16 Food tour in Rimini Discovering the flavors of tradition until March 31, 2018 The gastronomic route starts from the covered market of Rimini, a way to understand how even today the sea is always present in the atmosphere of the city. Among the fish stalls we will meet the historic banks managed by fishermen's families and next to them the multicultural market. We will stop at a popular bank of cheeses to sample the local delights: Squacquerone and Pecorino Fossa cheese. We go deep in the alleys of the old fish market (eighteenth-century jewel), and tell the lives of those who came to sell the fishes in the small square of clumsy (clams square). 17 Experience in the cellar An ancient legend tells that some centuries ago, the Franciscan friars of Santarcangelo di Romagna were great producers of red wine. One day during a banquet with an illustrious guest was offered the best red wine of the cellar. The guest was so delighted and immediately asked its name. 18 Oil mill experience The province of Rimini produces 78% of oil produced throughout the Emilia- Romagna region. Oil is renowned for its organoleptic abilities. The oil is characterized by a good balance between sweet and bitter with hints of fresh leaf and green almond, medium spicy with a high overall level of harmony typical of high quality oils. This oil has earned the recognition of the Protected Designation of Origin (D.O.P.) "Colline di Romagna" by the European Union. 19 Fossa cheese experience Not available: 6-10 / / Nov. and 1-3 Dec. Historical documents say that since 1255, in the territories of the Malatesta family, the cheese was dug into the holes, perhaps to protect it from predators. Once unleavened the cheese had changed its characteristics, the product liked so much so that since then, rules were established for which the cheese had to be buried in the holes at the end of August, unearthing it on 25 November, the day of St. Catherine. Mondaino is a bit like being in the middle of the world, a very small world.
