cloves 2 tbs olive oil 2 cups (500ml) dry white wine 2 onions, thinly sliced Any budding Masterchiefs our there? This recipe sounds yummy and easy to make! 2 cups (500ml) chicken stock 1/3 cup (80ml) dry Marsala* Green beans with pangrattato and lemon wedges, to serve Score the pork skin and fat in a criss-cross pattern, without cutting into the meat. Place pork on a rack in the sink and pour over a kettle of boiling water (this will result in crisp crackling). Dry well. Crush rosemary, fennel, zest and garlic in a mortar and pestle to a coarse paste. Stir in oil, then rub paste into pork skin. Cover and marinate in the fridge for at least 4 hours or overnight. Preheat oven to 220 C. Place pork in a roasting pan and pour over wine. Rub 2 tbs sea salt into skin, then roast 30 minutes. Reduce heat to 160 C and return to oven for 1 hour. Scatter onions in pan and roast for a further 1 hour until skin is crisp and juices run clear. Remove onion and pork from pan and cover loosely with foil. Rest for 15 minutes. Meanwhile, discard all but 2 tbs fat from pan, retaining Cook for 1 minute, then whisk in stock and marsala until smooth. Strain. Keep warm. Thickly slice pork and serve with the green beans, lemon and gravy. See him on May 23rd Page Page 2. 2

A shoe box can certainly hold a lot of items and also is a personal way of donating whatever you can do...a little or a lot all helps. We are seeking shoe boxes filled with babies clothing from sizes 0000 to 1. The types of clothing sought are grow suits, singlets-long and short sleeve, socks, baby nighties. Would love hand knits, matinee jackets and beanies but not bonnets. Ask your neighbors, take a shoe box to work and ask your staff to fill it, ask members of family, even fill the box with a samll cash donation. Fellowship The Wembley Wheel of Friendship By John Meehan, D9800 Historian Many Rotarians will be familiar with the wonderful tradition passed onto to every new Club in our District since 1964. Apart from a slight hiccup when RC Docklands was chartered in April last year, it resumed its journey when President Geri Charles of RC Port Melbourne presented their club meeting on 20 th April. As District Historian, I was present to relate the history of this unique tradition that really began in 1934, when RotarianTed Garner of RC Wembley, UK was host to many young Australian pilots in his home during the Battle of Britain. He wished to recognize the heroic part they played to save his country. When Ted was able to visit Australia in 1964, he had designed a trophy that he presented as a gift to Royce Abbey then President of RC Essendon. It was decided then that this trophy would be handed onto the President of each new Club in D9800 at their Charter event. Since 1964 the trophy, in the form of a small wooden bookcase containing an inscription below the Rotary wheel and a list of each club, date chartered and signed by the President, has passed down to 76 clubs and remains in good condition. temporarily to RC Essendon in May when members of RC Wembley Wisden (UK) will visit Melbourne to attend the 75 th birthday celebrations of RC Essendon and revisit many friends and memories of their long relationship.
