Hato Verde is still a working dairy ranch covering 86 acres run by the Mora Bowen family, who are the original owners. The dairy produce is sold in the area, although some goes into the production of cheese, butter, yogurt other products used in the Hacienda s restaurant. You can t get much fresher than that! The insecticide-free vegetable garden produces wonderful items also used in the restaurant. As you can see, the owners are very eco-conscious, and other policies cover recycling, composting and even tree planting. That s also why you may walk into an un-lit room: staff are trained to turn off lights when rooms are unoccupied. 10 luxurious rooms (for a maximum occupancy of 18 people) have private bathrooms and a fireplace.
