1 Turn OFF Cooker With the filter tank under the cooker, slowly open the drain valve. Remove the cook basket and tilt the lid back for cleaning. Cooker and cook basket surfaces will be extremely hot. Take care when handling cook basket and cleaning cookpot. Filter only when temperature is between 121 C and 148 C, and computer display panel reads COOL. Wipe bottom of lid with clean, damp blue Turn power/pump switch OFF before draining oil. Wear insulated heat resistant gloves, goggles (or face shield) and insulated apron when working with hot oil. cloth. Use L-shaped brush and straight brush to clean cracklings from heating elements and from sides and bottom of cookpot as oil drains. If needed, use drain cleaning rod to push cracklings through drain opening in bottom of cookpot. Scrape cracklings and crackling ring from cookpot and discard. Do not let these cracklings drain into filter tank, because they can cause a burnt taste if used in gravy. Refill and drain as necessary to remove all cracklings. Wipe all surfaces of cookpot and cold zone with clean, damp, sanitized blue cloth. If water drops into cold zone, dry with blue clothe before pumping oil back into cookpot. Cookpot must be completely dry before refilling. Remove cracklings from crackling basket and drain in cone filter before filtering. Failure to remove cracklings could cause overflow from crackling basket and could clog filter paper. Lower cookpot lid. Be careful not to pinch fingers between lock and roller or lock and frame. 2 Make Sure Filter Pan is Under Cooker and Lock into Place Make sure that the filter pan is as far back as it will go and latched in place. If not fully seated and latched, the hole in the filter tank cover will not be directly under the drain line and oil will drain on the floor, which could cause burns or personal injuries. Drain Oil and Fines Open the drain valve to drain the oil into the filter pan. Old Electric Connect the filter hose to the filter tank Plug Filter Power lead into Cooker Outlet Old Electric - Plug the filter power lead into cooker outlet. Remove & Clean Cooking Basket New Electric - Remove the fines catcher from the cold zone and empty the fines into the conical filter. Close the valve. CAUTION! Wear safety gloves. Remove the cooking basket and clean, using the 3-step cleaning method. Allow to air dry. Tilt Lid to Clean Position Pump half the oil back into the cooker. Clean Cooker Tilt the lid to the cleaning position and wipe down the bottom of the lid with a dry blue cloth. CAUTION! Wear safety gloves. 2 of 5

3 Scrape fines and fines ring from the sides of the cookpot and with a scraper. Wash Fines Catcher Wash, Rinse and Sanitise fines catcher using 3-Sink method. Dry thoroughly with a dry blue cloth. Open valve again and drain into filter pan. Pump Oil Into Cookpot Turn POWER/PUMP switch to OFF. Connect the filter hose to the cook pot fill line. (Old Electric) Replace fines catcher in the cold zone using the hook. Lower lid to lower lock position. Old Electric Model Connect the filter hose to the cook pot fill As the oil drains, use the L-Shaped Brush to clean fines from the heater coils and from the sides and bottom of the cookpot. Use the straight brush to push fines through the drain opening in the bottom of the cook pot if necessary. line, and lower the lid. Use the swing lock pin to hold the lid in the lower position to keep oil from splashing out of the cook pot. Close the drain valve by pushing the handle all the way in. Turn POWER/PUMP switch to PUMP. When all the oil has been pumped into the cook pot, turn the POWER/PUMP switch OFF. To prevent the clogging of the pump make sure the filter hose is disconnected from the cooker and connected to the filter tank housing (quick disconnect coupling located on the filter). Unplug the filter pan power cord/lead from the cooker, and put it into its housing on the filter system. If this is not done then the power cord could be pulled out and damaged when the filter is moved. The filter pan can stay under the cooker 3 of 5

4 Gas/New Electric Model Close the lid with the lid latch Oil level must be above the heating elements, and should be on the lower oil level mark in the cook pot before heating. Add fresh oil as required. Follow the OIL MANAGEMENT CSL for correct method of topping up oil. Turn the POWER switch to ON, display reads COOL. Use safety gloves when pouring hot oil. Close drain valve and pump oil back into cook pot Clean the floors around the cookers this can only be done in the morning before the cookers are switched on. Before cooking the next round, check the oil level when DROP is displayed. Add oil if necessary If cooking within ten (10) minutes, press EXIT COOL, press button for number of heads to be cooked if cooking again. EXIT COOL Turn power/pump switch to OFF when air is pumped into cook pot. After display reads DROP, top up oil if necessary. DROP Raise lid. Add Oil if Required 4 of 5

5 If not cooking within ten (10) minutes, leave cooker in COOL mode. Remove and empty condensation pan and clean using 5 step method then replace in cooker. Wipe the outside of the cooker with damp blue cloth and KAY Glass and Multi-surface cleaner. 5 of 5
