Specialty Suites Manila Suite The Manila Suite is named after the capital city and seat of government of the Philippines. Commonly known as Metro Manila or the National Capital Region, it is composed of the districts of Manila, Makati, Mandaluyong, Malabon, Marikina, Muntinlupa, Quezon, Caloocan, Las Pinas, Navotas, Paranaque, Pasay, Pasig, Pateros, San Juan, Taguig and Valenzuela. Earliest evidence of human life in Manila dates to 3,000 BC. The Kingdom of Maynila flourished during the latter half of the Ming Dynasty as a result of direct trade relations with China. Ancient Tondo was the traditional capital of the kingdom, with its rulers as sovereign kings addressed as panginoon (lord in Tagalog), anak-banwa ( son of heaven ) or lakandula ( lord of the palace. See illustration on the right). In the 13 th century, the city consisted of a fortified settlement and trading quarter at the shores of the Pasig River. Manila was then invaded by the Indian empire of Majapahit, followed by the Bruneian Empire, before it became the seat of the colonial government of Spain in

5 Luzon Suite The Luzon Suite is named after the northern group of islands in the Philippines. The word comes from the Tagalog word lusong, which is a large wooden mortar used in dehusking rice. In the 12 th century, local potters created and exported clay jars to Japan for storing green tea and rice wine. These jars were known as ruson-tsukuri in Japanese, literally Luzon-made. Of this flourishing trade, the Burnay jars of Ilocos province continue to this day. Visayas Suite The Visayas Suite is named after the central group of islands in the Philippines, where Cebu, Bohol, Boracay, Bacolod, Dumaguete, Leyte and Samar are clustered. The word Visayas is derived from the name of a 7 th century maritime Malay empire, the Srivijaya. Early settlers of this group of islands were animist tribal groups. Visayans kept close diplomatic relations with Malaysian and Indonesian kingdoms until the Portuguese explorer Ferdinand Magellan arrived in Cebu in 1521 under the service of King Philip II of Spain. The Visayans were also known as Pintados ( the painted people. See illustration on left) by the Spanish colonists due to their tattooed bodies. Mindanao Suite The Mindanao Suite is named after the southernmost group of islands in the Philippines. This group of islands are named after the Maguindanao tribe who constituted the largest sultanate in the country. Native people of Maluku islands in Indonesia referred to Mindanao as Maluku Besar (Great Moluccas). Islam first spread in the region during the second millennium through Arab traders from present-day Malaysia and Indonesia. Prior to this contact, the inhabitants of this vast area were primarily animists. The Mindanao region is home to many ethnic groups such as the Maranao, Tausug and Sama-Bahau, users of the vinta (see above), a uni-sail boat. 5

9 High Street Cafe is a modern food hall where diners are engaged by nine uniquely designed live kitchens, offering a colourful diversity of cuisines from Continental, Rotisserie, Seafood and raw bar, Mediterranean, Salad and greens, Japanese, Chinese, South East Asian and Sweet spot. Fresh, seasonal ingredients are the focus at each kitchen, where tasty signature dishes are prepared in front of the guest, and are also available as retail items. According to Shawn Sullivan, Partner at internationally acclaimed design firm, Rockwell Group, who designed the space, High Street Café is based on the idea of a chef s library, a vast collection of international cuisines, ingredients, and cooking techniques. A bookcase architecture unifies the space. Custom shelving filled with books, art, and accessories that speak to specific food offerings and regions define chef stations and create fluid, intimate dining environments where guests can engage with the chefs. The design by Atlanta-based Hirsch Bedner and Associates include floor-to-ceiling windows that invite natural skylight in, gilded curves, jewel hues and plush sofas. Smooth jazz music add to the elegant yet comfortable setting, perfect for an elegant and engaging atmosphere of repasts and conversations. It has one of the most extensive tea and other beverage selections in town, with a focus on high tea amidst smooth jazz and modern music. 9

It s a flavor-forward, offbeat locale with a conscience and a rock star attitude. Flavorful cuts of rump, chuck and brisket from Raging Bull Chophouse are dry-aged, then marinated in Raging Bull s secret seasoning mix before being minced into ground patties right in front of the customer. Located on the corner of 30th Street, those on the go can literally grab a bite at Raging Bull Burgers in between appointments and meet-ups. The organic grass-fed burgers are complemented with a range of fun beverages such as frothy milkshakes, craft beer, micro-brewed sodas, easy wines and homemade lemonade. Transitioning from laid-back lounge to energetic night club, it provides the full spectrum of overall enjoyment with its vast choices of beverages: from barrelaged to artisanal cocktails, mixology, great whiskey selection, craft beers, fun punch bowls and full bottle service, complemented with creative bar chow, opulent interiors and inventive music mixes from topnotch DJs, igniting more choices for night owls who are at the pulse of worldwide trends. We conceived Limitless as a modern speakeasy inspired by the beauty of jewels, said Shawn Sullivan of Rockwell Group. Guests enter the nightclub through a sleek wooden tunnel influenced by the interior of a handcrafted jewelry box. The layering of mirror, polished metal, glass, and rich emerald green and sapphire upholstery have created a plush, cozy see-and-be seen environment for dancing, lounging, and socializing. Shopping Choices An extensive selection of innovative and iconic lifestyle brands and trendy dining concepts will set shop at the retail podium of Shangri-La at the Fort, Manila, making the property an exceptional 14

FOO D by Davide Oldani: An exciting dining concept by celebrated Davide Oldani, serving Michelin-star cuisine at fair prices. In a recent Wall Street Journal article, Oldani has been cited for his distinctive Cucina Pop style what he calls an Italian spin on democratic fine dining and for seeking innovative solutions to culinary conondrums. Brotzeit: A contemporary restaurant offering Bavarian cuisine and imported German beers. Toby s Estate: Specialty coffee roasters with locations in Australia, United States, Singapore, Malaysia, Indonesia and the Philippines. LEED Gold Certification As a landmark, mixed-use development, Shangri-La at the Fort has received a LEED Gold certification, indicating the property s achievement of environmental goals set by performing and maintaining the highest standard of sustainable design. LEED, which stands for Leadership in Energy and Environmental Design, is based upon a point system. Gold certification means that Shangri-La at the Fort has accrued optimal credits in five green design categories: sustainable sites, water efficiency, energy and atmosphere, materials and resources, and indoor environmental quality. As an example of water efficiency, Shangri-La at the Fort s potable water is treated with UV filtering devices and undergoes a monthly potability testing taken from different sampling points. In addition, to ensure that the fire services system is prepared for any emergency, the property has a dedicated water tank, amounting to 300 cubic meters, that supplies the fire sprinkler and fire hose reel system. 21

22 By providing third-party verification and a defined, manageable framework for sustainability, Shangri-La at the Fort makes a positive contribution to the urban landscape and reducing carbon footprint. 24/7 Security Shangri-La at the Fort security personnel operate on a standard set by the Group s Security as far as responses to a critical and emergency situations. The property has its own welltrained and experienced security team who keep the property safe and secure at all times, and maintain a close relationship with the local emergency services. The hotel guestrooms and facilities in all key components are equipped with a Fire Detection and Alarm system, Automatic Sprinkler Protection and Special Fire Protection Systems. Shangri-La at the Fort has 11 emergency stations equipped with breathing apparatus, fireman s suit and other essential equipment for the quickest response to any emergency. The emergency station is also equipped with evacuation chairs to aid persons with disabilities (PWDs) during evacuation. The hotel has two positive pressurization emergency exit staircases that pass through every floor, and smoke curtains are installed in critical guests areas to compartmentalize smoke in the event of fire. The property has an Emergency Response Team composed of well-taught engineering and security personnel, duty managers, outlet and housekeeping staff, who undergo rigid training and Basic Life Support, First Aid Firefighting seminars by local authorities and certified organizations. Furthermore, an internal Fire Fighting Team conducts regular fire and emergency evacuation drills with various scenarios to ensure timely response and positive action. Food Safety In the case of environmental considerations and to keep ahead of hygiene and sanitation requirements, has one full-time food safety and hygiene specialist to ensure that the property s food safety and hygiene standards are continuously monitored and updated. 24 Ang-Supremo: artist Ben-Hur Villanueva s tribute to National Hero and BGC namesake Andres Bonifacio. The 3-meter brass and bronze sculpture is a tribute to the working class hero. Transformation: a magnificent sculpture created by Architect Lor Calma made of three stacked laminated glass rising between 5 to 10 meters tall. The three glasses represent the three main Philippine island groups of Luzon, Visayas and Mindanao. Specific Gravity: created by Reg Yuson, it s a suspended boulder fountain which highlights the connection between the audience as a mobile participant and gravity. Shopping Shopaholics will be spoilt for choice with a wide-ranging selection of international and local fashion, fitness, home and health brands, all within walking distance from Shangri- La at the Fort, Manila. Central Square: a four-level upmarket retail destination with a market-style supermarket and 4D cinemas directly across the hotel.
