3 Bantu Food and Drink Festival (BFDF) is a 8 day world-class event that aims to celebrate the Bantu heritage in different corners of the globe. United through the authentic gastronomy, the festival will be an innovating business and cultural space to showcase Angola, Barbados, Brazil and Colombia and identify practices that connects them as Bantus. The program will include exceptional food and drink tasting, show cooking, workshops, anthropological seminars, an agro-products fair, art and crafts exhibition and concerts, introducing both local talent and international acclaimed chefs, anthropologists, artists and brands to a wider audience. Designed and produced by Bantu Foundation, the BFDF is supported by the public and private sector, and presents a great opportunity to establish new partnerships in the academic, artistic and business levels.
4 HISTORICAL CONTEXT We must go back in our roots in order to move forward. (African proverb) Culture's power to transform societies is clear. Through various platforms of self expression, heritage promotion and identity reclaiming, one can influence people s conceptions about Africa and their behaviour towards its culture. Around 200 million people identifying themselves as being of African descent live in the Americas. Many millions more live in other parts of the world, outside of the African continent. This universe of people inherited the languages, dances, music, spirituality, gastronomy, amongst other practices. To acknowledge and celebrate the legacy of these practices transported by Bantu people centuries ago (and still present today), can represent a solution to eradicate poverty by diminishing inequalities and creating innovative business opportunities for those involved. Since 1998, with the International Decade for Cultural Development s launch, efforts have been made to elevate the contribution of culture to a sustainable development. Placing culture in the centre of the political development, represents a valuable investment in the world s future and is a pre-condition to the success of globalization processes that take into account the cultural diversity. Projects such Bantu Food & Drink Fest can make a bigger impact not only at an economic level by promoting cultural tourism and creative industries, but (if not more importantly) in the process of change of mindsets and behaviour of future generations of entrepreneurs and leaders.

7 THE AMBASSADORS Chef Rui Sá Chef Rui Sá was born in Gulungo Alto, Kwanza Norte. He moved to Lisbon to pursue his education in his teenage years and soon sharpen his keen affinity for the culinary Arts. His insatiable quest for culinary excellence over the last 25 years, has taken Chef Sá to the four corners of the globe. The passages by Thailand, France, Portugal, Germany, Italy, Korea and China as a Chef, Teacher and Student, exposed him to a variety of cuisines and encouraged him to explore his roots while embracing other styles. a consulting chef for a host of restaurants and chain of supermarkets in the city and beyond; sharing his inventive talent and love of fine dining. His flavorful fare will not only excite your taste buds; but leave your palate with a memorable experience. As a Bantu Ambassador, Chef Rui hopes to be contribute to the research of traditional dishes and the development of fusion dishes in the continent and in the Diaspora. Sá specializes in authentic Angolan and fusion cuisine, highlighting the most exotic and traditional ingredients and creating the bridge across different palates. Responsible for the modernization of traditional Angolan cooking practices, he is a culinary inventor in its excellence creating an extensive range of presentations of gourmet cuisine, in particular the Angolan funge and mufete. He has represented the country in several occasions such as at the Expo Shangai, Korea and Milan and the Angola Food & Drink Festival in Luanda. As a notable in Luanda, he also serves as
8 THE AMBASSADORS Chef Anthony Cumberbatch Chef Anthony is an award winning Michelin trained head chef based in London specializing in an outside-of-the- box culinary experience. Delivering beautiful & innovative cuisine has long been a personal passion. Born in Dulwich, London and he grew up in Barbados, where early he found his love of cooking in his Grandmother s kitchen. Brought up on fresh food from the farm and Grandma s soul food, he developed a flair for flavour fusion and creating new dishes from more traditional cuisine. put Nouvelle French Caribbean Cuisine on the map, reinventing the way Carribean food is seen, tasted and served. As a Bantu Ambassador, Chef Anthony hopes to strenghtenn the culinary connections between UK, Caribbean and Africa and develop products that are innovative, accessible and funky. While Cumberbatch is particularly well known for his unique Caribbean dishes, winning Best Caribbean Chef in the UK, and Best Caribbean Restaurant, by the Caribbean Food Emporium for two consecutive years, his flavour-fusion style also draws from French, Vietnamese and European cuisine. His work has been featured in Marie Claire, the Voice, and BBC 2. With more than 23 years experience working in a cross-section of high profile and award winning restaurants, hotels, and clubs, Cumberbatch has

The festival will be collaborating with Rota da Liberdade to explore the cultural heritage in communities in Quilombos Ubatuba, Paraty and Vale da Ribeira. An anthropological research is intended to take place while observing the heritage and new contributions coming from the fusion with indigenous and European cultures. Venue: Fazenda Coruputuba, S. 13 WEEKEND FEST During the weekend, chefs, artists and foodies, will come together to treat the visitors to an amazing cultural journey of flavours and rhythms. Bantu Fest will showcase the most diverse dishes and drinks from across Angola, Barbados, Brazil and Colombia, ranging from traditional comfort food to gourmet fusion dishes, served on mini dishes to give the visitors a tasting experience of appetizzers, entrees and deserts. Features will include intimate seminars hosted by industry aficionados, a main stage with mouth-watering food from the 4 countries, food tents, exhibitions, live music and the best local DJs. We believe that sharing food passed on through generations over the centuries has the power to bring people together. The traditional cuisine, hairstyles, indumentary and accessories, are essential elements of the African cultural heritage. It represents the living expresssions of its people: its philosophy, its memories, its experiences and evolution through centuries. Created in 2005 in London, Bantu Foundation has the mission to rescue the traditional African culture while integrating it as part of the sustainable developments in the continent as well as in the Diaspora. Currently based in Luanda and London, seeks to engage the community in general in the discovery, research and apprecisation of African cultural legacies through scientific research, consultancies, workshops, events and fairs, commissioned projects and exchange programmes.
