5 This is our 22nd year and in this brochure are details of the finest, luxury hotels in Scotland. Driving in the Scottish countryside is a pleasure. Not for us traffic jams and congestion, but a network of some of the most beautiful roads in the world, such as the Road to the Isles, which runs from Fort William to Mallaig. On the west coast you will find the most spectacular views of whitewashed cottages looking out to the sea and on the east coast you will find evidence of the whisky industry, distilleries, a cooperage, and more castles than you can imagine. 9 Homecoming Scotland 2014 is a year long programme of events to celebrate the very best that Scotland has to offer including our food and drink, known to be amongst the best in the world, our active and natural resources, our creativity, culture and heritage. These events, which can be found on the VisitScotland website, will offer everyone, whether Scots or not, a myriad of activities that will showcase this, the best small country in the world. Come and explore some of the most beautiful countryside and biodiversity in the world. The National Park of Loch Lomond, with its 21 mountains, 22 lochs and 50 rivers is about 30 minutes from Glasgow. Glentress Forest where you can walk for hours without seeing any buildings is about an hour from Edinburgh. The North West coast, one of the most beautiful sailing or walking areas in the world is just two hours from Glasgow. The journeys to these breath-taking landscapes are not on some soulless motorway but on quiet and even deserted roads that take you past distilleries which welcome visitors, with the occasional glimpse of a wild deer, a red squirrel or the famed golden eagle. With many of our hotels, it has been said that the journey there is an integral part of the enjoyment of the visit. Certainly that is the case for our more northern properties- The Torridon, Kinloch Lodge on the Isle of Skye and Inver Lodge. When I drive there I pass by such places as The Firth of Lorne, Loch Linnhe, The Sound of Sleat and Loch Maree. Their evocative names are amongst the most beautiful places on earth. If you are visiting Seil Island you have the opportunity to drive over the bridge over the Atlantic. This spectacular countryside in Scotland is just waiting to be enjoyed. 9

10 Cycling Walking ranges from an informal stroll alongside a river bank in one of the town centres to something a little more strenuous - the West Highland Way, which is a long distance footpath of about one hundred miles from Milngavie near Glasgow to Fort William. For hill climbing aficionados there are 283 Munros above 3,000ft, all waiting to be bagged, 222 Corbetts of between 2500ft and 3000ft and 224 Grahams of between 2000ft and 2500ft. Golf There are many experts and organizations who will provide assistance and help in how to approach these more energetic walks and anyone setting out should take appropriate care. 10

11 Mountain biking is becoming increasingly popular and there are many highly regarded centres in Scotland. Glentress near Peebles is regarded as one of the finest biking centres in the world, The Nevis Range and the nearby area of Lochaber offers a range of mountain bike trails including cross country trails, white-knuckle rides and relaxing forest trails sympathetic to younger, inexperienced riders. The Mountain Bike World Cup takes place at Fort William and other centres of biking excellence are at Ae and Dalbeattie, both in Dumfries and Galloway. Golf needs little introduction in Scotland and we are fortunate to have four international golf resorts within our little group. One of the greatest golfing events in the world, The Ryder Cup, will be taking place at The Gleneagles Hotel in September. But in addition, Cameron House on Loch Lomond, Muirfield, St Andrews, The Trump International and Turnberry are well known centres with their own individual personalities that match anywhere else in the world. There are also hidden gems of courses, off the beaten track, such as The Western Gailes at Irvine, Machrihanish, Royal Dornoch, Cruden Bay and Kingsbarns. 11

12 Scotland offers young and old alike a wonderful range of locations to view wildlife in its natural habitat. The Moray Firth is a key wildlife spotting area where you will find dolphins, otters, seals, porpoises and the occasional whale. In the skies you will find ospreys, the elusive red kite and pine martins. Noss in Shetland has gannets, guillemots and kittiwakes, Ailsa Craig, just off Turnberry from where the granite comes for our curling stones has 36,000 pairs of gannets although there are far more at The Bass Rock which is the biggest island gannet colony in the world. Handa Island, near Inver Lodge Hotel is home to the Great Skuas and to access the island by the little ferry and then experience the Skuas who swoop over your head at low level is wonderful entertainment. There are no roads on the island and the only building is accommodation for the rangers and researchers who look after the 100,000 birds on the island. In the Glenmore Forest Park you will find red squirrel, red deer, roe deer, otters, mountain hares and wildcats, the largest mammal predator and the only remaining wild feline species in the British Isles. Red Deer can be found in many areas, from Dumfries and Galloway to The Cairngorms. The rut is the start of the breeding season for deer and this provides a visual and vocal spectacle as stags [male deer] vie for the attention of the hinds [female deer]. This takes place in autumn and the Beinn Eighe and the Creag Meagaidh reserves in Wester Ross and Laggan are good places to see this phenomenon of nature. Whisky has been distilled in Scotland for 500 years. Most of our distilleries welcome visitors with a guided tour and then a chance to sample uisge beatha, the water of life which we call Scotch whisky. From Bladnoch, the most southerly distillery in Scotland which is near Turnberry and Knockinaam Lodge to the most northerly, Highland Park in Orkney, you will find a whisky that fits your palate. My personal preference is Speyside, the whisky producing area which lies between Boath House which is near Nairn and The Marcliffe Hotel and Spa in Aberdeen. As you drive from one distillery to another you will see more castles per square mile than anywhere else in Britain and also have the opportunity to visit a cooperage which makes casks, barrels, hogsheads and butts in which to store the precious liquid. Perhaps that is why I find myself visiting these properties so often. 12

13 Art and Scotland have always been synonymous. In our museums you will find carved stone balls from the Neolithic age and carvings from the Bronze Age. Dotted around the countryside you will find Pictish stones from the Middle Ages and now a more contemporary style, landform art, examples of which are to be found in front of The Scottish National Gallery of Modern Art in Edinburgh and at the St Ninian s site near Kelty, which is being transformed into a huge outdoor landscape art project. Scotland is fortunate to have a range of world class museums and art galleries. In Glasgow, Kelvingrove has 22 themed, state-of-the-art galleries displaying an astonishing 8000 objects. Private, out of hours visits can be arranged. The Burrell Collection, named after its donor, the shipping magnate Sir William Burrell is one of the greatest collections ever created by a single person. Sir William originally lived in the building which now houses One Devonshire Gardens at Hotel du Vin and an original stained glass window is there for all to enjoy. Edinburgh is well blessed with numerous art galleries and museums including The Scottish National Gallery, The City Art Centre, The Museum of Edinburgh and The Museum of Childhood. Opened in May 2009 by Paul Kitching and his partner Katie O Brien, has received critical acclaim with the dining experience described in the press as an indulgence that will leave you awestruck. Only months after opening, the restaurant was awarded a Michelin star while the four individually designed bedrooms blew away the judges at the Scottish Style Awards when received the honour as the Most Stylish Hotel in Scotland. 22 Built by one of Scotland s foremost architects almost 200 years ago this Georgian mansion sits in 20 acres of manicured gardens, lawns, trout lake and woodland. 29 Just five miles from Dunblane, equidistant from Edinburgh and Glasgow, you will find the newly refurbished Cromlix, an elegant Victorian mansion. Tennis, brown trout fishing and archery are available on the 34 acre estate, salmon fishing, golf and hunting are all provided nearby. Elsewhere, the surrounding countryside offers a myriad of things to do and places to see. Stirling Castle, one of the most important Scottish castles, where many Scottish kings and queens have been crowned is nearby, as are Bannockburn and The Wallace Monument. 34 On the coast of East Lothian, overlooking Muirfield Golf Course and the Firth of Forth, lies Greywalls, a warm honey coloured stone building designed by Sir Edwin Lutyens in Originally built as a private house, Greywalls was one of the first country house hotels in Britain. 77 Many people, when they cross the border on their way to Scotland continue north until they reach Glasgow or Edinburgh. But if they were to take a left turn they would soon find themselves in Dumfries and Galloway, a beautiful, yet relatively quiet part of Scotland. The area surrounding The Solway Firth has many pretty villages and attractions, such as Caerlaverock Castle, Sweetheart Abbey, Glenluce Abbey and the magnificent Drumlanrig Castle. There are festivals to suit every taste. The Wigtown Book Festival is a ten day literary celebration of Scotland s national book town. The Wickerman Festival is based on the cult movie and The Wild Spring Festival features red deer tours, badger watching and a whole host of family activities. The warm currents of The Gulf Stream have created numerous gardens which are well worth visiting. Logan Botanic Garden has many varieties of subtropical plants, Threave Garden, number 2 in the top 10 best gardens to visit in UK is a mass of colour throughout the year and Crichton offers 34 acres of landscaped gardens with wonderful views over the Nith estuary. There are also a number of smaller gardens, such as Woodfall with its 'secret garden' atmosphere, and Glenwhan. Having taken in all of this, a perfect place to unwind is Knockinaam Lodge at Portpatrick. The hotel is the house mentioned in John Buchan s book, The 39 Steps and it was where Sir Winston Churchill met General Eisenhower and their Chiefs of Staff during the war. The hotel has had a Michelin star for 20 years and local flavours dominate the menu. If the landscape doesn't take your breath away, the food will. A little further north is Turnberry, A Luxury Collection Resort, which is in the heart of the countryside immortalized by Robert Burns. With two Championship golf courses, The Turnberry Performance Golf Academy, a spa and a myriad of other activities this 5 star hotel has something for everyone. Culzean Castle, another of General Eisenhower s favourite haunts is nearby and well worth a visit. The area is where Robert Burns, widely regarded as the national poet of Scotland, was born and worked as a farm labourer and as you travel around you will be constantly reminded of the life and works of the Bard. The Robert Burns Birthplace Museum is at Alloway and Souter Johnnie s Cottage- the former home of cobbler or souter John Davidson, the real-life Souter Johnnie immortalised in the Burn s poem Tam o Shanter is at Kirkoswald. Astronomers can go to The Galloway Forest Park, Britain s largest forest park which is the first Dark Sky Park in the UK. Here, between the clocks going back in October and then forward again in April you will find a near to total darkness, ideal for stargazing So whether you are driving north or south take some time to visit this, rich historical corner of Scotland. 80 NATURAL SCOTLAND ON A PLATE Author: JEREMY HAWKINGS Chief Executive One of the very nicest things about life is the way we must regularly stop whatever it is that we are doing and devote our attention to eating. Luciano Pavarotti. Scotland has been richly blessed with much of the finest food in the world. From the North Sea comes white fish of extraordinary quality, plaice, halibut, Dover sole and turbot- so fresh that the flesh is often translucent. From the warmer waters of the west coast come a range of crustaceans, lobster, mussels, prawns, scampi, oysters, clams and scallops. Throughout the year our hotel kitchens, shops and farmers markets feature a range of foods that will have travelled yards rather than miles. Not for us French beans that have been flown in a jumbo jet from the other side of the world, we prefer local foods gathered from the hills and fields of this, the most beautiful small country in the world. In the hills and the glens you will find what many people consider to be the very best beef in the world- Aberdeen Angus which has its ancestral roots at Ballindalloch Castle, not far from Boath House. Rhubarb was first commercially grown a stones throw from the centre of Edinburgh. Our salmon, either fresh or smoked is acknowledged as the finest in the world. Venison and game from the highlands, heather fed lamb from our hills and a wide range of berries from Perthshire add to this cornucopia which is Scotland s larder. Our chefs all have this on their doorstep and they make best use of it. For them, provenance is key. When I speak to people who have stayed in our hotels, I ask them what surprised them most about their visit to Scotland. Some say the friendliness of the locals, other the quiet roads which are a delight to drive on, but by far, most people tell me that they never realized that our food was so good. So, when you are in Scotland look out for this very local produce which will be on our menus. 80

81 In January fish and seafood is at its best. You can expect lobster, sea bass, scallops and clams. Some of the best scallops in the world come from the west coast of Scotland, from Knockinaam in the south to Lochinver in the north and these are hand dived. Rustic vegetables are also at their prime, green broccoli, celeriac, celery, leeks, red cabbage, early spring greens and turnips. In February, halibut and mussels come into their own. Haddock, the only fish that can be used to make the traditional Arbroath Smokie, is in prime condition. The Marcliffe Hotel and Spa serve an exquisite warm salad of Arbroath Smokie- well worth a visit. Some guinea fowl will be available as will fresh parsley. Early East Lothian organic rhubarb will appear at the farmers markets. In March, expect more rhubarb which by this time of the year is grown throughout Scotland, purple sprouting broccoli, which as a child I was allowed to eat with my fingers, leeks and watercress. Wild trout is available throughout Scotland, from the lochs of Shetland to the tumbling waters of the Tweed. Lobster and sardines are also freely available and to accompany them, ask for samphire which is also used in salads. April brings cockles from the Solway Firth and early spring lamb from the hills. Rosemary and wild garlic are also in season which complement this very tender meat perfectly. 81

82 May heralds the arrival of the first asparagus. The season may be very short but it is well worth making a special visit to Meigle, near Forfar in June to experience the freshest and finest asparagus available. New potatoes also appear for the first time and those from Ayrshire and East Lothian are renowned- best served drenched in butter. In June the fields of Perthshire are full of berries, cherries, gooseberries, raspberries and red currants, strawberries of course and tayberries. The freshest way to enjoy them is to pick your own and many farms allow this. In Fife and the west coast, crabs are at their best, with grey mullet and salmon which is caught all over the country. In July blueberries, gooseberries, loganberries and raspberries are available from Perthshire and Angus as are clams from the west coast. Wild trout and pilchards are plentiful. August is best known for grouse and The Glorious 12 th heralds the start of the season for shooting red grouse. Also widely available are hare and venison from the highlands. 82

83 September brings the late fruits, apples, damsons, plums and pears which are the prefect accompaniment to game. Autumn lamb is very good with the maturity of the meat improving the flavour until the end of the month. Grouse, partridge, venison, wood pigeon and wild trout are all available. Oysters come into season and mussels are still good. October is known for late apples, elderberries and figs and pumpkin which is the base for a rustic autumn soup. Game is still in season and guinea fowl appear in the shops. November brings chestnuts, cranberries, more pumpkin and quince, pheasant and teal, wild salmon and goose. In December Brussels sprouts come into their own with winter squash to accompany the traditional roast turkey or goose- free range, organic and local of course and Gartmorn Farm in Clackmannan in the heart of Scotland produce some of the best. To accompany these local fresh foods, some local fresh water carefully drawn from Highland Spring s protected organic source in the Ochil Hills of Perthshire is the perfect accompaniment. Highland Spring also produces Speyside Glenlivet Natural Mineral water which is bottled at source in the Crown Estate of Glenlivet, near Ballindalloch, drawn from Scotland s highest spring in the Braes of Glenlivet. Bon appétit, or as is said in Gaelic, Ith gu leòir! 83
