8 SUDQI NADDAF, EXECUTIVE CHEF A creative and inspiring chef who has made it his mission to put Middle Eastern cuisine on the international culinary map, Executive Chef Sudqi Naddaf oversees all kitchen operations for Kempinski Hotel Mall of the Emirates. Chef Naddaf was the first Jordanian Executive Chef to lead the opening team of a five-star property in his home country and was responsible for setting up the kitchen operations for both, Kempinski Hotel Ishtar Dead Sea and Kempinski Hotel Aqaba. Prior to the opening of the Kempinski Hotel Amman, Chef Naddaf served as the Executive Chef at Kempinski Hotel Julai a in Kuwait. His impressive tenure at Kempinski lead to his appointment as the regional champion for Kempinski The Spa Cuisine. Chef Naddaf has years of valuable experience at various restaurants and hotels in Jordan and the GCC. In addition to Middle Eastern cuisine, which is his specialty, Chef Naddaf has trained in a variety of international culinary styles including sushi making and Italian cuisine, and has worked at restaurants specialised in classical French cuisine. His diverse culinary training has influenced his palate and preparation techniques and led to a passion for creative experimentation and the creation of signature fusion dishes such as date sushi. Chef Naddaf enjoys quite a bit of notoriety in Jordan where he hosted an extremely popular call-in cooking show called Baity on which he dispensed cooking tips to thousands of regular viewers. THE AWARD WINNING CONCIERGE TEAM... GERARDO GABAT, CONCIERGE OF THE YEAR 2012 Gerardo, a member of the Les Clefs d Or UAE Chapter, joined Kempinski Hotel Mall of the Emirates in the position of Assistant Chief Concierge in January 2008 and was promoted to Chief Concierge in October In 2008 Gerardo managed the preparation for his team s participation in the Concierge Awards that year, which resulted in the team s win of the Judges Team Award. GRANT RUDDIMAN, GENERAL MANAGER Grant Ruddiman is a consummate hospitality executive with a notable track record of achievement spanning three decades. Energetic and dynamic, Ruddiman is regarded as a true hotelier having successfully achieved over 30 years in property, regional and corporate hospitality roles, across four continents. Most recently, Ruddiman has been with Jumeirah Hotels and Resorts, having joined the group s Middle East operation in Considered an opening and change management specialist, Ruddiman has been part of eight property openings, lead multiple refurbishments, and has steered numerous corporate upgrade and business re-engineering projects. Ruddiman s unique approach to leadership, and his unwavering emphasis on standards, quality and service, supports his ability to establish high-performing teams focused on leveraging revenue-generating capabilities and profitability. 20 awards and commendations, received for his contribution to the some of the leading hotels and luxury brands in the industry, distinguish his accomplishments. 10 SIGNATURE DISH Slow Cooked Beef Cheeks in Demi-Glace Our Executive Chef Sudqi Naddaf, who hails from Jordan, has made it his mission to put Middle Eastern cuisine on the global culinary map. In 2012 the hotel revamped its lobby café into a high-end luxury lobby lounge named Aspen by Kempinski, and the menu was changed to feature a wide range of classic European specialties. Aspen s signature dish, slow cooked beef cheeks in demi-glace, is the perfect representation of Sudqi s culinary style. The preparation of the beef as a confit, marinated for 4 hours as per the traditional French stew recipe, represents the European roots of Kempinski. Chef Sudqi then worked on the dish to adapt it to the local market by cooking the beef as per the local taste; well done and tender at the same time. In addition to the meat, the saffron he adds to the rice gives the dish a unique Middle Easterner flavor. Our signature dish represents Europe through the cooking techniques, and the Middle East through the oriental spices added to it. This has been extremely well received by the hotel s guests and has become one of the best selling items on the menu of Aspen by Kempinski. SIGNATURE DISH Slow Cooked Beef Cheeks in Demi-Glace 9

11 Ingredients: 300 gms beef cheeks 50 gms carrots 50 gms celery 45 gms leeks 150 ml demi glace 10 gms thyme 10 gms tarragon 10 gms rosemary 100 gms tomatoes 15 gms salt 8 gms pepper 5 gms garlic 20 gms onions ml gms olive oil Cajun spices 30 ml red and white wine Method of Preparation: 1. Pre-heat the oven to 180c 2. Marinate the beef cheeks with salt, black pepper, and Cajun herbs. Lightly roll each piece of meat in flour. Drizzle heavy pan with olive oil. Make sure the pan is smoking hot before starting to sear the beef on each side 3. Set aside the seared beef 4. Drizzle a second heavy medium-sized pot with olive oil. When the oil is heated, start caramelizing the vegetables starting with onion, carrots, leeks and fresh tomatoes in that order 5. When the vegetables are starting to caramelized, pour some red and white wine into the same pan and bring to a boil for about 5 minutes. Add demi-glace and boil for another 5 minutes then add the tomato sauce and BBQ sauce and bring to a boil for about 15 minutes 6. After 15 minutes the sauce will be reduced. Add the herbs just before removing from the heat 7. Prepare a medium oven tray by pouring half of the sauce into the tray, then place the seared beef cheeks and the remaining sauce in the pan. Cover with aluminium foil and put it into the oven and cook the beef for 4 hours at 180c or until the beef cheeks are very soft 8. Serve over saffron risotto 10
